Here is a basic salad I make 5 days a week that’s packed with protein, healthy fats, fiber, complex carbohydrates antioxidants (plus so much more!). It’s a common misconception that vegans are deficient in iron, protein and B12…but I’ve found that if you eat a wide range of plants, legumes, and mushrooms, you will likely find that you CAN have all your nutrient needs covered. I’m not pushing a vegan lifestyle on anyone, I honestly believe you should listen to your body’s needs because everyone is different and may not feel good on a solely plant-based diet 😉💚 Before you ask if I’m getting enough protein and B12…I am! I just received the results from my latest panel of bloodwork and my B12, protein, iron and folate are all on the high-end of the spectrum (but still in the healthy range). Caption : Make sure you live before you die. In my twenties, I was obsessed with two things: school and work. My passion helped me attain my goals; I graduated early from college, got a Master’s Degree in Public Health my dream job of being a reporter in LA (and later meteorologist). I scheduled my days like a disciplined soldier: Gym, School, Work, Repeat. While I enjoyed achieving my goals, I missed out on enjoying the process and in turn, missed out on life. I missed holidays, left family trips early, and was a no show for baby showers, bridal showers, bachelorette parties and family gatherings…welcome to working in news where the schedules don’t budge and if there’s breaking news, you’re working overtime, no questions asked (the good thing was I LOVED it, and felt like my on-air gig outweighed the sacrifice… 🤷🏻♀️) But then…I experienced BURNOUT. Yup, my mom was right, I needed more balance in my life… Today, I no longer work in news, but I still work my a** off daily (hey, once a disciplined soldier, always a disciplined soldier). Caption : It took me five years to open up my heart and home to a new little girl. Anyone who knows me or has followed me for some time, knows that I was head over heels for my dog, Shanti. She was everything to me. After I put her down because of cancer, I couldn’t bear to bring another dog into my home. However, time heals and the time has come to bring another little girl into my life. Meet Bala! While she looks like a $3000 designer dog, I adopted her for $25 at @bfas_la Bala’s story? She was found roaming the streets somewhere in the San Fernando Valley. She was dropped off at West Valley Animal Shelter and someone from BFAS happened to be there that day, picking up some other dogs and when they saw her, they brought her to their sanctuary in West LA. I should mention BFAS is the largest no kill sanctuary in the US. All it took was five minutes after @luismstrohmeier and I met this little nugget. He literally looked at me and said, “we have to take her.” So we did! And she has already brought so much joy into our lives. In case you’re wondering why we named her Bala, I thought it would be nice to stick with another Sanskrit name in honor of Shanti. As most of you probably know, Shanti means peace. In Sanskrit, Bala means “the little one” or “the child like one,” and all I can say is the name is perfect for her. She’s super spirited and playful, and even as she ages, I know her young spirit will continue to shine thru. If you’re looking for a dog or cat, I encourage you to visit BFAS/NKLA, I’m sure you will find your best friend. I should mention, having a dog or cat around, is really good for your mental health. Caption : Most of you guys know me as a former meteorologist and reporter at a local tv station in Los Angeles. What you may not know is that I have always been passionate about health and wellness. It started when I was 20 years old, after my pau pau (grandmother) was diagnosed with ovarian cancer. It broke my heart to see her suffer and witnessing her struggle sent me down a path of research. After watching her cry at one of her chemo sessions, I wanted to find out what I could do to help, what caused the disease and what I could do to prevent it from happening to me in the future. Everything I read circled back to prevention. Her sickness was the catalyst for me to make a deep commitment in my personal health. It also motivated me to obtain a Master’s Degree in Public Health, become a certified yoga teacher, and it influenced me to become a certified Functional Medicine Health Coach (I’ll graduate in August, 2024!). I love functional medicine because practitioners focus on finding the root cause of disease instead of just treating the symptoms. They give their patient’s a lifestyle prescription to help them heal and many times, making these lifestyle changes can reverse disease. A coach supports their client and helps them co-create a plan so they can reach their health goal. Coaches are masters at behavior change and shifting peoples mindsets. While I am not planning on taking on any clients, I do plan to share what I learn on this account. So if you care about your mental, physical, emotional, and/or spiritual health, you’ll probably find some tips on this feed to help you feel and look your best. Caption : As I continue to walk down this path of personal growth and development, becoming a functional medicine health coach was something that made perfect sense. I have been obsessed with prevention and doing my