Kuliya ki chaat Peel & Cut a cucumber, tomato, sweet potato & pineapple Scoop out the center as shown (you can use remains of veggies or fruits to make a veg stock or juice them) For the filling 1 cup Boiled Kala chana 1/2 cup Boiled white matar 2 tbsp Raw mango, chopped 1/2 cup Onion, chopped 1/2 cup Tomato, chopped 1/4 cup Pomegranate seeds 1 tsp Jeera powder 1/2 tsp Kala namak 1 tsp Kala chaat masala Salt to taste Juice of 1 lemon Mix everything well To the fruits 1 tsp Imli chutney Top it off with the chana mix Green chutney Sev Sprinkle Kala chaat masala generously Squeeze some lemon juice Serve cold Delishaaas 😮💨🤌🏻🤤
These grandma hacks still work seamlessly and nothing tastes as good as this Mango Kulfi (trust me) It’s Delishaaas and the right portion size and only takes 15 mins to assemble. You can choose to add condensed milk instead of rabdi and omit sugar as that will be much sweeter than rabdi. Will you try? . . Waise toh Mogu Mogu had chewy coconut jelly made with fermented coconut (nata de Coco) but we made it with fresh coconut and added amchur to it for a tang!! It’s super easy to make all you need is good Gondhoraj or Italian or Pahadi Nimbu and use the peels to extract all the zest. Are you going to attempt? . . I was able to assemble this meal in my home under 90 mins and it was totally worth it. From the batata cha kachrya to Masale bhaat and all time fav Aamrakhand and poori combo. Lal Mirchi ka Namak or Roasted Chilli Salt or Pisyun Loon is my all time favourite to use on top of everything I eat from fruits to sabzi to chaats in winters. Inspiration is Uttarakhand ki *Pisyun Loon* made with green garlic. They make different colourful & flavoured salts in Garhwal and surrounding regions in Uttarakhand.” Favourite pahadi namak for many it is classically made by combining rock salt and fresh herbs and spices on a sil-batta. It’s very easy to make and all you need to do is sun dry it or if in a city then dry it in the oven at the lowest temperature for 120 minutes or airy fry it. Do not add any water while grinding. This time around I tried in the air fryer for two hour at lowest temperature and results were fab. Charr a few red & green chilies Add the chopped charred chilies 1 Green chili 1/2 a Raw mango, diced 1 tsp Jeera 1/2 inch Ginger, chopped 1/2 tbsp Garlic, chopped Blend everything well Add the paste to a bowl 1 cup Salt Mix everything well Spread a thin layer onto a piece of foil Airfry it at 80 degrees C till completely dried Put the dehydrated salt into a mortar pestle Crush it well Sprinkle some on a mango piece Delishaaas 😮💨🤤🔥

With rice this is a gateway to heaven. This potato recipe for me is home and reminds me of papaji always. Papaji ke Pahadi Aloo Peel 12 small to medium sized potatoes Poke them with a fork Crush 1 tbsp Coriander seeds Look at that 🤌🏻 1 inch Ginger, peeled 2 Green chilies 6 to 8 Garlic cloves, peeled Crush them into a coarse paste 2.5 tbsp Ghee 1/2 tsp Shahi jeera 1 inch Cinnamon stick 1 Black cardamom 3 to 4 Cloves 1/4 tsp Hing Crushed coriander seeds Mix well Add the crushed ginger & garlic Mix well 4 Onions, finely chopped Sauté till light golden 1/2 tsp Yellow chili powder or red chilli powder 1/2 tsp Haldi powder Salt to taste Mix well Add the potatoes 1 Bay leaf Mix well Add 500ml Water & cook for 2 whistles in high & for 5 minutes on low when open Look at that 😮💨🤌🏻🤤 1 tsp Aamchur powder Tear some coriander & add it in Mix well Serve hot Delishaaas 😮💨🤤

I think this festive weekend was just the right opportunity for people who eat eggs and not meat can make this cutlet with potatoes!!! . Desi Devilled Egg Burger 250g Chicken thighs, boneless 1 Bayleaf 1 Black cardamom 4 to 5 Black peppercorns Salt to taste Water as required & cook till 3 whistles 1 tbsp Oil 1 tbsp Garlic, chopped Sauté till fragrant 1 Green chili, chopped A handful of spring onion greens, chopped 1/2 Carrot, chopped 5 French beans, chopped A handful of Coriander & Mint, chopped Mix everything well 1/2 tsp Salt Mix well 2 tbsp Butter 2 tbsp Maida Make a quick roux Mix well 150ml Milk 150ml chicken stock from boiled chicken Mix well Once thickened Add 1/2 tsp Garam masala powder 1/2 tsp Red chili powder Black pepper powder to taste Mix well Look at that 🤤🔥 Chop the chicken & add to the veggie base Mix well and cool the mix ture down for one hour Shape them as shown Coat the cutlet with roasted fine sevai or bread crumbs 😮💨😮💨 Fry them in hot oil till GBC 🔥 😃☹️ Cut 4 Boiled eggs Remove the yolks 1 tbsp Sriracha sauce 1/2 tbsp Ketchup 1 tbsp Mayonnaise Whisk well Pipe the sauce into the boiled eggs Place the cutlet & sandwich the eggs Sprinkle some podi on the top Delishaaas 😮💨🤤

We made a nice Mehri which is basically butter milk abs tadka rice combined together Magic chicken fry (which you can make with mushroom, paneer or tofu) for which we used @mostlysane ki mumma @archanakoli ka special Koli Masala which is Delishaaas we added masala pyaaz and banana chips for Intersting crunch and variety to our bowl. It tasted like a middle eastern coffee where they would add cardamom in their coffee! Make sure you keep your cardamom toffee sauce slightly runny and light on butter and cream . .
