Thank you for alllllll your beautiful birthday wishes!! 37 is sure to be a GREAT year! As I get older I’m trying to learn the importance of leaning into who I am, unapologetically, let go of what doesn’t serve me and remind myself the power of being surrounded by people that make you feel treasured, loved, appreciated and valued. I have a lot more self learning and loving to discover and I’m here for it! ❤️
Laura Vitale Instagram - In this house, we keep recipe traditions alive especially around the holidays. Artichokes are alwaysssssssss on the table at Easter, either boiled (or steamed) or stuffed (and most of the time both) and they are so sensational you can’t even imagine!! I don’t really measure the filling (but i hope to shoot it for you in depth this week if time allows because I make them all spring long!!) breadcrumbs , cheese, garlic, parsley, lots of oil and good pinch of salt. Cook low and slow in enough water and to come up half way and a good drizzle of oil and healthy pinch of salt. Keep topping off the water to keep it at that halfway mark, cook about an hour and if you’d like (and I recommend) broil for a few minutes. Serve with some of the brothy water drizzled over the top and live your best life one bite at a time babes 😍
Laura Vitale Instagram - 25 years ago on this very day, late afternoon to be exact, I arrived in America, and as they say, the rest is History. Moving as a fresh 12 year old (almost a month to the day after I turned 12) to another country where you don’t know anything and barely anyone is no small task. But if you know me in real life you know I’m tough, very tough, very determined and have no patience for excuses. The road wasn’t easy, it was like the backroads of Naples, bumpy and full of potholes holes but if the last 25 years have taught me anything is that life is what you make it, your mindset will make or break you. I’ve worked hard for what seems like my whole life, wasn’t always easy but the end was worth it. I know, deeply in my heart of hearts that I was meant to go through all of that, to lead me here, with a strong backbone and even stronger mindset. It’s those tough years that allow me to be so appreciative of my life, love what’s in my 4 walls so deeply and remind myself every day that sacrifices lead to beautiful destinations. ❤️

Laura Vitale Instagram - Buongiorno!!! Yall this is MOUTHWATERING!!! Honestly I could skip the turkey and make this instead and everyone would love it (but I won’t don’t worry lol) it’s perfect for a small gathering and if you’re on a budget. I used 6lb of leg quarters for under 7$!! here and each one gets cut in half so that’s serving 8 people. Low and slow for a while then increasing the heat for that burnished brown skin. It was sensational!!! I strain and separate the drippings, discard the fat (I actually like to use the chicken fat instead of butter to make a rue) and I used 2 Tbsp of fat and 2tbsp of flour for the 2 cups of drippings and y’all, it was so good Joe won’t stop talking about it!! I’ll be making this for many many future dinners and gatherings ahead! #lvturkeyday2023
Laura Vitale Instagram - Today is the 15th year anniversary of Laura in the kitchen.. FIFTEEN!!!!! I can’t even believe it, some days it feels like a lifetime and some days it feels like we just got started. I was 23, a newlywed and really only ever cooked for my friend and family, I hated having my photos taken and I had NEVER been in front of camera filming anything so it was a new world and to be honest, it was something I didn’t think would work or I’d be very good at but little did I know, it would completely change my life. The growth both professionally (I mean just take a look at those poorly filmed first hundred videos) and personally have been incredible, every dream I wanted to reach so far as happened, from morning shows, to hosting my own TV programs, radio shows, podcast, cookbooks and everything in between, it’s been such an incredible journey and one I’ll always be so thankful for! Although in many ways I feel defeated keeping up with the new, the trending, the new platforms, falling behind so many others, in other ways I feel proud, proud I’ve never let any of those fears hold me back, constantly bettering myself and my content and always striving to reach new highs while never compromising myself and my authenticity. Today might mark 15 years but babes, I’ve only just begun! We have a ways to go together and many more dreams to reach, so what do you say, you with me for the ride?!! I can’t do it without you, and there will never be enough words to describe my gratitude for you❤️Your unwavering support, kindness and motivating words are the reason all these dreams became reality and that will never be lost on me❤️ I’m forever In your debt and hope to always make you proud and help you feed those you love with joy! ❤️

Laura Vitale Instagram - I just don’t think you can get better on a cold winter day than a slice of warm scented cinnamon orange coffee cake and a fresh coffee. The house smells cozy, it feels inviting and you have what you need to warm yourself up in an instant! Coffee cake recipe adapted from my very first coffee cake shared on LITK, still so yum! Ingredients listed below!