best to live in a state of optimum health ever since my pau pau (maternal Chinese grandmother) was diagnosed with cancer when I was 20 years old. INGREDIENTS: 1 can chickpeas (15oz), drained and rinsed 1/4 cup maple syrup 3/4 cup plant milk (I used flax milk for added protein) 1/3 cup peanut butter 3/4 cup flour (I used cassava flour, but you can use almond flour or oat flour as well, which are also gluten-free) 1 tsp baking powder 1/2 cup dark vegan chocolate chips — I used @enjoylifefoods 1 tbsp coconut oil 1 tbsp monk fruit sugar METHOD: Preheat oven to 350°F Place the first 4 ingredients in a blender/ food processor and blend until smooth. Caption : 🌈 Rainbow Rolls w/Peanut Sauce 🌈 (GF Vegan) Taste the rainbow means something completely different as an adult 😉 These rainbow rice paper rolls are so easy to make (the tofu is the only cooking required), plus they’e light and delicious, making them the perfect summer snack or light lunch. You can customize them to your liking, but here’s what I used: INGREDIENTS: – Rice Paper (5-8) – Kelp Noodles (I added blue spirulina to turn them blue) – 1 Avocado – 1 Tomato – 1 Mango – 1/2 English Cucumber – 1/4 Purple Cabbage – 14 oz Extra Firm Tofu – 1 bunch of basil and/or mint leaves TOFU MARINADE: – 1 tbsp soy sauce – 1 tsp rice vinegar – 1/2 tsp garlic powder – 1 tsp maple syrup PEANUT SAUCE – 2 tbsp peanut butter – 1 tbsp soy sauce – 1 tbsp rice vinegar – 2 tsp maple syrup – 1 tsp gochujang 🔹 Kelp Noodles: soak them in lemon baking soda to soften. Then rinse under water. Caption : Sometimes the only thing you can change is your mindset. But many times, that’s the most powerful thing you can change because it truly changes everything. I promise, if you shift your focus on everything that’s going right, instead of everything that’s going wrong, everything will change. As many of you know, I’m studying to become a functional medicine health coach (graduating this August!). One of the many tools coaches use to help guide their clients towards optimum health is positive psychology. While traditional psychology focuses on deficits, trauma, dysfunction and psychological issues, positive psychology focuses on the positive aspects of life and human potential. It emphasizes well being, the presence of positive emotions, strengths/virtues and meaning/purpose. Earlier this year, I was struggling with some personal stuff and felt like I was drowning in a puddle. Once I shifted my focus on everything that was going right in my life, instead of focusing on everything that was going wrong…everything changed. Caption : RECIPE ⬇️ 3-Ingredient Bread Plus, it’s dairy-free, egg-free and you can make it GF! * 3 Cups Einkorn Flour (or use GF Baking Flour to make it 100% gluten-free; see notes) * 2 Tsp Instant Yeast * 1 Tsp Salt Add: 1 ½ Cups Warm Water INSTRUCTIONS 1. Combine flour, instant yeast, and salt in a bowl 2. Add 1 ½ cups warm water and mix well until the flour is combined. Once your dough is sticky, cover it and allow it to rise in a warm place for about 2-3 hours. 3. Once the dough has risen, place it on a floured surface and shape it into a round loaf – you can fold it a couple times, but do not knead it! You’ll loose the air bubbles! 4. Preheat oven to 450F. Place a baking sheet or Dutch oven inside and leave it in there for 15 minutes. 5. Place your loaf on a piece of parchment paper, then transfer it to your heated baking dish or Dutch oven. 6. Bake for 30 minutes covered in the Dutch oven (you can add some ice cubes under the parchment paper to create some steam). Then remove the top and continue baking for 12-18 minutes. If you’re using a baking sheet with a water bath; fill the tray with boiling water in the oven and place it under your bread. This will create some steam (the added moisture prevents the dough from drying out before it has time to rise. It also helps create a thin, chewy and shiny crust). Note: My husband has a gluten intolerance, so I originally made this bread with GF Baking Flour from @bobsredmill — it was good, but a little dense as the GF flour is made from rice. This time around, I tried the same recipe with Einkorn Flour, which contains gluten, however, it’s different from modern wheat since it only contains 14 chromosomes and modern wheat typically contains 42 chromosomes. Since the structure is different and the proteins are smaller, Einkorn wheat is easier to digest. Many people with non-Celiac gluten sensitivity (like my husband), can digest Einkorn wheat without any issues. However, depending on the severity of your intolerance, it may or may not be an option for you. Caption : It’s the end of May and the end of Mental Health Awareness Month, so I thought I’d take a moment to share a few things I never really talk about on this feed. 1️⃣ I struggled with depression, anxiety and extremely low self esteem as a teenager which led to self-harm, panic attacks and a decades long eating disorder. 2️⃣ After being diagnosed with clinical depression and anxiety in my 20s, I was put on medication (SSRI). 3️⃣ After years of DBT (Dialectical Behavior Therapy, talk therapy for people who experience emotions very intensely), I weaned myself off of the medication. 