Briony May Williams Instagram - You won’t believe this isn’t pastry…they taste INCREDIBLE! I made these on Morning Live yesterday and they went down a right treat so I wanted to share the recipe love! These cheats sausage rolls use a tortilla wrap instead of pastry but you would never know! They take 20 minutes to make and you will probably have most ingredients in your kitchen cupboard. For more lovely recipes, head to the Morning Live website (link in bio) ❤️ Cheats Sausage Rolls Ingredients 2 tortilla wraps 6 sausages Sage and onion stuffing mix or 2-3 slices of slightly stale breadcrumbs 1 egg 2 tbsp sesame seeds/nigella seeds/poppy seeds Method Add sage and onion mix to a bowl and cover with boiling water. Leave for a few minutes while you remove the skins from the sausages. Mix the stuffing then place the sausage meat in the bowl giving everything a good mix. Place half the sausage mix on one wrap about an inch from the top then form it into a large sausage shape. Beat the egg then brush around the edge of the wrap. Roll up the wrap around the meat mixture and press the edges to seal. Repeat with the other wrap and the remaining sausage mixture. Slice into 1 inch rolls. Brush the top of each sausage roll with the egg then sprinkle over the seeds. Place in the air fryer and cook for 12-15 minutes until golden brown (if using a regular oven, bake at 180C for 15-20 minutes). #sausagerolls #cheat #cheatrecipe #cheatday #recipe #airfryer #easyrecipe #airfryerrecipes
Briony May Williams Instagram - After a gorgeous birthday on Monday the week took a bit of a turn when I ended up in A&E for over 24 hours with a suspected blood clot on my chest. Luckily there was no clot, just various other things going on that can be treated and sorted. I felt so looked after from the kind voice at 111 to the 3 amazing paramedics who came to the house, all the INCREDIBLE nurses in A&E (shout out to Rosie and her unending warmth and humour), to the doctors who figured out what was going on when me and my family were pretty scared, to Trish and Nigel who made me laugh while waiting to be scanned, to the porters who pushed me around with a smile on their faces. We are beyond lucky to have the NHS and I will never take it for granted. I’m at home now and resting, I’ll be back to rights very soon, just need to look after myself. My lovely family have been so blooming wonderful, I consider myself really very lucky 💕 Take care of yourselves lovely ones ❤️
Briony May Williams Instagram - One whole year alcohol free!!! ❤️ My birthday also marked my ‘soberversary’ which is something I NEVER thought I would even consider, let alone do! Turns out being booze free on your 40th is freaking awesome 💕 I have always enjoyed a drink, getting drunk on a night out, having wine with friends but after getting really poorly this time last year, I had to reassess a few things. I gave up the booze, stopped vaping, stopped drinking Diet Coke (I’d drink 2-3 cans a day) and cut back on caffeine. It was a lot but after a few months, I was feeling infinitely better so I kept going. After 6 months, I realised I was actually enjoying not drinking, I didn’t miss it. I could still go out and have the best time drinking blackcurrant squash and a decaf coffee! So here I am a whole year later! 12 months of no hangovers, 365 days of better sleep, 3 stone of weight lost, countless healthier meals. I’m honestly not sure I’ll ever go back! Briony May Williams Instagram - Just a little swimming update…at the beginning of the year I set myself the challenge of learning to swim properly. I could barely swim 10m and really struggled to get any momentum going. I took some lessons at my local leisure centre for a few months and tried to go swimming a couple of times a week to practice. I really started to enjoy it and actually began to be able to swim lengths. Cut to now and I go swimming 3 times a week swimming 500m each time (not all in one go but comfortably) and I absolutely LOVE IT!!! It’s never too late to learn a new skill or start a new hobby, I’m so glad I pushed myself, it’s been such a positive experience ❤️ Bring on the @superhero_series Tri in August, I’m ready!!!