1 cup of softened butter
1 cup of sugar
Zest of 1 medium orange or 2 clementines
2 eggs
2 tsp of vanilla
2 cups of all purpose flour
2 tsp of baking powder
1/4 tsp of salt
1.5 tsp of cinnamon
3/4 cup of milk
1/4 cup of freshly squeezed orange juice

For the topping:
1/4 cup of brown sugar
3 tbsp of flour
1.5 tbsp of cold butter

Bake in a 9x13 or small Bundt pan at 350 for 45 min!

B) it’s your reminder that if you have good bread in the freezer to thaw, you can make this and suddenly you’re dipping and eating and chatting away with a friend and life is better.
C) It’s your reminder that this is a perfectly suitable afternoon snack if your heart is longing for it such as mine was. The best bread oil dip I promise!! Amounts down below but as always, tailor to your preferences! It’s addictive tho so don’t say I didn’t warn ya! 
1/2 cup of olive oil (not the super strong stuff)
1 tsp of Italian seasoning 
1/2 tsp (or more) of hot pepper flakes 
1 tbsp of chopped parsley 
Pinch of salt and pepper 
1-2 cloves of garlic, minced of grated 
2-3 tbsp of freshly grated parm
Drizzle of good thick balsamic, about 1 tbsp 
1 good appetite 😜

This year we had some other important things that took precedence so canning 300 jars of sauce wasn’t in the cards but it’s still something we will treasure and do for years to come! Laura Vitale Instagram - These one pan crispy potatoes were the potato winner of 2022 and I simply couldn’t resist sharing them again because they are so unbelievably good and easy!! Add baby potatoes in a deep skillet and cover with water (about half an inch above the potatoes) add a generous glug of olive oil, about 1/4 cup, and a hefty pinch of salt, then bring to a boil, once the water is reduced by half, add cloves of garlic fresh herbs and give them a gentle squeeze then let the magic of cooking do what it does, the water will evaporate and the oil will crisp them up to perfection, make sure you flip them around to get evenly crisp. Serve with an extra grating of parm and indulge 😘

Sunday pasta day no matter whattttt in this house! This creamy gnocchi with blush sauce, sun dried tomatoes, burrata and crispy prosciutto is the stuff of dreams!
Laura Vitale Instagram - You know I’m not typically one for crafty foods, I have no patience and don’t find the excitement in them but this was easy enough and honestly, super cute and so doable! I layer brie with some pumpkin butter, wrapped all in puff pastry (the kitchen twine is to help with the shape) brush with egg wash, bake at 400 for like 20ish min the. Allow to cool a few minutes, then remove the twine, add a cinnamon stick in the center and dive in!

It’s so good it’s unreal truly. I poured mine in an empty can I had but it works perfectly in a lightly greased mason jar. It’s a 10/10, must have!! Laura Vitale Instagram - I’m no southerner (which I know make the best cornbread) but I do know good food or at least, I think I do 😝 but you’re going to have to trust me when I tell you this jalapeño cheddar cornbread is a must with your chilis (more on that tomorrow!) and stews all fall and winter long. Its darn easy too, maybe too easy? Coated in butter and a drizzle of honey while it’s still hot and sizzling so they honey and butter slowly drip into the cornbread and omgggg you’re just not at all ready!! The cornbread recipe is the same one I shared like 10 years ago (do we need an in-depth redo???) and I added cheddar and jalapeños to it and cooked it the same way. Laura Vitale Instagram - She is the moment yall 😮‍💨 my cranberry mojitos are the stuff of seasonal sparkly dreams!! Start with a simple syrup, then for each drink I muddle together the juice of half of a lime, 2 tbsp of simple syrup (or more of less depending on your preference) and a few mint leaves, then add a shot (or two I’m not driving nor judging ) of white rum, couple shots of cranberry juice and the juice of 1/2 an orange. Shake with some ice then pour into rimmed glasses and top with some fizzy flavored water of choice. It is sensational and you will love ittttt!!!!