4️⃣ Today, I’m still in therapy, but I have a healthy relationship with myself and food. I am also much better at regulating my emotions and practice mindfulness techniques to manage my stress and negative inner dialogue. Caption : It’s the end of May and the end of Mental Health Awareness Month, so I thought I’d take a moment to share a few things I never really talk about on this feed. 1️⃣ I struggled with depression, anxiety and extremely low self esteem as a teenager which led to self-harm, panic attacks and a decades long eating disorder. 2️⃣ After being diagnosed with clinical depression and anxiety in my 20s, I was put on medication (SSRI). 3️⃣ After years of DBT (Dialectical Behavior Therapy, talk therapy for people who experience emotions very intensely), I weaned myself off of the medication. 4️⃣ Today, I’m still in therapy, but I have a healthy relationship with myself and food. I am also much better at regulating my emotions and practice mindfulness techniques to manage my stress and negative inner dialogue. While I don’t know the exact reason why I struggled with a mental health condition for most of my life, I do know that childhood trauma (i.e., childhood abuse, neglect, and household dysfunction) most likely contributed to it. One day I’ll share details of my experience, but for now, I’ll talk about its impact ⬇️ Childhood trauma is prevalent in our society and can negatively affect us as adults. The ACE Study (Adverse Childhood Experiences) found a direct link between childhood trauma and adult onset of chronic disease and other negative health issues. The study found that nearly two thirds of U.S. adults reported at least one ACE, and approximately 1 in 6 U.S. adults reported 4 ACEs. Females and several racial and ethnic minority groups were at greater risk for experiencing 4 ACEs, which can lead to a much higher risk of: physical health issues, depression, substance abuse, dementia and Alzheimer’s. People with unresolved childhood trauma tend to have an unregulated sympathetic nervous system; they are quicker to activate and get into a state of fight or flight. Triggers can be anything from a word, an image or even a smell. Caption : RECIPE ⬇️ High Protein Chocolate Pudding – 14oz silken tofu – 10 dates – 1/2 cup cocoa powder – 1 cup coconut milk – 1/2 avocado (trust me, you won’t taste it, but it makes it even more creamy) Remember those chocolate pudding cups you used to eat as a kid? Yeah, me too. I loved finding them in my lunchbox as a tiny tot, but nowadays, I would never eat the highly processed sweet snack that’s full of dairy and cane sugar. However, since my sweet tooth hasn’t gone away, I blended up a homemade version with healthier ingredients that still curbs my chocolate craving and gives me a boost of protein thanks to the tofu. If you’re new to the tofu game, welcome! It’s an incredibly versatile and tasty plant based protein source. Being that I’m half Chinese, it was a staple at our house as it’s a common ingredient in Chinese cooking – used in both savory and sweet dishes. My favorite dessert as a kid was something called, Tau Foo Fah, which is soybean pudding…it’s silken tofu in sweet soup with a touch of ginger. Caption : I ❤️ NY but here are 3 things I REALLY loved this time around: 📍 @elevenmadisonpark This is a 3-star Michelin restaurant that’s vegan, but trust me, you will not miss the meat! My husband is not vegan and after dinner, he said, “I can’t wait to come back!” We loved all of the plant-based fare and also loved how chef Daniel Humm stopped by each table to say hello. And, the granola they gift you at the end of the meal is delish 🌱 📍 Cabaret @kitkatclubnyc with Eddie Redmayne The Academy and Tony award winner is amazing as the emcee! I loved the revival of this classic. The theater was redesigned so it feels almost like an immersive experience. Sidenote – we were two minutes late (my fault 🙊), so we stood in the lobby watching the monitor for the first 15 minutes before sitting down inside and as we stood there, Redmayne HIMSELF came up to us and said hello! He remained in character and said something funny about being late and commented on our outfits before running backstage. Sorry, but not sorry we were late @luismstrohmeier 😉 📍 @baccarathotels This hotel is so beautiful and even if you don’t stay here, grab a drink at the bar. Caption : RECIPE ⬇️ GF, Grain-Free, Dairy-Free Chocolate Chip Cookies INGREDIENTS: – 3 very ripe bananas – 1/3 cup soy milk (or any plant-based milk) – 1/2 cup chocolate chips – 1/2 cup coconut flour (or a GF flour of your choice) – 1/2 teaspoon baking powder – 1 Tbsp Ground Flaxseed – 1 Tbsp Ground Chia Seed METHOD: – Preheat the oven to 350°F – Peel bananas and mash them in a mixing bowl. – Add the milk, flour, and baking powder and stir to combine. – Add the chocolate chips, ground flaxseed and ground chia seed powder and fold into batter. – Use a small ice cream scoop to divide into small balls and place eon cookie sheet. Caption : RECIPE ⬇️ Copycat Purely Elizabeth Granola Chia egg (1 tbsp chia seeds 2 tbsp water) 1/3 cup coconut oil 1/4 cup monkfruit sweetener 1/4 cup maple syrup 1 tsp vanilla 2 cups gluten free oats 1/2 cup uncooked quinoa 1/4 cup flaxseed 1/4 cup raw sunflower seeds 3 tbsp chia seeds Lots of cinnamon Method: – Make chia egg and set aside (1 tbsp chia seeds 2 tbsp water) – Combine oats and quinoa in a large bowl. Blend 1/2 of the mixture until it turns into flour.