Briony May Williams Instagram - Here it is!! First up in my seasonal recipes series…Apple Crumble Cake 🍎 I can tell you that this is one of the most delicious cakes I’ve ever made, it is EPIC!!! If you give this a go, please let me know. My family and friends love it, I hope yours do too!! ❤️ #seasontotaste Apple Crumble Cake Ingredients Sponge 200g unsalted butter, softened 200g golden caster sugar 4 medium eggs 200g self raising flour 50g custard powder (optional) 2 apples (I used British Jazz) 1 tsp cinnamon Crumble Topping 150g self raising flour 100g unsalted butter, cold 100g golden caster sugar 50g oats 50g demerara sugar Method Oven on to 180C. Grease and line a brownie tin. Core the apples (no need to peel) then finely slice. Place in a bowl, add cinnamon and mix so that all the slices are covered. Make the crumble topping. Cut the cold butter into small cubes then, in a mixing bowl, rub into the flour until it resembles bread crumbs. Mix through the sugar and oats. Set aside. Make the sponge. Beat the butter until light and fluffy then add the sugar and beat until smooth. Add 2 eggs, beat, add half the flour and the custard powder, beat then repeat. Add the sliced apples and fold through the batter until they are well distributed. Pour the sponge batter into the prepared tin and smooth down the top. Pour the crumble topping over the sponge then sprinkle on the demerara sugar. Bake for 40-45 minutes until a skewer comes out clean. Briony May Williams Instagram - I haven’t mentioned this on social media as I wasn’t really sure about how long I would last but I’ve been a sober Susie for 6 months today. Me!! The girl who LOVES wine and getting drunk with her besties has given up the booze, I know, nobody is more shocked than me! It started when I ended up in hospital with a suspected stomach ulcer and the doc told me to lay off all the fun stuff (alcohol, caffeine etc) for a few weeks to let it heal. So I did, I stopped it all, no cutting down, I just stopped because I was scared that it had impacted my health so significantly. A month went by and I wasn’t really missing it then my first big challenge was a big 40th and I’m not gonna lie, I was nervous about going but do you know what? I had the BEST night! Everyone around me got pretty hammered but I stuck to the water and danced my heart out till 2am on Canal Street loving life. Since then I have said to myself that if I want a drink, I can have one, but so far I genuinely haven’t. I had a sip of champagne at an event last month and didn’t want anymore, it was a bizarre feeling. I am not saying it is forever but it is definitely for now and it has changed my life immeasurably for the better ❤️

Briony May Williams Instagram - After the wonderfully positive response from you lovely lot for the Apple Crumble Cake, I started thinking about what else I could combine with crumble…so I give to you the Apple Crumble Cheesecake 🍎 It is ridiculously yummy 😋 The big question is, what can I put crumble on next?!? #seasontotaste Apple Crumble Cheesecake Ingredients Base 175g digestives/hobnobs 80g butter, melted 1 tsp ground cinnamon Cheesecake Filling 400g cream cheese, room temperature 100g caster sugar 75ml sour cream/creme fraiche, room temperature 2 eggs 25g custard powder 1 tsp corn flour Crumble Topping 1 apple 1 tsp cinnamon 75g self raising flour 50g unsalted butter, cold 50g golden caster sugar 25g oats 25g demerara sugar Caramel Sauce 100g light soft brown sugar 45g salted butter 60ml double cream Method 1. Oven on to 180C fan/200C. Bash up biscuits into crumbs, mix in the cinnamon, add melted butter and mix. Press into the base of 8 inch tin and bake for 10 minutes. 2. In a bowl, mix together cream cheese, sugar, sour cream/creme fraiche, eggs, custard powder and cornflour until smooth (sometimes you need to use a whisk to get any lumps out). 3. Retrieve the base and turn the oven down to 160C fan/180C. 4. Core the apples (no need to peel) then finely slice. Place in a bowl, add cinnamon and mix so that all the slices are covered. To make the crumble topping, cut the cold butter into small cubes then, in a mixing bowl, rub into the flour until it resembles bread crumbs. Mix through the golden caster sugar and oats. 5. Pour the cream cheese mixture over the base. Gently top with the sliced cinnamon apples then sprinkle over the crumble topping and Demerara sugar. Bake for 50-55 minutes until set and golden brown. Leave to cool. 6. To make the caramel, heat the sugar in a pan until melted. Remove from the heat and stir through the butter. Pour in the cream and mix well until smooth. 