Everyone loves a braised short rib! Even if you are thousands of miles away, there’s no doubt you will be transported to northern Italy for a few hours while the beef in this recipe cooks to melting tenderness. And even though in Italy—specifically, in Piemonte—it is braised in Barolo wine, this dish is delicious when any good full-bodied red wine is used in cooking it. Buon Gusto! Roasted Pepper Rolls Stuffed with Tuna. Antipasti are, for me, the best part of a Piedmontese meal. At any family gathering (and in restaurants as well) the platters of different antipasti just never stop coming. And at some point in the procession, roasted peppers stuffed with tuna, will arrive at the table. The combination of sweet, meaty peppers and well-seasoned oil-cured tuna is always delightful. Peppers are always best roasted and peeled at home, though a jar of roasted red peppers can be substituted if you are short on time. Everybody loves a good burger, and I am no different, but here I bring the hamburger a bit closer to Italy. Warming the tomatoes for a minute or two brings out their juices and eliminates the need for condiments. I like grating vegetables, like the onion in the recipe, into my burger mixture – it adds flavor and moisture. Try this with beef burgers, as I do here, but it’s an even better tip for turkey or chicken burgers, which tend to be dry. Link to video in my bio. Buon Appetito!

Tiramisù is a common dessert on the menus of Italian restaurants and in Italian homes. It is certainly a favorite in our restaurants, but it is easy to make at home as well. This dessert is best made a day ahead, to allow the flavors to combine. This is near the height of the season so any combination of berries—or even just one kind—will make a marvelous tiramisù. Here’s the delicious side dish that goes perfectly with the Chicken with Vinegar recipe I posted yesterday. I love cabbage, especially Savoy cabbage. Grandma Rosa taught me this recipe, and I have been cooking it ever since. It is a dish that can be made in abundance and reheated the next day. Adding vegetables to mashed potatoes is common in the Italian tradition, and it really lightens the potatoes up. The vegetable can vary – green beans in the spring, Swiss chard as it becomes available. I also give you a quick course on all the different vinegar varieties and the best way to use them. Stuffed Tomatoes. Italians will stuff just about anything, but when it comes to a nice, ripe tomato this is the definitive recipe. Verstile as it is delicious, this dish is just as great hot out of the oven as it is at room temperature. It’s also wonderful as an appetizer, vegetable and even a main course.
