Arianna Huffington Instagram – The big solar news next week is about not being able to see the sun. But as the work of award-winning solar astrophotographer @eduardoschaberger shows, our sun is full of mysteries and wonder even when not being photobombed by the pushy moon. 

This shot of a recent solar flare shows a plasma column shooting out over 124,000 miles from the sun’s surface (over half the distance from Earth to the moon). It’s a sign the sun will soon enter the most active phase of its 11-year solar cycle known as the solar maximum, which sounds like a good action movie title. 

“To be able to see or photograph a little bit of the intimate life of a star is truly very exciting,” says Schaberger. If you’re going to be watching what poet Robert Herrick called the “glorious light of heaven” dim for a few moments, just remember to wear eclipse glasses or make your own pinhole camera.

Arianna Huffington Instagram – We had a great lunch at @Thrive with @springbysabrina, the founder of @springcafeaspen, both in Aspen and Greenwich Village, which she started over 10 years ago with the goal of providing organic and nourishing vegetarian food. Today that included a delicious spread of chickpea tuna pitas, sweet potato sliders, lentil meatballs with house-made marinara sauce, kale and quinoa bites, and more.

A simple Microstep she shared to make informed choices with food: look for produce stickers starting with “9” to ensure it’s organic.

She also talked about how to avoid refined sugars and commercially processed seed oils, suggesting healthier alternatives like olive, avocado, and coconut oils. Her message is clear: every choice we make about what we eat is an opportunity to nurture our health and well-being.