7. Briony May Williams Instagram - 500 Days Sober ✨ This feels like a big milestone! Especially considering initially I was only going to stop drinking for a few weeks, it’s awesome to get to this place. Not to sound too cliché but it has been a journey! I’m not the same person as I was 500 days ago. I’m stronger, more clear-headed, more present and more confident. I have yet to see a negative impact of sobriety but there are a myriad of wonderful benefits. It’s hard to narrow it down but here are my top 5 things I love about the last 500 days off the booze… My mental health has improved significantly, my moods don’t reach the dark depths as much as they would previously. Relationships with the people I love feel stronger and more secure because I’m focused and present. I used to get ill a lot! Colds, flu, Covid, the lot! I feel so much healthier, don’t get poorly as much and my body is much happier with me. Energy is much more abundant since giving up the booze. Because I’m sleeping better, taking time to look after my body and wellbeing, my energy supplies aren’t zapped constantly. I have so much more time!!! Not just the hours I’d lose to not remembering drunken chats on a night out but the days after when I would be feeling dreadful and not want to interact with the world. #gloriouslysober #sober #alcoholfree #sobriety #sobercurious

Briony May Williams Instagram - I’m really struggling to put into words how much this weekend has meant to me. When I was little, about the age I am in this pic, we used to go to Reach family weekends and meet other kids with upper limb differences, other parents in the same situation as mine and they were a lifeline at a time when there was no social media, no internet even. Reach supported me and my family and it feels like a full circle moment now that I get to be one of their ambassadors. The @reachcharity1 team were superb this weekend up in Newcastle, it was such an amazing event full of joy, love and support. I was delighted to do a baking demo and danced the night away at the gala with the most incredible group of people (@crosslandshannon @iampossiblemama @jesselhv @ella.dickinson @gemmaadby @alex_brooker @whatwegandidnext). I had such a good time I barely took any photos 😂 To see so many ‘little hands’ in one place was overwhelmingly beautiful, to see so many resilient, strong, hilarious young people in one place was simply spectacular. The latest instalment in my seasonal recipe series are these Apple Crumble Cookies which are ridiculously delicious, I should be humble but I just can’t with these, they really are superb and crumbly and yummy😍 If you thought the Apple Crumble Cake was good, have a gander at these beauties 🍎#seasontotaste Ingredients Cookies 125g unsalted butter, softened 250g biscoff spread 125g golden caster sugar 175g light soft brown sugar 1 large egg 275g self raising flour 25g custard powder (optional) ½ tsp salt 2 red apples, cored and chopped Crumble coating 75g self raising flour 50g unsalted butter, chilled and cubed 50g granulated sugar 50g rolled oats 1 tsp cinnamon 1 tbsp Demerara sugar Method 1. Oven on to 180°C fan/ 200°C. Line 2 baking trays with parchment. 2. Make the crumble. In a mixing bowl, rub the butter into the flour until it resembles breadcrumbs then mix through the sugar, oats and cinnamon. 3. Make the cookie dough. Beat the butter, biscoff spread and sugars until light and fluffy. 4. Add the egg into the butter mixture and beat until combined. 5. Add the flour, custard powder and salt then gently mix until combined. Add the chopped apple and mix until just combined. 6. Break off a brussel sprout size piece of cookie dough and roll into a ball. Place each ball of dough in the crumble to coat. Place on the parchment and top with extra crumble. Sprinkle over the Demerara sugar. 7. Bake for 15 minutes until golden brown. Briony May Williams Instagram - Sticky Toffee Pudding alert!!! 