Laura Vitale Instagram - Y’all have you whipped up some brie and topped it with unbelievably crispy sweet sticky rosemary infused bacon and drizzled with chili oil and kissed by a touch of honey?!!! No?!!! WHAT ARE YOU WATING FORRRRR?! Seriously though, it’s sublime and so easy!! Whip up some brie in a high powered food processor with a couple tbsp of milk (don’t use this little one like I did because I needed to switch to my big powerful one) and whiz it up until it’s creamy, smooth and decadent. Set it in the fridge for a few min while you bake the bacon. Add chopped bacon to a little oven safe dish, add about a tbsp or two of maple syrup (I used about 6oz of bacon for this batch) a good sprinkle of bbq seasoning (I buy mine) or any seasoning you like along with a little fresh rosemary and bake at 375 about 15ish min or until crispy. Plate the Brie in a shallow bowl, top with the crispy bacon then drizzle some chili oil (I used TJ brand) and a little drizzle of honey and served it with crackers. MY LAWDDDSDDDD ITS SENSATIONAL!!! Must make!!

It’s so good, the cake is spongy, lemony and so easy and the dip is made from 2 basic things (sounds weird I know but please don’t knock it till you try it and then thank me later) it’s a great no fuss way to end a meal on a high note and the cake itself is just fantastic by itself (I make it pretty much weekly) dunked into coffee or with limoncello 😍kids love it too, Mia’s fav cake ever!!! It’s a busy season of life for most of us and I don’t know about you but I come to really rely on yummy one pan dishes that deliver in both flavor and ease. This one pot creamy chicken and rice is such a fav, my sister often makes it for herself for meal prep and she says it reheats really well (if you’re curious in that sort of thing) it’s just so yum, you can lighten it by using all stock and chicken breast but trust me, you’ll be missing that creaminess and richness (but I like to give you options) serve by itself or with some roasted or steamed veg for a really low effort but high impact dinner with the fam!

I need you to picture this because maybe I’m boring as heck but just imagine a 62 degree day, a pot of soup simmering away, your favorite candle lit in the entryway, afternoon coffee simmering and as dinner time gets closer, you whip up a batch of flaky buttery biscuits that can double as a soup accompaniment or breakfast with a shmear of butter and jam (I would keep them in the Fridge already formed in a closed container and bake them fresh in the morning, it’s as easy as opening up a can but oh so much better!) I know someone’s grandma makes better biscuits (because any mom and grandma’s cooking will always always always be better than ours) but these are dang on delish! Now doesn’t that sound like the answer to a perfect afternoon that washes your stress away? It sure does for me❤️ recipe on my site and linked in bio! 😘

Laura Vitale Instagram - If you want to make the best, fool proof, fall apart tender ribs, this is your recipe and couldn’t be easier just follow my method. Picture this, dry rubbed and refrigerated (tightly sealed in foil) for a minimum of 4 hours or up to 24 (I do 24) then slowly roasted at 300 degrees for 2.5 hours, take out of the oven, allow to sit about 20 minutes while you preheat your grill. Fill a smoking box with some chips (you don’t have to soak these particular ones I use) and place that smoking box directly on the flame on one side of the grill (you won’t be grilling them directly over that smoking box) once the grill is preheated to medium heat (I like right around 400) and the chips are smoking, place the ribs on the grill (again, not directly over the spot with the chips) take the drippings from the foil or pan and add them to a bowl with some bbq sauce, mix and start brushing this mixture over the ribs (the top sort of “meat” side of the ribs) and brush every 10 minutes for 30 minutes total or until the bbq sauce has caramelized over the top of the ribs and the meat reaches a temp of over 210 degrees. This should take about 30 minutes which is the exact amount of time the chips will burn so if your temp isn’t there yet after 30 minutes, carefully add more smoking chips to the box and continue to smoke/grill them until it does. I don’t flip my ribs because I want to keep the meat side really juicy and the bottom caramelizes perfectly leaving you with nibbles of meat that are slightly chewy (in a good way) and addictively sweet. Ingredient breakdown is per rack of baby back ribs so adjust accordingly. This recipe is as easy to make for 4 as it is for 30 because you’re just adding more racks and adjusting the cooking time slightly but no harder process. Now make them for your Labor Day weekend and be prepared to be told these are the best ribs anyone has ever had! Serve with bbq classics

