Upon finishing the menu, there was complete satisfaction and the certainty that Sergi Arola’s storytelling presented to us before dinner was more than just pretty words. The menu is clearly national, with Portuguese flavors and products, although one can feel – and I find it natural – a certain Spanish way of conceptualizing and structuring a menu. Overall, the dishes are intense and flavorful, but with a concern for balance, maintaining interest until the end.
Two other things help with this: the plating and all the dishes are quite meticulous, with a touch of extravagance here and there but well integrated into the Lab’s style; and the wines chosen by Diego Apolinário, who came from Eneko Lisboa, proved to be well suited for the dishes they aimed to harmonize, with obvious highlight being the cognac paired with the traveling sardine.
A restaurant of reference, in an incredible resort. Everything is right.

Chegado ao fim o menu, ficou a satisfação plena e a certeza de que o story telling que Sergi Arola nos tinha apresentado antes do jantar era mais do que palavras bonitas. O menu é claramente nacional, com sabores e produtos lusos, embora se sinta – e acho natural – uma certa forma espanhola de conceptualizar e estruturar um menu. Em geral os pratos são intensos e quentes, mas com preocupação pelo equilíbrio, mantendo o interesse até ao fim.
Para isso ajudam outras duas coisas: os empratamentos e todas as loiças são bastante cuidados, com um ou outro toque mais extravagante mas bem integrado na linha do Lab; e os vinhos escolhidos por Diego Apolinário, que chegou do Eneko Lisboa, mostraram-se bem acertados para os pratos que pretendiam harmonizar, com destaque, óbvio, para o cognac a acompanhar a sardinha viajante.
Um restaurante de referência, num resort incrível. Tudo certo.