🚨 Welcome to episode 2 of my seasonal recipes series and today we are doing pears 🍐 So juicy, so delicious and they pear (see what I did there!) brilliantly with the flavours in this Hassleback Pear Sticky Toffee Pudding Cake. You will be fighting off your friends and family wanting a slice, just check out the end of the video 🤣 #seasontotaste Hassleback Pear Sticky Toffee Pudding Cake Ingredients Sponge 250g self raising flour 200g soft brown sugar 1 tsp baking powder ½ tsp salt 250ml milk 120g unsalted butter, melted 3 medium eggs 150g fresh dates, stoned & chopped 1 tsp mixed spice 3 pears Sauce 50g unsalted butter 200g soft brown sugar 250ml single cream 1 tsp mixed spice 1 tbsp treacle Method Oven on to 180C fan/200C. Grease and line an 8 inch cake tin. In a saucepan, cover the chopped dates with 100ml water & heat gently for 5 minutes until broken down. Prepare the pears. Top, tail and peel the pears and slice in half lengthways. Place a half of pear in between the handles of 2 wooden spoons and thinly slice widthways all along the fruit stopping at the handles so you don’t cut all the way through. Repeat with the other halves. Make the sponge. Mix together the flour, sugar, baking powder & salt. In a separate bowl, whisk together the milk, melted butter & eggs. Add the wet ingredients to the dry ingredients, mix until combined. Add the dates and mix again. Pour the mixture into the prepared tin, place the hassleback pears in a circle around the batter and press them down so that half of each pear is submerged. Bake for 45-50 minutes until a skewer comes out clean. Make the sauce. Add all the ingredients into a saucepan & heat gently until combined. Leave on the heat for 5-10 minutes until thickened. Briony May Williams Instagram - 🐣Easter Egg Cheesecakes 🐣 These are epic!!! No baking involved, super quick to make and will definitely impress the family! Enjoy 💕 Makes 4 Ingredients 2 Easter eggs 5 chocolate digestive biscuits 75g unsalted butter, melted 200g cream cheese 75g icing sugar 125ml double cream ½ teaspoon vanilla extract Handful mini eggs, crushed 30g dark chocolate, melted Separate the Easter eggs into halves and pop in the freezer for 5 minutes to harden up. Bash the biscuits up using a rolling pin. Add to a bowl. Add the melted butter to the biscuits. Mix. Retrieve the Easter egg halves and add a few tablespoons of the biscuit mixture to each half then press down into the base carefully. Place in the freezer while you make the cream cheese mixture. Add the icing sugar to the cream cheese and mix to combine. Whisk the double cream and vanilla in a bowl to soft peaks. Fold the cream cheese into the whipped cream. Pour the cream cheese mixture over the biscuit bases in the egg halves. Place in the fridge for a few hours or overnight to chill. Briony May Williams Instagram - Spice up your life with this next delicious instalment in my Super Seasonal Recipe Series ❤️ This time we’re celebrating the humble carrot 🥕 This Spiced Carrot Bundt Cake is so packed with flavour and takes the carrot cake to the next level. I’ve made a Bundt but you can use a loaf tin for this recipe 🥕 Let me know if you give this gorgeous cake a try! ❤️ #seasontotaste Ingredients 320g carrots, grated 100g pecans, chopped 100g raisins 300g plain flour 2 tsp bicarbonate of soda 2 tsp ground cinnamon 1 tsp allspice 1 tsp ginger 1 tsp salt 300ml vegetable oil 4 large eggs 1 tsp orange extract 200g golden caster sugar 200g light brown sugar Icing 150g cream cheese 100g icing sugar 2 tbsp lemon juice Decoration Crushed pecans Orange zest Method 1. Oven on to 180C fan/200C. Liberally grease and flour a bundt tin. 3. In a bowl, add the oil, eggs, orange extract and sugars. Mix well to combine. 4. In another bowl, add the flour, bicarb, cinnamon, allspice, ginger and salt. Whisk to combine. 5. Tip the oil mixture into the flour mixture. Mix until smooth. Add the grated carrots, nuts and raisins. Mix again then pour into the prepared tin. Bake for 1h10 until a skewer comes out clean. Leave for 10 minutes then tip onto a cooling rack. 6. Make the icing. Mix all the ingredients together until smooth then drizzle over the cake. Briony May Williams Instagram - Hurled myself fully out of my comfort zone today!!! 