Yesterday – to help celebrate the belated 50th birthday of @stephentrindall we went along to @featherandboneprovidore for a butchery course. It was fascinating. We learnt so much. All about how they only buy whole beasts from the most sustainable farms around the country. How much they try to reduce waste by using up the whole animal. We learnt about the whole muscular structure, and where every cut of meat comes from. Grant and butcher John were so knowledgeable, and answered every one of our one zillion questions with so much patience. We ended up each butchering a front quarter of a lamb. We learned how to tie it properly and then got to take the meat home. But that’s not all – we also got to enjoy some freshly bar-b-q’d lamb cooked by Grant and accompanied by some local brews.
