Alice Waters Instagram - I am very excited by the this kitchen design for my Institute for Edible Education and Regenerative Agriculture at UC Davis Aggie Square campus. I wanted a kitchen of my dreams like the one I saw in England at the Royal Pavilion in Brighton. Architect Hans Baldauf understood and here it is! Now we are looking to fund it quickly so we can begin teaching and inspire public school cooking using only organic regenerative local food purchased directly from the farms and ranches and only in season ! What an important and delicious way to address climate change and health!
Alice Waters Instagram - Zuni does have the best hamburger in California because the meat is from an organic regenerative ranch , they cook it just right and spread the bread with aïoli! Tomatoes , pickles , mustard and grilled onions are the finishing touches. So happy to eat there today at lunch.

Alice Waters Instagram - I love the sandwiches made on the Acme pizza bianca! There is always more filling than bread: the secret of a great sandwich. Bartavelle Cafe has shown us the way with salami, shaved fennel, aïoli and lots of rocket! And now we are making "to go" sandwiches for lunch at Panisse.
Alice Waters Instagram - I cannot tell you how addictive the potato chips are at Chez! The fried rosemary is the crowning touch. Thank god they come in small boxes "to go" and that I am embarrassed to order 10 small boxes! Thank you to the cafe cooks at Chez especially Sam.
Alice Waters Instagram - There is something about a chopped salad that is irresistible ! When vegetables are cut in small pieces , the vinaigrette dressing coats the them completely. All that is needed is a little garlic toast .Thank you Susie and Mirta for a perfect lunch.

I was so lucky to have a friend bring him to Panisse for his 90th birthday. He has always been a hero of mine because of his radical opinions and amazing landmark bookstore in North Beach SF which never fails to have a book I love or a sign on the front I must read. My friends have always gathered there. His spirit is alive and always will be!

Alice Waters Instagram - My very dear friend Charles Shere passed away yesterday leaving his wife Lindsey after 64 years of marriage. They both dreamed up Chez Panisse with me way back when and have been essential to its existence ever since. Charles's wisdom and dedication to Chez cannot be underestimated: He was a writer, composer , and director and I dare say a feminist! We will all miss his humor and his love of life. Our condolence to his wonderful family. We are always here for all of you!

His attention attention and skill was so impressive. He says he marinades them with herbs and a bit of wine to brown them well and to keep them beautifully medium rare inside.

This is the spoon I helped develop with my daughter @fannysinger for her company Permanent Collection and this is the first time I tried the copper spoon on the stove ! All my friends know that I love copper (the @chezpanisse kitchen is full of it) but I also love to cook with copper: it conducts heat faster and here it made the egg puff up even more ! Best of all, 5% of proceeds from sale of the products I helped develop for @permanentcollection benefit my @edibleschoolyard project ! #aliceseggspoon

Alice Waters Instagram - VIVE LA BASTILLE ET DE L'AIL!! Every year since 1975, Chez has had a garlic festival celebrating Bastille Day. Thank you Les Blank for making the timeless classic "Garlic is as Good as Ten Mothers" so we can see what was happening way back then. Sadly, this year we are not open inside so no dancing and garlic aromas. But there are garlic pizzas to go and spit roasted chickens stuffed with 40 cloves!! This is the garlic harvest moment in California.
Alice Waters Instagram - My daughter @fannysinger curated a collection of limited edition artist prints with @absolut_art to be displayed in the kitchen and she asked me to be part of the collection. Together, we decided on this photo I took of the @chezpanisse fruit bowl in the fall of 2019. I often think the fruit bowl is my favorite 'dish' at the restaurant — it is meant to exemplify the values we treasure: ripeness, seasonality, simplicity, stewardship and beaty. The fruit bowl of course would not be possible without our connection to the regenerative organic local farmers. A portion of the proceeds from the sale of this print will benefit the @edibleschoolyard, a nonprofit organization I founded that is dedicated to edible education. Alice Waters Instagram - When I was looking through old photos, this one seemed so important to post. We need to change the procurement system for food in our public schools to local seasonal regenerative organic food. I call this idea School Supported Agriculture. If schools bought directly from the farmers, ranchers,and food producers without a middleman, they could could be paid the real cost of for their important work. At the same time schools would be addressing climate, the health of students, and bringing the values of equity, stewardship, community and nourishment right through the cafeteria doors. What an economic stimulus for every state and the only HOPEFUL and DELICIOUS solution for climate change!

Alice Waters Instagram - It was amazing to be present at the meeting of King Charles and Carlo Petrini of Slow Food International. I know we have shared values: we believe in feeding children local, organic, regenerative food in schools. I call this School Supported Agriculture. Like Community Supported Agriculture, the farmer is first and paid directly from the school.

It is the best lunch with a big green lettuce salad with rocket and shaved fennel vinaigrette .One day I am going to learn how to make a galette pastry that is as flaky and tender as hers!
Alice Waters Instagram - I went to my dear friend Suzanne Goin's restaurant AOC last night. (Thank you Michael for inviting me) It felt really so safe in the beautiful 1930's garden. Radishes , butter, thin grilled toasts and a glass of rosé came immediately to the table! She serves my kind of simple and delicious food! Suzanne is an amazing optimistic person and so lucky to have started a catering company that has the space to continue at this difficult time. Small restaurants are closing everyday. We are praying for government help NOW!
Alice Waters Instagram - Celebrating the lunar new year with Niloufer Ichaporia is my favorite meal at Panisse ! This photo was two years ago when the restaurant was decorated with garlands of marigolds, gardenias and chrysanthemums. This year, of course, we have our Niloufer inspired Parsi food "to go" and I am setting the table for five of us at home with a garland Janet made. It is not the same but beautiful and aromatic nonetheless....

