Sangita Patel Instagram – Harissa chickpeas w/ roasted carrots and with delish toppings! Get those veggies in 🥕
Prep the carrots
About 3-4 carrots sliced or shred
2 tbsp olive oil
1 tbsp honey
1/2 tsp garlic powder
1/2 tsp paprika
Salt, to taste
Prep the #chickpeas:
1 can of chickpeas (drained)
3 tbsp harissa paste
Some olive oil
Salt and pepper
Put in oven at 400 for 20-30 mins until the chickpeas are crisp to your liking
The fun stuff – time to plate
1/2 cup greek yogurt, I’ve also done tzatziki
Add some feta, parsley
2 tbsp of tahini (add a little water if you want it thinner
Drizzle Chili-infused olive oil or just chilli flakes and olive oil
Enjoy!
