For the record, it didn’t take me long to find out that I was far from normal! So a suggestion to those that might stand behind me in an immigration line. DON’T!!! the other lines will go much quicker once they get to me, as the truth is often stranger then fiction! To add to my list of comfort food; Mexican cuisine, Lebanese/Syrian/Palestinian and Chinese, but when I say Chinese, I mean, Cantonese, Dim Sum, Imperial Cuisine, and especially the nuance of Taiwanese cuisine as it has a lot of influence from regional Chinese cuisine, Japanese, South East Asian and Western. In my carnivore days, I’d say that they have one of the greatest Beef Noodle Soups up there with Pho!

*link in bio* I’d like to share a glimpse of my life, but let me start off by expressing my sincere gratitude to Melissa Gecolea from TVB Pearl for her kind coverage of my return to Hong Kong during the Egyptian Food Promotion. It was truly a pleasant surprise to have such attention drawn to my endeavors, where I was merely being a humble representative of the rich culinary heritage of Egypt. It was such a privilege to showcase its authentic flavors, whilst also taking creative liberties of creating some dishes based on the ingredients and livestock that they farmed and raised. To be able to do this at my friends restaurants with the full support of his team and also friends and fellow chef Gaffer is why I do the things I do. The recognition we received serves as a reminder of the importance of preserving and celebrating diverse cultural experiences and the power of food diplomacy. Once again, I extend my heartfelt appreciation to Melissa Gecolea and TVB Pearl for shining a light on my work. I hope that through this exposure, more people will be inspired to explore different cuisines and embrace the beauty of cultural diversity. Especially Egypt as Egyptians are kind and generous people and we would be very appreciative for foreign currency. Today the pound is selling at a huge discount so it’s also a good time to visit.

This is Chi An, 3rd generation doing just one dish to absolute perfection. This is Banh Cuon. My foodie friend Duyen introduced her to me telling me she was the ‘best’ and honestly having travelled and lived in the country for 22 years, I can honestly say hers are exceptionally better then them all. it took me 8 years of visiting her weekly sometimes vô weekly for her to teach me Banh Cuon. It took two visits with two different translators to get her to share her recipe. Upon visiting her the second time, I humbly told her that it wasn’t the same. She smiled and explained that she didn’t want to give the recipe to the translator especially if it wasn’t assured that he would tell me the minor details. The second translator would be clueless of the missing link. She makes the floss, slices and fries the crispy shallots to perfection, cooks everything from start to finish. She is the cashier keeping a mental count of all the orders. In the early days I didn’t know the word for egg, so I would order by making sound effects. This is an incredibly difficult dish to execute and this is why you have to come to the source. The rice batter is slightly fermented and needs to be ladled and spread quickly over the tight fabric with a decent amount of steam. If you look at the bamboo stick, it’s flat, and as she pulls it off, the wrist twist slightly as he raises the night of her arm to pull the rice pancake off without ripping it as its easy to stick to the fabric. The surface where she rolls has to be slightly oiled to prevent it from sticking to the table. There is no wasted motion in her preparation and execution. A true master of her craft. I consider a trip incomplete to Hanoi without paying my respect to this lady that works every single day bringing joy to those that appreciate a phenomenal dish. Well it was a great thrill to play the Opera House in HCMC with my buddy @nguyenlong76 and his jump for jazz band last week for a charity concert whilst celebrating 50 years of friendship between Vietnam & UK. Honored to be backstage in the green room with so many talented musicians and bumping into old friends that I sincerely miss. To be able to be part of such an event with so many wonderful people that are making a positive difference to disadvantaged communities and working to making the world a better place with grassroots organizations is simply a dream come true.