They are doing such amazing work at @foodforsoul_it building REFETTORIOS around the world to reduce food waste and feed the communities where they’re based. There is a beautiful one in San Francisco, and I can’t wait to visit the one in Harlem some day! Alice Waters Instagram - Yesterday I visited @apricotlanefarms and had lunch with its owners John & Molly Chester. This is his hand showing us the organic regenerative soil under the citrus trees. A lot of worms means healthy soil= healthy food! Laurie David made an extraordinary film about this farm, @thebiggestlittlefarm, and now she has a book, #imagineitbook, that celebrates all of the things I believe in. An inspiring book to read this earth month!

Can you believe they have been advocating since 1947 !!! It is really all about the soil for health and climate. And taste!
Alice Waters Instagram - What a surprise to find myself at the beloved and closed Cala restaurant in San Francisco! It was a special gathering sponsored by Lorenzo Ortona to celebrate the opening of Massimo Bottura’s Refettorio San Francisco .Together with Farming Hope, @refettoriosanfrancisco and @foodforsoul_it, farm-to-table, meals are prepared for those in need while helping employ the unemployed. The project unites California with Italy in all the values we share! Thank you @italyinsanfran for supporting and making possible this incredible "learning by doing" experience! And thank you Cala for giving the project a beautiful inspiring "home" during the pandemic. They have produced 500 meals a day for the San Francisco homeless!!

Alice Waters Instagram - These are maybe the last last of the Kishu mandarins for this year from Jim Churchill's farm in Ojai . They are small, seedless, easy to peel and they have sweet juice that is irresistible ! The biodiversity of citrus has opened up a whole new world of taste to us.

Alice Waters Instagram - I love shaved vegetable salads! Chez Panisse made this one yesterday with purple turnips, fennel, carrots and rocket. Using a mandolin , you can change the shape of vegetables every day of the week all winter long. Apples and persimmons are great in there too.

We need our new enlightened administration to embrace School Supported Agriculture so we can address climate, support regenerative organic farmers and farmworkers directly and locally. Just think, that at the same time, we could be feeding our children the most nourishing food! Every child deserves a free healthy delicious school lunch shared at a table with their classmates! It fits exactly four kishu mandarins and had Boulette's Larder printed on the leaf( hard to read here)I am always inspired by their meals because they just get the ripest and most beautiful organic ingredients right out their door at the Ferry Plaza market on Saturdays.

It was hugely popular and my partner Tom Guernsey made omelets in the dining room ! There was even a line around the block. But one Saturday night about midnight Tom asked me if we had to do it anymore. I said no. It was too much. Alice Waters Instagram - I wanted to open LULU because I am hoping that the University of California will really change its procurement to regenerative, organic food. So, I named this restaurant after Lulu Peyraud—a dear friend and mentor. I met Lulu through a mutual friend way back in the mid 70s. I was invited to Domaine Tempier and just immediately fell in love. She had this sense of hospitality, that really made me think about everything differently. She would make a lunch table and have her big meal of the day at lunch. She never knew what she was cooking until she came back from the farmers market. And if somebody just walked in that she didn’t expect, she’d invite them to the table and put down another place setting. She would bring the wood in for the fireplace first thing in the morning to make a fire, and we would tag team. She had two swings in the yard and we would go swinging together, which I loved. And it was that way, right to the end of her life. And so I think about that as I get older, that I want to be doing meaningful work. Alice Waters Instagram - This is my Kitchen Basket!It's the newest addition to a little kitchen collection I've collaborated on with my daughter @fannysinger's company @permanentcollection. The collection is a group of pieces modeled some of my favorite kitchen implements: my Egg Spoon, my mortar & pestle, my salad bowl, and now, my indispensable kitchen basket! This basket is permanently installed at the end of my butcher block, a place to keep onions and garlic and whatever else gathers there. I use it to harvest lettuces in my Victory Garden and take it out to transport all the food for an instant picnic. It makes everything look beautiful! Handwoven by Clair Murphy in England from rush gathered in the rivers of Somerset, it's a reminder of our connection to the beauty of nature.

Likes : 1504Alice Waters - 1.5K Likes - I wanted to open LULU because I am hoping that the University of California will really change its procurement to regenerative, organic food. So, I named this restaurant after Lulu Peyraud—a dear friend and mentor. I met Lulu through a mutual friend way back in the mid 70s. I was invited to Domaine Tempier and just immediately fell in love. She had this sense of hospitality, that really made me think about everything differently. She would make a lunch table and have her big meal of the day at lunch. She never knew what she was cooking until she came back from the farmers market. And if somebody just walked in that she didn’t expect, she’d invite them to the table and put down another place setting. She would bring the wood in for the fireplace first thing in the morning to make a fire, and we would tag team. She had two swings in the yard and we would go swinging together, which I loved. And it was that way, right to the end of her life. And so I think about that as I get older, that I want to be doing meaningful work. So, I named this restaurant after Lulu Peyraud—a dear friend and mentor. I met Lulu through a mutual friend way back in the mid 70s. I was invited to Domaine Tempier and just immediately fell in love. She had this sense of hospitality, that really made me think about everything differently. She would make a lunch table and have her big meal of the day at lunch. She never knew what she was cooking until she came back from the farmers market. And if somebody just walked in that she didn’t expect, she’d invite them to the table and put down another place setting. She would bring the wood in for the fireplace first thing in the morning to make a fire, and we would tag team. She had two swings in the yard and we would go swinging together, which I loved. And it was that way, right to the end of her life. And so I think about that as I get older, that I want to be doing meaningful work. Handwoven by Clair Murphy in England from rush gathered in the rivers of Somerset, it's a reminder of our connection to the beauty of nature.
