Until recently, I thought it was impossible to “do it all”. And guess what – it is! But I’ve learned that it’s ok to try. Hear me out…
I carried so much guilt and shame for trying to do all the things that make me happy, that it was actually making me physically ill. I felt bad because as soon as I excelled in one part of my life, my brain would quickly remind me of all the other things I was sacrificing. On days when I would feel like a great mom – my brain would immediately say “What about your career?” Or maybe I would start to feel really proud of a big accomplishment for my company, and immediately that voice would say “yes but when was the last time you worked out?” Between my marriage, my family, my friends, my health, my work…the list goes on – no matter what I did, I never felt adequate or accomplished. It was only when my doctor pointed out what was happening, that I was able to take control of my story, re-write my truth, and feel good about doing my best. Because let’s be honest, that’s all any of us can do!
So now, I set my priorities and go confidently in the direction of my dreams. I constantly remind myself to not feel guilty when one part of my life “pulls” from another part and to give myself grace to understand it will all come around. Every goal will have its season and sometimes it’s not up to us to plan how it all plays out. But guess what, with this new mindset, I’m able to celebrate the wins and feel less shame. Mom guilt is real, but with this mindset I can keep it in check. By knowing I’m being intentional with my time, doing my best, setting my priorities, and giving myself permission to chase my dreams without explanation…I really can do it all! And this new way of thinking has made all the difference.

We did it again! 😊 Had the best time being a #KitchenAidAmbassador this weekend. Loved talking all things kitchens at the @seniorpgachamp as a guest of @kitchenaidusa. I got to watch some golf, explore a little bit of Michigan, meet so many great people, and even cook in front of a crowd with @brettrothofficial – yikes!
This year’s recipe was so fun because it’s a salad even @themeatatarian approves of, which you know is a big deal. And it’s perfect for meal prep or even party prep for a BBQ! So without further introduction, here’s the recipe:
“Viral BBQ Chicken Meal Prep Salad Jar”.
Ingredients:
– 2 Boneless Skinless Chicken Breasts
– BBQ Sauce – Brett likes “Lillies Smoky Barbeque Sauce” right now
– Olive Oil
– Salt & Pepper
– 2 Ears of Grilled Corn, Cuff off the Cob
– Diced Red Onion (Optional)
– Diced Red Pepper
– Cilantro
– Fresh Spinach
– Diced Cotija Cheese
– Wild Rice
Method:
Dressing – Brett’s not a big fan of vinegar, so we’re keeping our dressing really simple. Whisk together 1 cup bbq sauce, 1/2 cup olive oil, 1 tsp garlic powder, salt, pepper. Chill covered in refrigerator while prepping the rest of the food. If you like vinegar like I do, you can add apple cider vinegar to this. If you wanted to change this up, you could use buffalo sauce instead of bbq sauce.
Pull chicken breasts, grill corn and cut off cob, cook wild rice, dice red onion, red pepper, and cilantro, lightly chop spinach.
To assemble, start by adding 1/4 cup of dressing in each jar. Layer red pepper, red onion, corn, cheese, spinach, rice, chicken, and cilantro. Chill in the fridge until ready to enjoy!