😬 I absolutely love being a Team Captain for the Superhero Series, it is an event full of pure joy which encourages anyone living with a disability (the superheroes) and their friends/families/carers (the sidekicks) to get involved in one or all of the events. Last year I was meant to so do the swimming part of the triathlon but seeing as I couldn’t swim more than a few metres, they put me in a boat pulled by the amazing @ladybugstrust and it gave me a HUGE kick up the bum to set myself the challenge of learning to swim and swimming the same section this year. I started lessons at my local leisure centre in January and built up from there. And today I bloody did it!!!! I swam 150m in open water with no floats or assistance. I’m over the moon!! It’s never too late to learn something new and set yourself a challenge 💕 The @superhero_series really is magical and encourages everyone to do their best in whatever way they need. These cheats sausage rolls use a tortilla wrap instead of pastry but you would never know! They take 20 minutes to make and you will probably have most ingredients in your kitchen cupboard. For more lovely recipes, head to the Morning Live website (link in bio) ❤️ Cheats Sausage Rolls Ingredients 2 tortilla wraps 6 sausages Sage and onion stuffing mix or 2-3 slices of slightly stale breadcrumbs 1 egg 2 tbsp sesame seeds/nigella seeds/poppy seeds Method Add sage and onion mix to a bowl and cover with boiling water. Leave for a few minutes while you remove the skins from the sausages. Mix the stuffing then place the sausage meat in the bowl giving everything a good mix. Place half the sausage mix on one wrap about an inch from the top then form it into a large sausage shape. Beat the egg then brush around the edge of the wrap. Roll up the wrap around the meat mixture and press the edges to seal. Repeat with the other wrap and the remaining sausage mixture. Slice into 1 inch rolls. Brush the top of each sausage roll with the egg then sprinkle over the seeds. Caption : After a gorgeous birthday on Monday the week took a bit of a turn when I ended up in A&E for over 24 hours with a suspected blood clot on my chest. Luckily there was no clot, just various other things going on that can be treated and sorted. I felt so looked after from the kind voice at 111 to the 3 amazing paramedics who came to the house, all the INCREDIBLE nurses in A&E (shout out to Rosie and her unending warmth and humour), to the doctors who figured out what was going on when me and my family were pretty scared, to Trish and Nigel who made me laugh while waiting to be scanned, to the porters who pushed me around with a smile on their faces. We are beyond lucky to have the NHS and I will never take it for granted. I’m at home now and resting, I’ll be back to rights very soon, just need to look after myself. Turns out being booze free on your 40th is freaking awesome 💕 I have always enjoyed a drink, getting drunk on a night out, having wine with friends but after getting really poorly this time last year, I had to reassess a few things. I gave up the booze, stopped vaping, stopped drinking Diet Coke (I’d drink 2-3 cans a day) and cut back on caffeine. It was a lot but after a few months, I was feeling infinitely better so I kept going. After 6 months, I realised I was actually enjoying not drinking, I didn’t miss it. I could still go out and have the best time drinking blackcurrant squash and a decaf coffee! So here I am a whole year later! 12 months of no hangovers, 365 days of better sleep, 3 stone of weight lost, countless healthier meals. I’m honestly not sure I’ll ever go back! Sobriety is so much more fun than I ever imagined, in fact, it’s bloody fabulous!!! #sober #sobriety #soberlife #soberliving #sobercurious #alcoholfree #nobooze

Cut to now and I go swimming 3 times a week swimming 500m each time (not all in one go but comfortably) and I absolutely LOVE IT!!! My family and friends love it, I hope yours do too!! ❤️ #seasontotaste Apple Crumble Cake Ingredients Sponge 200g unsalted butter, softened 200g golden caster sugar 4 medium eggs 200g self raising flour 50g custard powder (optional) 2 apples (I used British Jazz) 1 tsp cinnamon Crumble Topping 150g self raising flour 100g unsalted butter, cold 100g golden caster sugar 50g oats 50g demerara sugar Method Oven on to 180C. Grease and line a brownie tin. Core the apples (no need to peel) then finely slice. Place in a bowl, add cinnamon and mix so that all the slices are covered. Make the crumble topping. Cut the cold butter into small