My mother used to drink asparagus water, because the asparagus in Spain is so delicious and we never wasted food. So I thought…why not make an asparagus martini?? All you need is some asparagus water, vodka, sherry vinegar, and olive oil…bonus points if it is @joseandresfoods 😜 The result is the perfect, slightly savory martini! Today on my Longer Tables substack I’m talking about tepache! While it is just now becoming more popular in the US, people in Mexico have been drinking it for hundreds of years. Made using the skins and cores of pineapple, tepache has to be one of the most delicious uses of a whole plant that I can possibly think of! 🍍😋 Chef Claudio Foschi of @oyameldc has been experimenting with tepache recently…with flavors like blueberry, green apple, and yellow watermelon like you see in this photo!
