Gaylord is one of the most iconic Indian restaurants that made its name in other cities including SF, but the one in HK is my go to for Northern Indian cuisines. Feeling under the weather Indian was one of my great comfort foods, a cuisine that I developed a great appreciation especially due to the horrific food they would regularly serve us at boarding school where food poisoning was regular occurrence. To set the record straight, I am a flexitarian, a vegan wannabe, but due to my line of work, I recognize that food brings us together and my dietary restriction due to religion, as well dietary preferences is disregarded in the spirit respecting my host. So don’t get me wrong, I can appreciate animal protien etc. I am simply making a conscious choice to eat for the environment and the cruelty to the animals and the humans that are exploited in this industrial food system. #foodtank #chefsmanifesto #climateaction
Flew into Hanoi for a quick rehearsal with the band, but walking through the old quarters, riding on the back of motorcycles around town and catching up with old friends gets me all nostalgic. Uncle Ho was my kind of guy. He lived a very interesting life. Accomplished so many things but I think would have been considered a failure for most of his life to put it mildly. His trajectory to politics via, A gardening, a poet, a baker, a teacher a journalist etc. He did a lot, but his true passion was working towards independence; founder of the communist party at 50, then becoming the president of the democratic republic of Vietnam at 55. Not exactly the traditional route, but it was a passionate one! This a funny story I heard from @qdavidj founder of the Q Bar, the first iconic bar in Vietnam in the mid 90’s who attracted the who’s who. Now @smallsbangkok in Bangkok) During the American Vietnamese War, a war correspondent was regaling the story of returning home and got an assignment to interview Maye West. It goes like this MW ‘So where have you been. I haven’t heard from you in years?’ Reporter ‘I’ve been in Vietnam covering the war’ MW ‘Vietnam. Vietnam? Oh…. I used to know a great guy in Vietnam. His name was Ho something’ she went on Ho.. Ho… ‘ and as she struggled to remember the name the reporter volunteered with a suggestion Reporter Ho Chi Minh? MW Ho Chi Minh! That’s right Great waiter, great great waiter!’ The reporter never really knew if she was kidding or serious, as uncle Ho worked many jobs in Paris to support himself and is rumored to have worked in some swank places including The Ritz

The Full moon Party in Koh Pha is well known, attracting partygoers, party animals to party under the full moon. It’s so popular that they now have Athmane, quarter moon, waterfall parties, that it’s become a party island, like a little Ibiza of the East. However, at the other end of the island is detox, wellness, and a lot of very chilled out people that are actually detoxing. I came here to learn, broaden my horizon and discover something very different. I got the privilege to attend a private ceremony with some very inspirational people that are workin on something so cool, that one day they will be writing about how progressive Thailand is on the international stage.

When The Beat Asia attended Chef Bobby Chinn’s Egyptian Food Festival in Hong Kong, we knew we were partaking in a culinary expedition of epic proportions. Organized in partnership with The Consulate General of Egypt in Hong Kong and the Silver Oak Group, the event offered a five-course tasting menu that was nothing short of spectacular. Each dish, ranging from Grapes Wrapped with Goat Cheese Encrusted with Pistachios to Foie Gras Terrine with Fresh Figs, was an ode to Egypt’s rich culinary landscape. We also opted for the wine pairing, elevating the gastronomic experience to another level. The highlight, however, was the exclusive cooking class hosted by Chef Bobby himself on September 16. In a brief yet intensive session, we got hands-on experience making his signature starter of grapes, cheese, and pistachios, and learned the basics of preparing a traditional stuffed pigeon dish. The class was an intimate, enriching venture into the depth of Egyptian cuisine, all under the guidance of a master.
