BLUEBERRY SORBET 🫐
High in antioxidants, super refreshing and no refined sugars. My kids love this, it’ll be on repeat this summer.
You need :
Frozen blueberries
Coconut milk (ratio is 2 cups blueberries to one cup coconut milk)
Splash of maple syrup (optional)
Top with honey or heated almond butter (optional)

Creamy watermelon popsicles 🍉
These are so easy to make but so fun!!! Perfect summer treat. Use any yogurt but coconut yogurt and coconut condensed milk was so good!! Greek yogurt will add protein of course.
Slice up a watermelon cut out the center of each slice
Cube it up and blend with 1 tablespoon of condensed milk and half a cup of yogurt
That makes 4 servings of filling (one rind)
Repeat the process for each slice.

MAKE IT:
– 4 boneless, skinless chicken breasts
– Salt and pepper to taste
– 2 tablespoons olive oil
– 3 cloves garlic, minced
– 1 teaspoon red pepper flakes (adjust to taste)
– 1 cup chicken broth
– 1 can (13.5 oz) coconut milk
– 1 tablespoon gluten-free flour (such as almond flour or a gluten-free all-purpose flour blend)
– 1 teaspoon Italian seasoning
– 1 cup grated Parmesan cheese
– 1/2 cup sun-dried tomatoes, chopped
– Fresh parsley, chopped, for garnish
Instructions:
1. Preheat your oven to 375°F (190°C).
2. Season the chicken breasts with salt and pepper on both sides.
3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken and cook for 4-5 minutes on each side, until golden brown. Remove the chicken from the skillet and set aside.
4. In the same skillet, add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant.
5. In a small bowl, whisk together the chicken broth, coconut milk, and gluten-free flour until well combined.
6. Pour the coconut milk mixture into the skillet. Add the Italian seasoning and chopped sun-dried tomatoes, then stir to combine. Allow the mixture to come to a simmer.
7. Return the chicken to the skillet, spooning some of the sauce over the top of each piece. Sprinkle the grated Parmesan cheese over the chicken.
8. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the sauce is bubbling.
9. Once done, remove the skillet from the oven. Garnish the chicken with chopped fresh parsley before serving.

The BEST turkey burger Ever!!!
None of us ate this with a bun but feel free to. U can also wrap in lettuce or top with cheese and veggies like I did. So so good!

Burgers:
1 pound 93% lean ground turkey but I use 98% because I don’t like the texture of 93%
1 tablespoon mayonnaise
1 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
3 garlic cloves, minced
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 tablespoons extra virgin olive oil
I topped with havarti cheese, my chopped salad and this special sauce.

Today would normally be a Makeup Monday but since it’s the first Monday in the new year I thought I would share this with you. I’ve been doing a lot of these for some time now and have noticed a big difference in how I feel and the energy I have to get everything done.

Once I stopped making such a big deal about New Years Resolutions and started making them weekly goals is when I started seeing changes. I feel like we set so many goals and things we want to adjust in our lives it gets overwhelming. When u set small goals and accomplish them you realize the bigger goals become more attainable.