Per rack of baby backs (make sure you pull out the membrane so you don’t get chewy unpleasant bits )
3 tbsp of yellow mustard
1/4 cup of Dry BBQ seasoning blend 
2/3 cup of your fav BBQ sauce

So crunchy, salty and peppery, literally the best thing you can make with them and i promise you, even the pickiest eaters will give these a try! I simply toss brussel sprouts with olive oil, salt, pepper and some garlic and herb seasoning, place them cut side down on a baking sheet liner with parchment and generously covered in freshly grated parm, pop them in the oven at 400 for 20ish min and when they come out, peel them from the baking sheet, dowse with more parm and oh so much pepper! Laura Vitale Instagram - This sausage and spinach pasta in a luscious spicy cream sauce is one of the best dishes I’ve eaten all summer! It has it all, texture, balance and the creaminess is so good! You can sub mascarpone for the cream if you like or even ricotta! It’s so yum!  Recipe below! 

2 tbsp olive oil 
8oz of sausage out of the casing (I did half sweet and half spicy)
2 shallots, sliced 
3 cloves of garlic, minced 
Tap of Calabrian chilis or pinch of hot pepper flakes 
4 tbsp of tomato paste 
About 1 cup of starchy cooking water 
Handful of washed baby spinach 
1/2 cup of heavy cream
Pinch of Italian seasoning 
Plenty of parm
Salt and pepper to taste 
12os of big rigatoni or paccheri

Laura Vitale Instagram - Peanut butter blossoms of dreams!! I have no used any other nut butters or substituted any ingredient, these are the only way I’ve ever made them so if you tailor the recipe know they might not come out the same. It’s also crucial you use a creamy peanut butter (like skippy) and not a natural peanut butter because the end result is not as good. If you plan on freezing the dough,just leave the balls of dough on the baking sheet in the freezer for a couple hours then place then in a large zip lock bag and keep frozen until needed, when you go to bake them bake them at 375 for 10 minutes (you’re just baking them 2 extra minutes) and they are perfection!! 

Yields about 3 dozen 
1/2 cup (one stick) of unsalted butter, softened 
1/2 cup of creamy peanut butter
1/2 cup of granulated sugar 
1/2 cup of brown sugar 
2 tsp of vanilla
2 large eggs 
2 cups of all purpose flour 
1/2 tsp of salt
1 tsp of baking soda

Laura Vitale Instagram - These should come with a warning that says “warning, you won’t be able to stop eating them” they are sensational I tell you!! To make the dough in advance, scoop out onto a baking sheet and freeze, when ready to bake, allow them to come to room temperature for about 30 minutes then add 2 minutes of baking time to your total time (should be 10 minutes ) and they are perfect! I have not used a hot chocolate replacement so can’t advise on that. 

Yields about 4 dozen
1 cup of unsalted butter, softened at room temp 
1/2 cup of brown sugar
1/2 cup of granulated sugar 
2 eggs
2 tsp of vanilla
3 cups of all purpose flour
1 tsp of baking soda
1/2 tsp of salt
4 packs of Swiss miss hot chocolate (the milk chocolate)
2 tbsp of instant vanilla pudding mix 
1 cup of mallow bits 
1 cup of semisweet chocolate chips 
2/3 cup of chopped (well chopped) semisweet chocolate bar, I use giardelli brand 

Scoop with a cookie scoop and bake on a parchment paper lined baking sheet at 375 for 8 minutes on the lower third and upper third of your oven!

I often add ground pork (about half a pound cooked) or seared tofu and they are absolutely SENSATIONAL!!!!!! You have to give them a try, couldn’t be easier! Such a fav, you MUST serve them alongside mashed potatoes or buttered noodles to absorb all that luscious gravy and you’ll get a standing ovation I swear!  Make them!!!

