Raven Goodwin Instagram – Coconut Curry Chicken Soup! Happy New Year! I’ve missed making these reels for ya’ll! This soup was just delicious. Make this for Sunday dinner! Pair with rice or noodles and enjoy! Recipe below 🥰💜 Ingredients: Green curry Yellow curry Coconut oil Coconut milk 2 Chicken breast White mushrooms Lemon grass Brown sugar Fish sauce Salt Pepper Lime Red Bell Pepper Yellow onion Shallot Chili oil Red jalapeño Fresh garlic Fresh ginger Noodles of choice or rice Cilantro Green onion Directions: Slice your chicken breast in half to make four cutlets Bring water to a boil add salt and lemongrass Add chicken breast Shred your chicken breast when done To a dutch oven: Add coconut oil Sauté red bell pepper, sliced onions, shallot & mushrooms Add fresh garlic, ginger & lemongrass Sauté until fragrant Add in a heaping table spoon of yellow curry And table spoon and a half of green curry Add chicken stock let simmer for a few mintues Add shredded chicken breast Add coconut milk Add brown sugar, salt, pepper, fish sauce and lime to taste Add your favorite noodle or rice to a bowl– I used pho rice noodles Add soup & garnish with: Cilantro Green onion Red jalapeño Chili oil Lime & Enjoy!