cubes then, in a mixing bowl, rub into the flour until it resembles bread crumbs. Mix through the sugar and oats. Set aside. Make the sponge. Beat the butter until light and fluffy then add the sugar and beat until smooth. Add 2 eggs, beat, add half the flour and the custard powder, beat then repeat. Add the sliced apples and fold through the batter until they are well distributed. Pour the sponge batter into the prepared tin and smooth down the top. Pour the crumble topping over the sponge then sprinkle on the demerara sugar. Bake for 40-45 minutes until a skewer comes out clean. Especially considering initially I was only going to stop drinking for a few weeks, it’s awesome to get to this place. Not to sound too cliché but it has been a journey! I’m not the same person as I was 500 days ago. I’m stronger, more clear-headed, more present and more confident. I have yet to see a negative impact of sobriety but there are a myriad of wonderful benefits. It’s hard to narrow it down but here are my top 5 things I love about the last 500 days off the booze… My mental health has improved significantly, my moods don’t reach the dark depths as much as they would previously. Relationships with the people I love feel stronger and more secure because I’m focused and present. I used to get ill a lot! Colds, flu, Covid, the lot! I feel so much healthier, don’t get poorly as much and my body is much happier with me. Energy is much more abundant since giving up the booze. Because I’m sleeping better, taking time to look after my body and wellbeing, my energy supplies aren’t zapped constantly. I have so much more time!!! Not just the hours I’d lose to not remembering drunken chats on a night out but the days after when I would be feeling dreadful and not want to interact with the world. #gloriouslysober #sober #alcoholfree #sobriety #sobercurious

Reach supported me and my family and it feels like a full circle moment now that I get to be one of their ambassadors. The @reachcharity1 team were superb this weekend up in Newcastle, it was such an amazing event full of joy, love and support. I was delighted to do a baking demo and danced the night away at the gala with the most incredible group of people (@crosslandshannon @iampossiblemama @jesselhv @ella.dickinson @gemmaadby @alex_brooker @whatwegandidnext). I had such a good time I barely took any photos 😂 To see so many ‘little hands’ in one place was overwhelmingly beautiful, to see so many resilient, strong, hilarious young people in one place was simply spectacular. The evening was made even more magical because it was spent under the wings of a Concorde at @aerospacebristol 🤩 What an experience!!! The latest instalment in my seasonal recipe series are these Apple Crumble Cookies which are ridiculously delicious, I should be humble but I just can’t with these, they really are superb and crumbly and yummy😍 If you thought the Apple Crumble Cake was good, have a gander at these beauties 🍎#seasontotaste Ingredients Cookies 125g unsalted butter, softened 250g biscoff spread 125g golden caster sugar 175g light soft brown sugar 1 large egg 275g self raising flour 25g custard powder (optional) ½ tsp salt 2 red apples, cored and chopped Crumble coating 75g self raising flour 50g unsalted butter, chilled and cubed 50g granulated sugar 50g rolled oats 1 tsp cinnamon 1 tbsp Demerara sugar Method 1. Oven on to 180°C fan/ 200°C. Line 2 baking trays with parchment. 2. Make the crumble. In a mixing bowl, rub the butter into the flour until it resembles breadcrumbs then mix through the sugar, oats and cinnamon. 3. Make the cookie dough. Beat the butter, biscoff spread and sugars until light and fluffy. 4. Add the egg into the butter mixture and beat until combined. 5. Add the flour, custard powder and salt then gently mix until combined. Add the chopped apple and mix until just combined. 6. Break off a brussel sprout size piece of cookie dough and roll into a ball. Place each ball of dough in the crumble to coat. Place on the parchment and top with extra crumble. Sprinkle over the Demerara sugar. 