Ramps and Ricotta

Serves 2

1 small bunch of ramps
½ c of peeled fava beans
1/2c day old brioche, cubed
2 tbl butter
2 tbl EVOO
½ c ricotta
1 lemon
1 tbl each chopped mint, dill, parsley
Salt and Urfa pepper to taste

Saute the brioche, over medium heat, in 11 /2 tbl butter until beginning to brown. Add chopped ramps to the pan.
Remove the bread when toasted on all sides. Add the fava beans to the saute with 2 tbl EVOO, and all the herbs. Saute lightly for 1-2 minutes.
Place ½ c of ricotta in a bowl, top with brioche croutons, and saute of ramps, favas, herbs.
Finish with a squeeze of lemon, EVOO, salt, and pepper. Enjoy. | Posted on 11/May/2024 20:45:28
