Kelly Kruger Instagram – Easy Chopped Salad 🥗
You can really do any combination of veggies and protein and never go wrong with a chopped salad. We love this one and we have it at least once a week over here.
Ingredients:
– 1 head of iceberg lettuce, chopped
– 1 cucumber, diced
– 1 can of garbanzo beans, rinsed and drained
– 1 can of hearts of palm, drained and sliced
– 1/2 cup of olives, sliced
– 1 cup of mozzarella cheese, cubed
– 1 cup of diced turkey breast
– 1/4 cup of pepperoncini, sliced
For the dressing:
– 1/4 cup of olive oil
– 2 tablespoons of red wine vinegar
– 1 tablespoon of Dijon mustard
– Salt to taste
– Grated Parmesan cheese for topping