Season some chicken with some garlic and herb then stuff with a little flavored spreadable cheese situation, wrap it in a prosciutto (I also did 2 pancetta wrapped) blanket, surround with tomatoes, peppers, garlic (I would have added shallots and olives but was out) drizzle with olive oil and bake at 425 for like 40 minutes. Some of the cheese oozes out, mixes with the juicy veg and creates its own sauce. I served mine with angel hair (not a fav of mine but joe loves it) tossed in that sauce with a tbsp of added butter and a handful of cheese and y’all I just about needed to be resuscitated !!!! It was SOOOOOO good!  You must must give it a try!

Here’s the thing, potatoes for me are their own food group and I’m pretty sure I’ve never had a potato dish I didn’t like😂 these melting potatoes are simply sensational!! Cut the potatoes into thick disks, Pat them dry really well the heavily salt and pepper them and sear them in a mix of olive oil and butter. Once seated on both sides, add some cracked garlic cloves and some rosemary (or thyme) along with enough stock to come about half way up the potato and throw them in a 400 degree oven until cooked through, should only take 15 min. They are simply divine!! #lvturkeyday2023

Laura Vitale Instagram - Buongiorno!! These apple turnovers are unreal but oh so easy!! I simply peel and dice about 5 apples, sautee them in a couple tablespoons of butter and 1/3 cup of brown sugar with a splash of vanilla and a little orange zest, touch of cinnamon and couple tbsp of flour for about 5ish minutes. Then I let them cool, roll out a couple sheets of thawed puff pastry, cut each sheet into 4 squares, dollop a little apple mixture in each one, fold over into a triangle, seal, then pierce the top a little for the steam to escape, brush a little egg wash and sprinkle a touch of sugar. Bake at 400 for 20ish minutes or until golden brown. Serve as is or if you dare, top with a scoop of ice cream and a drizzle of salted caramel.  GOODBYEEE!! 😍😍

No recipe obviously just a foam tree wrapped well with plastic wrap and then stab a ton of toothpicks (I find it easier to break them in half) pierce them all around and then attach whatever your heart desires to it. Stay away from oily things as it would make this so messy but it’s just such a show stopper especially if you wanted to make it as a centerpiece to a big charcuterie board. I just love itttt!!!

Laura Vitale Instagram - With temps as hot as they have been, ya gotta do what the Italians do and just make platters of sunkissed tomatoes and mozz, in this case we are doing a little dressing for the tomatoes and using burrata ( since I can’t get dreamy buffalo mozz when I’m home). Let me tell you, this, maybe a plate of good salami, soppressata or prosciutto, good crusty bread and a chilled glass of wine is truly perfect and can be lunch or dinner without much else. Laura Vitale Instagram - Buongiorno! Let this be a PSA that you can turn boneless pork chops (even bone in ones) into crispy cutlets and they are freaking delish!!!!! Food prices are high so save a dollar where you can, I found these pork chops on sale for $5.25 (for 8 of them) this week and everyone wanted cutlets so I just did cutlets with these instead and nobody even knew 🤣 the key is to pound them thinly and trim off any thick pieces of fat, but once pounded, breaded and fried trust me, they go down so well! I’m running back to the store to get a few more packs to stick in the freezer so wish me luck!

I didn’t even use my mixer for this, I just pulled it together into a dough (it doesn’t have to be smooth) and truly, it’s just always perfect. It was sensational!!! I strain and separate the drippings, discard the fat (I actually like to use the chicken fat instead of butter to make a rue) and I used 2 Tbsp of fat and 2tbsp of flour for the 2 cups of drippings and y’all, it was so good Joe won’t stop talking about it!! I’ll be making this for many many future dinners and gatherings ahead! #lvturkeyday2023

The house smells cozy, it feels inviting and you have what you need to warm yourself up in an instant! Coffee cake recipe adapted from my very first coffee cake shared on LITK, still so yum! Ingredients listed below!

