I have to remind myself and all those without their moms today that Mom is still here, she is everywhere, she is inside of me…..and if I sit still and just be, mom will reach out via a cloud, northern lights!, bird singing or a perfect sunset. Love you forever Mom. Would love one more hug, and a plate of your dumplings……..

Start getting ready for summer with Chef @Mingtsai’s Shrimp Pineapple Summer Rolls! ☀️ INGREDIENTS 1 package vermicelli rice noodles 1 pound small shrimp, deveined/shells and tails removed 2 tbsp garlic, minced 2 tbsp ginger, minced 4 scallions, green and white slice and separated ½ lime, juiced 1 tbsp fish sauce ¼ cup thai basil, hand ripped 1/2 pineapple, cut into 4” x ¼” spears 1 package Bahn Trang rice paper spring roll wrappers 3 tbsp neutral oil, like grapeseed 2 tsp olive oil Kosher salt and freshly ground pepper INSTRUCTIONS 1) Add rice vermicelli to a large bowl and cover with boiling water. Let sit to soften. 2) Meanwhile, heat a non-stick skillet on medium-high heat, add 3 tbsp of neutral oil to the pan. Once hot add garlic, ginger, and 2 tbsp scallion whites. Cook, stirring constantly for 2 minutes. Season with S&P. 3) Add 2 tsp of olive oil to the pan and add shrimp in an even layer. Season with S&P, cook 1-2 minutes until shrimp start to turn pink. Flip over and let shrimp cook for about 2-3 more minutes until they are pink throughout. Remove from heat and place them in a bowl, allowing them to come to room temperature. 4) Strain noodles. Add back to a separate bowl, and let this come to room temperature. Once cooled, use kitchen shears to cut the noodles to break up the long pieces. Add thai basil, lime juice, fish sauce, and 2 tbsp of scallion greens. ROLLING INSTRUCTIONS 1) Fill a large bowl with hot tap water about ⅔ of the way up. Dip wrapper in water and allow to get malleable (about 30 seconds). 2) Take the wrapper out of the water and lay it on a clean dish cloth. Line up ¼ cup of noodles along the bottom edge of the wrapper, place 2 spears on either side of the noodles. Then add 3-4 shrimp on top of the noodles. 3) Fold the bottom edge over the filling and pull back towards you. Roll it on itself and fold in the edges. Continue to roll until you reach the other edge. DIPPING SAUCE Dipping Sauce Ingredient list ½ lime, juiced 2 tsp Sambal Oelek Fresh Ground Chili Paste 1 tsp fish sauce 1 tbsp scallion greens, sliced Dipping Sauce Instructions 1) Mix everything together. Dip your spring rolls in the sauce and Enjoy!

An easy recipe for leftover dumpling mix, Chef @Mingtsai’s Chicken Tostadas! 😋 INGREDIENTS: Tostadas – 1 package Dumpling Wrappers – Cheddar cheese – Leftover Dumpling Filling (see recipe below) – Neutral oil – Kosher salt and freshly ground black pepper INSTRUCTIONS 1) Have a small bowl of water and spoon ready on your workstation. 2) Lay out your dumpling wrapper on a dry surface. Place about 1 tbsp of cheddar cheese in the center of each dumpling wrapper. 3) Using a spoon, place about 1 ½ tbsp of your dumpling filling on top of the cheese. Wet the back of your spoon with water. Using the back of your spoon spread the dumpling filling gently over the cheese to the edges of your wrapper. Repeat to make the desired amount of tostadas. 4) Add about ⅛ of an inch of neutral oil in a cast iron skillet over medium-high heat. Once hot, place tostadas wrapper side down until GBD (golden brown and delicious). Flip over to cook chicken and melt cheese. Once cooked, place on a paper towel lined plate to drain excess oil. Repeat until all tostadas are cooked. 5) To serve, place tostadas over greens and ENJOY! INGREDIENTS: Dumplings – 1 pound of ground chicken – 1 ½ cups shredded carrots – 6 scallions, sliced greens and whites – 4 tbsp fish sauce – ¼ cup ripped thai basil (smack the basil to release flavor before ripping) – Freshly ground black pepper to taste 1) In a large bowl mix all ingredients together. Pro Tip: To test the flavor of your filling, take about a tsp of your filling and microwave it until it is cooked through. My next Cooking Live event with @familyreach is tomorrow, and I can’t help but take a stroll through memory lane and remember why I got started with such a great non-profit. In 2010, my journey with Family Reach began when Executive Director Carla Tardif introduced me to Darlene, a young woman dying of osteosarcoma. One of Darlene’s last wishes was to come to Blue Ginger and eat a meal I cooked for her and her family. Without hesitation, I said yes. Fulfilling Darlene’s wish for a meal at Blue Ginger with her family and seeing the joy it brought them amidst their struggles was beyond moving. Shortly after, Carla shared Raquel and Mikalo’s story. When Raquel’s son was diagnosed with cancer, she made the difficult decision to leave her job and support him through his treatment. As expenses piled up, they were eventually compelled to seek shelter in a homeless facility, where Mikalo continued his chemotherapy. The doctor emphasized the necessity of a bone marrow transplant for Mikalo’s survival. However, due to the shelter’s conditions, the procedure couldn’t be performed safely without a sterile environment post-transplant. Family Reach immediately stepped in, got them out of the homeless shelter and into their own apartment. Upon hearing this story, I knew I had to get involved and help beyond cooking a nice meal for families in the restaurant. That was 14 years ago and I haven’t looked back since.