7. Bake for 15 minutes until golden brown. You will be fighting off your friends and family wanting a slice, just check out the end of the video 🤣 #seasontotaste Hassleback Pear Sticky Toffee Pudding Cake Ingredients Sponge 250g self raising flour 200g soft brown sugar 1 tsp baking powder ½ tsp salt 250ml milk 120g unsalted butter, melted 3 medium eggs 150g fresh dates, stoned & chopped 1 tsp mixed spice 3 pears Sauce 50g unsalted butter 200g soft brown sugar 250ml single cream 1 tsp mixed spice 1 tbsp treacle Method Oven on to 180C fan/200C. Grease and line an 8 inch cake tin. In a saucepan, cover the chopped dates with 100ml water & heat gently for 5 minutes until broken down. Prepare the pears. Top, tail and peel the pears and slice in half lengthways. Place a half of pear in between the handles of 2 wooden spoons and thinly slice widthways all along the fruit stopping at the handles so you don’t cut all the way through. Repeat with the other halves. Make the sponge. Mix together the flour, sugar, baking powder & salt. In a separate bowl, whisk together the milk, melted butter & eggs. Add the wet ingredients to the dry ingredients, mix until combined. Add the dates and mix again. Pour the mixture into the prepared tin, place the hassleback pears in a circle around the batter and press them down so that half of each pear is submerged. Bake for 45-50 minutes until a skewer comes out clean. Make the sauce. Add all the ingredients into a saucepan & heat gently until combined. Leave on the heat for 5-10 minutes until thickened. You will be fighting off your friends and family wanting a slice, just check out the end of the video 🤣 #seasontotaste Hassleback Pear Sticky Toffee Pudding Cake Ingredients Sponge 250g self raising flour 200g soft brown sugar 1 tsp baking powder ½ tsp salt 250ml milk 120g unsalted butter, melted 3 medium eggs 150g fresh dates, stoned & chopped 1 tsp mixed spice 3 pears Sauce 50g unsalted butter 200g soft brown sugar 250ml single cream 1 tsp mixed spice 1 tbsp treacle Method Oven on to 180C fan/200C. Grease and line an 8 inch cake tin. In a saucepan, cover the chopped dates with 100ml water & heat gently for 5 minutes until broken down. Prepare the pears. Top, tail and peel the pears and slice in half lengthways. Place a half of pear in between the handles of 2 wooden spoons and thinly slice widthways all along the fruit stopping at the handles so you don’t cut all the way through. Repeat with the other halves. Make the sponge. Mix together the flour, sugar, baking powder & salt. In a separate bowl, whisk together the milk, melted butter & eggs. Add the wet ingredients to the dry ingredients, mix until combined. Add the dates and mix again. Pour the mixture into the prepared tin, place the hassleback pears in a circle around the batter and press them down so that half of each pear is submerged. Bake for 45-50 minutes until a skewer comes out clean. Make the sauce. Add all the ingredients into a saucepan & heat gently until combined. Leave on the heat for 5-10 minutes until thickened. I’ve made a Bundt but you can use a loaf tin for this recipe 🥕 Let me know if you give this gorgeous cake a try! ❤️ #seasontotaste Ingredients 320g carrots, grated 100g pecans, chopped 100g raisins 300g plain flour 2 tsp bicarbonate of soda 2 tsp ground cinnamon 1 tsp allspice 1 tsp ginger 1 tsp salt 300ml vegetable oil 4 large eggs 1 tsp orange extract 200g golden caster sugar 200g light brown sugar Icing 150g cream cheese 100g icing sugar 2 tbsp lemon juice Decoration Crushed pecans Orange zest Method 1. Oven on to 180C fan/200C. Liberally grease and flour a bundt tin. 3. In a bowl, add the oil, eggs, orange extract and sugars. Mix well to combine. 4. Last year I was meant to so do the swimming part of the triathlon but seeing as I couldn’t swim more than a few metres, they put me in a boat pulled by the amazing @ladybugstrust and it gave me a HUGE kick up the bum to set myself the challenge of learning to swim and swimming the same section this year. I learnt so much and had the best time. There are too many wonderful moments to mention and I was enjoying myself so much I didn’t take pics of everyone but thank you to each and every amazing chef who joined me on the stage 💕 An extra special HUGE thank you to the amazing team behind the scenes, none of it is possible without them, they work so hard!! You are all angels Victoria, Cora, Angela, Natalie, Ben, Pamela, Tara, Lynn and Jo ❤️ And of course @tvsandyclarke you’re a blooming legend for organising such a sensational Food Fest, it blows my mind how you manage it all!
