This has to be one of the most soul satisfying meals I’ve had. Kandi Pachadi (Andhra style roasted toor dal chutney) paired with Vankaya Pachi Pulusu (Eggplant Tamarind Chutney) and served with hot rice and ghee. Sometimes it’s the simplest of meals that do the trick. You can prepare this within 15 mins and you’ll say Delishaaas..I’m sure many homes make this differently, do share your versions with me and I’m happy to try in the coming week for lunches! . . Kandi Pachadi 1/2 cup Toor dal Dry roast till fragrant & golden 2 tsp Oil 2 tbsp Urad dal A few dried red chili A few Garlic cloves, peeled Sauté till fragrant & golden Add toor dal to the mixer Add chili, garlic & dal A small piece of Tamarind 1/2 tsp Haldi powder Salt to taste Grind into a powder Add 2 tbsp Water Grind again Look at that For the tadka 1 tbsp Oil 1/2 tsp Mustard seeds A few curry leaves 1/4 tsp Hing Add the tadka to the podi Mix well Serve with hot rice Delishaaas 😮💨🤤

It’s a fab combination of greens, millet and chickpeas! Will you try this roll at home? . . Desi Popeye Wrap Blanch 3 bundles of spinach Shock it in ice cold water & blend into a smooth purée Divide in two parts 1 1/2 cup Whole wheat flour 1/2 cup Spinach purée Knead into a soft dough Kebab 2 tsp Ghee 1/2 tsp Jeera 1/2 tsp Mustard seeds 1 inch Ginger, chopped 1/2 tbsp Garlic, chopped 1 Green chili, chopped 1 Onion, chopped Sauté till translucent A handful of Cashews, chopped 2 tbsp Besan Mix well 1/2 cup Spinach purée Mix well Salt to taste 1 tsp Garam masala powder 1 tsp Red chili powder 1 tsp Chaat masala powder 1/4 tsp Cardamom powder 1 tsp Coriander powder Mix well 1 cup Boiled chana Mix well & mash everything Look at that 🤌🏻😮💨 Cool the mixture down & form into tikkis Pan fry the tikkis till GBC from both the sides 🤌🏻🔥 Roll rotis out of the spinach dough & cook on a tawa till golden 1 cup Cooked millet 1/4 cup Tomato chutney Mix well Spread some millet Kachumber Add the tikkis Spread mint raita Roll it tight Cut Delishaaas 🤌🏻😮💨🔥

Aloo Baingan Re-imagined 🍆😂 Cut & slice 3 Eggplants Add salt to a bowl of water Soak the slices in it 1 tbsp Mustard oil 1/2 tsp Jeera 1/2 tsp Kalonji seeds 1/2 tsp Coriander seeds, crushed 1/2 tsp Saunf Mix well 1 inch Ginger, chopped 1 Green chili, chopped 4 Potatoes, boiled 1 tsp Coriander powder 1 tsp Red chili powder 1/4 tsp Haldi powder Salt to taste Add a splash of water & mix everything well Mash everything well Place the eggplant slices on a board Add the potato filling Spread it evenly & roll the eggplant Look at that 🤌🏻😮💨🤤 1/4 cup Cornflour 1/4 cup Maida Salt to taste Mix everything well Add water as required to make a smooth batter Add the eggplant slices Coat them well with & then coat them in panko Airfry at 170 degrees C Till GBC 😮💨🔥 Serve them hot with dal khichadi & kachumbar Delishaaas 🤌🏻🤤

Sometimes it can be a hit or even a miss but what’s fun is to push the barrier and to create something different and new. I love expirementing with food and that’s who I have been all my life. These Chole Kulche Baos are wonderful – great texture on the outside both crisp and soft like a bao and inside is Delishaaas if chole is made well. Chole Baos Take some leftover kulcha dough Roll & divide as shown in the video Take a section & roll it again Stuff it with some chole & seal the bao as shown Heat some ghee in a pan Place the baos into the hot pan Pour 1/3 cup water Cover & cook till all the water has evaporated Look at that 😮💨🔥 Serve hot with chili oil, soy sauce & spring onion greens Delishaaas 🔥🤤 #cooking #chole

More than 25 dishes are served in just the right portion size for you to sample everything, it’s your choice to indulge as much as you want or just have a simple bhaat shaak rotla kinda meal. I loveddd all the farsan, vegetables, pickles and milltet rotlas. Their hospitality (especially Gautam who’s head chef and the son and not grandson of Maganlal ji) and seasonality of the menu really amazed me. Paneer Rezala on a rainy evening hits differently. It’s so simple, Delishaaas and oh so comforting. Classically made with Chicken this paneer version is also top notch. Will you try it? How do you make it? . . Paneer Rezala 1 tbsp Oil 200g Paneer, diced Sprinkle some jeera powder Red chili powder 1/4 tsp Haldi powder Salt to taste Sauté till golden brown 😮💨🤌🏻 1 tbsp Ghee 1/2 cup Onion, puréed Sauté for 2 minutes 1 tbsp Ginger&Garlic paste 2 Green chilies, slit Mix well & cook till it’s dried 1/2cup Yogurt, whisked Add on low flame, stirring continuously 1 tsp Coriander powder Salt to taste 1/4 tsp Haldi powder Mix well & cook for 5 minutes 1/4cup Cashews, dry roasted 1cup Fried onions Add a splash of water and blend together 2 tbsp Cashew paste Mix well Add the chopped coriander Mix well 1/2 cup Water Cover & cook for till the ghee has separated. Add the sautéed paneer Mix well Serve hot with parathas Delishaaas 😮💨🤤
