Soup season is around the corner! Here’s my fav #Pozole Verde #recipe !! Ingredients: 10 cups chicken stock 3 lbs mixed chicken thighs & breast 3 (15-ounce) cans of hominy, drained 1 pound tomatillos, husked 1 small onion 4 poblano chiles 2 jalapeños 2 bay leaves 1 whole head of garlic 1 tablespoon oregano leaves Kosher salt Salsa Verde: 1 lb of boiled tomatillo 2 boiled jalapeños with seeds 1 boiled onion halved 1/4 bundle of cilantro handful of spinach handful of radish tops 5 large lettuce leaves 4 large garlic cloves 1 tsp marjoram 2 pinches of salt Toppings: Finely shredded cabbage Sliced radishes Chopped onion Diced avocado Lime wedges Instructions: 1. In a large heavy-bottomed pot add stock, oregano, chicken breasts, tomatillos, jalapeño, onion, garlic head, pinch of salt and bay leaf then cover and simmer on medium for about 30 minutes or until chicken is cooked. Transfer the chicken breasts to a plate and shred the meat, then skim the stock. 2. Make the Salsa Verde: Charr your poblano peppers, then steam in a covered bowel. Once softened remove the outer skin and add all skinned poblanos to a large blender. Add the boiled tomatillos, onion, jalapeño, one cup of water from your large pot, marjoram, fresh garlic, cilantro, radish tops, lettuce, spinach, 2 pinches of salt and blend until smooth. 3.In a skillet, add salsa verde and cook over moderate heat, stirring occasionally, until the sauce turns a deep green for about 10 minutes. 4. Add your shredded chicken, hominy and cooked salsa verde back into the large pot. Bring to a gentle simmer over moderate heat for 15 minutes. dish it up , Add toppings and serve !

Here’s an easy recipe for Bolillos for your Pozole 🥖 * 3 1/2 cups bread flour * 2 teaspoons salt * 2 teaspoons active yeast * 1 1/3 cups lukewarm wager * 2 teaspoons sugar Instructions: * In a medium-size bowl, add flour Make a well in the middle and add the yeast. * Pour a little bit of the water on top of the yeast and mix until it dissolves, add the sugar and mix a little more. Add salt and the rest of the water and mix until well combined. * Form a ball. This ball will look and feel very rough and lumpy. Cover with plastic or a wet towel. * Let it rest until doubled in size. This can take 1-2 hours. * Remove the dough from the bowl and place on a lightly floured surface. Gently knead it for a few seconds, just enough to form a ball or roll. * Divide it into 8 pieces * Roll each piece to form balls. Start shaping the bolillos. Take one ball, turn it over, and with your fingers start rolling the dough tightly (see video above). * Once you’ve completed shaping all 8 bolillos lightly roll them in flour then cover them, and let them rest for 20 minutes. This will help to relax the dough. * Pre-heat the oven to 380 °F. Place the bolillos on baking sheet. * Using a very sharp knife or razor held at a 45 degree angle, make a long cut from one side to the other. * Bake for 17 minutes. I’ve been taking a few days to soak in all the feels, I just wanted to express my gratitude to everyone who came out to my pop-up this past weekend. I represent Native American & Mexican American culture with so much pride, there is truly nothing that brings me more joy than to bring people of all ethnicities together with an intentional meal. For my ancestral foods to be at the center of all the smiles & good vibes is truly the most amazing feeling. I also want to express appreciation for those that stepped outside of their comfort zone to try something new. I struggled with preparing for this speech bc I felt extremely vulnerable about sharing a personal life experience I haven’t yet told.