1 cup of softened butter
1 cup of sugar
Zest of 1 medium orange or 2 clementines
2 eggs
2 tsp of vanilla
2 cups of all purpose flour
2 tsp of baking powder
1/4 tsp of salt
1.5 tsp of cinnamon
3/4 cup of milk
1/4 cup of freshly squeezed orange juice

For the topping:
1/4 cup of brown sugar
3 tbsp of flour
1.5 tbsp of cold butter

Bake in a 9x13 or small Bundt pan at 350 for 45 min!

Start with a simple syrup, then for each drink I muddle together the juice of half of a lime, 2 tbsp of simple syrup (or more of less depending on your preference) and a few mint leaves, then add a shot (or two I’m not driving nor judging ) of white rum, couple shots of cranberry juice and the juice of 1/2 an orange. Shake with some ice then pour into rimmed glasses and top with some fizzy flavored water of choice. It is sensational and you will love ittttt!!!!

No?!!! WHAT ARE YOU WATING FORRRRR?! Seriously though, it’s sublime and so easy!! Picture this, dry rubbed and refrigerated (tightly sealed in foil) for a minimum of 4 hours or up to 24 (I do 24) then slowly roasted at 300 degrees for 2.5 hours, take out of the oven, allow to sit about 20 minutes while you preheat your grill. Fill a smoking box with some chips (you don’t have to soak these particular ones I use) and place that smoking box directly on the flame on one side of the grill (you won’t be grilling them directly over that smoking box) once the grill is preheated to medium heat (I like right around 400) and the chips are smoking, place the ribs on the grill (again, not directly over the spot with the chips) take the drippings from the foil or pan and add them to a bowl with some bbq sauce, mix and start brushing this mixture over the ribs (the top sort of “meat” side of the ribs) and brush every 10 minutes for 30 minutes total or until the bbq sauce has caramelized over the top of the ribs and the meat reaches a temp of over 210 degrees. This should take about 30 minutes which is the exact amount of time the chips will burn so if your temp isn’t there yet after 30 minutes, carefully add more smoking chips to the box and continue to smoke/grill them until it does. I don’t flip my ribs because I want to keep the meat side really juicy and the bottom caramelizes perfectly leaving you with nibbles of meat that are slightly chewy (in a good way) and addictively sweet. Ingredient breakdown is per rack of baby back ribs so adjust accordingly. This recipe is as easy to make for 4 as it is for 30 because you’re just adding more racks and adjusting the cooking time slightly but no harder process. Now make them for your Labor Day weekend and be prepared to be told these are the best ribs anyone has ever had! Serve with bbq classics

Per rack of baby backs (make sure you pull out the membrane so you don’t get chewy unpleasant bits )
3 tbsp of yellow mustard
1/4 cup of Dry BBQ seasoning blend 
2/3 cup of your fav BBQ sauce

2 tbsp olive oil 
8oz of sausage out of the casing (I did half sweet and half spicy)
2 shallots, sliced 
3 cloves of garlic, minced 
Tap of Calabrian chilis or pinch of hot pepper flakes 
4 tbsp of tomato paste 
About 1 cup of starchy cooking water 
Handful of washed baby spinach 
1/2 cup of heavy cream
Pinch of Italian seasoning 
Plenty of parm

I don’t think I’ve ever shared this but every year I make cookie boxes (and trays) to give away throughout the season (it’s always received with rave reviews) I tend to take a couple days, make many many many batches of cookie dough and mostly store them in the freezer and bake last minute when I need them (and some I make day of because they aren’t best frozen) and I mentioned it in stories and yall asked if I could share the list of treats going in my boxes this year so you can bake along with me!!! So it’s sort of becoming a virtual bake along at this point lol I should also mention that these are the cookies we just love and everyone else does too, they might not be cutout cookies perfectly decorated (those are so notttttttt my favs but I make them for Mia to decorate for an afternoon) but trust me, each one of these cookies are simply perfect beyond words. A couple of them are new and haven’t shared but the recipes are coming this week and next week (thumbprint cookies, angientti  and hot chocolate cookies) so if you want to bake along with us, make sure you watch my stories daily because I’ll be sharing my schedule and sharing a list of all the packing goodies to have on hand for gifting!
