You know this weekend won’t be complete without a margarita in your hands and this creamy coconut margarita is un-freaking real!!!! Amounts per drink listed below, this is to my preference so adjust as you see fit! The drink of the summer I’m calling it now!
1.5oz Tequila Blanco
1oz of Lime Juice
2oz of Triple sec
3oz of Cream of Coconut or full fat coconut milk (the cream will make it thicker though)
When we were little, my mom would make us pasta with béchamel or panna (like a thicker savory version of cream) prosciutto cotto (our equivalent of ham) and lots of parm on a weekly basis, truly we loved it every single time and on the days she’d throw a few cherry tomatoes and a few basil leaves it really felt special. I made it for my family and they loved it just as much (my sister loves it so much I make for lunch on days she works from home). No written recipe just go by heart. In Italy you can buy bechamel in little cartons next to the cream so if you don’t wanna make it just use like a cup of heavy cream instead. ❤️
Sometimes I think “well I shouldn’t share this again because I’ve shown it many times” but then I remember, we do real cooking around here and what I cook for my family is what I share with you. Some things are in the repertoire weekly, usually because it’s a favorite, easy, quick, and leftovers are even better. Leftovers of this sausage and broccoli rabe (should you have any) stuffed in some crusty bread with some good cheese and I swear it’s one of the best things on earth! The point to all this is, you’re supposed to cook the same things more than once, it’s how they become long standing family favorites and dishes everyone will rave about for years to come! The broccoli rabe recipe is in my book, I just seared sausages and added them to it so cook all together 😍😍

Paccheri With tuna and olives, it’s almost a fully made pantry pasta that always hits the spot! Use any pasta you’d like, I’m particularly fond of Paccheri for this because it really elevates pantry staples and kicks it up a notch. Not a real formal recipe but one I turn to often when time, grocery and patience are short. 10/10 recommend 👍

I swear if you have a bag of Hawaiian rolls you’re minutes away from some kind of sliders that will please even the pickiest eaters. These are my Italian hoagie sliders (recipe on my site and linking in stories too) and always such a hit and a perfect no recipe recipe kind of dinner. From peppers and eggs (a fantastic breakfast option I’ll be sharing with you soon!!) to hoagie style and even cheesesteak version (also on my site) possibilities are endless! 😘
Buongiorno!!! A nice Chicken Scarpariello would be dynamite on your table this weekend! Easy, so full of flavor, the sauce begs for a starch to soak it up (you can do rice or pasta but I think a crusty loaf of Italian bread is even better) a nice side salad and glass of something cold (peaches in wine anyone?!) and it’s bliss!!! Good ole Italian cooking from the heart is everything!! I stuffed whole eggplant (get small ones for this!) with lots of garlic, parsley and cheese, then simmered in a lovely sugo for a couple hours. It’s like a vegetarian version of bracioletti I kid you not! Joe was convinced the inside was stuffed with meat 🤣 he didn’t believe me when I told him it was just the flesh of the eggplant that soaked up all that beautiful flavor and got all rich and delish throughout the cooking process. I wanted to add a handful of golden raisins (just like Nonna does in bracioletti which by the way the recipe for those are in my book!) but was fresh out of those. So sensational, I can’t wait to make this again and again with our garden fresh eggplants soon! No real recipe I just cooked from the heart!

This easy simple grilled chicken (particularly love grilling sausages along side too) topped with whole lemon salsa verde is just sensational and possibly your go to weeknight dinner you’ll make all season long. My method of grilling the chicken low/med low and slow insures you get a beautifully rendered skin (crispy and so addictive) and the inside stays so juicy it just pulls apart. Must make!!
