Lidia Bastianich Instagram - Born in 1947, @lidiabastianich grew up on the peninsula of Istria which at the time was a region governed by the newly-formed communist Yugoslavia in the wake of WWII. By 1956, Lidia’s Italian parents decided they needed to flee.
 
Reserved for refugees seeking political asylum, the Risiera di San Sabba camp served as her family’s home for the next two years. As a ten-year-old, Lidia was separated from her father unsure if they would ever be reunited. The U.S. eventually opened up its borders to political refugees under the Eisenhower administration. Lidia’s family was one of the first to emigrate.
 
They landed in New York City — the same place where she would open up her first restaurant and establish herself as an award-winning host on @pbs, best-selling cookbook author and one of the most recognizable celebrity chefs in the country.

This year’s recipient of @televisionacad’s Lifetime Achievement Award, Lidia has spent her last 25 years on public television (12 with GBH) putting her signature nonna touch on programs like ā€œLidia’s Kitchenā€ and ā€œLidia Celebrates America.ā€

Lidia: ā€œI am who I am because of the opportunities that I received in the United States. I think it is the duty of the immigrant to be forever grateful and give back when they come into a comfortable position. This is what immigration should be all about.ā€

Lidia Bastianich Instagram - As simple a dish as this is, I have had requests for it in all my restaurants as far back as I can remember. I like the sauce a little feisty, so I’m generous with the crushed red pepper. You can add as much—or as little—as you like.  Often, restaurant chefs finish this dish by swirling butter into the sauce at the end. You can do the same or use olive oil to finish the sauce. Lidia Bastianich Instagram - Manicotti are a much-loved baked pasta in our family, but in this case I use crespelle instead of fresh pasta to envelop the ricotta stuffing, resulting in a deliciously lighter version.  Crespelle, Italian creĢ‚pes, are one of the most versatile recipes in the kitchen. You can use them shredded in soups, layered in lasagna, stuffed and rolled in manicotti, as I do here, or baked with vegetables and pesto - and if you add some sugar to the batter, you can make endless forms of dessert with them. I like to make a big batch of crespelle—once you get going, they are done in no time, and you can freeze or refrigerate the extras.  Link to full video and recipe on my bio. Buon Gusto! .

Lidia Bastianich Instagram - I love this dish with ripe, meaty Roma tomatoes, which can be found year round and really benefit from having their flavors concentrated by baking. These can be served warm or at room temperature, either as a side dish or as part of an antipasto buffet. When cold, they are marvelous cut and tossed in green salads, because baking brings out the true tomato taste. Roughly chopped, they make a great topping for a bruschetta. Lidia Bastianich Instagram - Zucchini is such a convenient and delicious vegetable. It is inexpensive, and you can find it year-round, although it is best in the summer. In this delicious and simple recipe, the zucchini is baked into a parmigiana but does not have the traditional frying step. I like using a large baking pan and making just one layer; this way, the zucchini will dry up more in the oven, and you will have more of the crispy cheese top, which everybody loves. Lidia Bastianich Instagram - I love this rich, creamy pasta dish, perfect for a cold, winter weekend - and it has an interesting history. Once, during my many years researching Italian recipes, I found a spinach dish that was attributed to Michelangelo. It contained raisins and pignoli along with the braised spinach. Lidia Bastianich Instagram - Marinated Meatballs - Everybody seems to love meatballs. Here is a different and tasty alternative to their normal red—sauce preparation. These veal or turkey meatballs are marinated in a tangy marinade of herbs and vinegar. They are good for buffet tables, picnics, or just to keep in the refrigerator for a snack. They make terrific sandwiches as well, and if you serve them with some mashed potatoes it becomes a meal.

Lidia Bastianich Instagram - Marinated Meatballs - Everybody seems to love meatballs. Here is a different and tasty alternative to their normal red—sauce preparation. These veal or turkey meatballs are marinated in a tangy marinade of herbs and vinegar. They are good for buffet tables, picnics, or just to keep in the refrigerator for a snack. They make terrific sandwiches as well, and if you serve them with some mashed potatoes it becomes a meal.

The recipe is easy to multiply, it keeps well, and, most importantly these days, it’s economical. Pesto doesn’t have to be made only with herbs - greens, such as baby kale or arugula, also work great. I like to combine them with one or two fresh herbs for a bright and balanced flavor. Lidia Bastianich Instagram - Potato and Egg Frico – a crispy Asiago cheese crust made with potatoes and eggs is always a winner at the brunch table.  From the Friuli region in Italy, frico is a traditional dish in which potatoes and cheese are baked together. My rendition makes a hearty breakfast or, served topped with salad, a great lunch. Cut in slices, it can be passed around at a cocktail party. It is a favorite breakfast dish when I have my family visiting. Reserved for refugees seeking political asylum, the Risiera di San Sabba camp served as her family’s home for the next two years. As a ten-year-old, Lidia was separated from her father unsure if they would ever be reunited. The U.S. eventually opened up its borders to political refugees under the Eisenhower administration. Lidia’s family was one of the first to emigrate.
 
They landed in New York City — the same place where she would open up her first restaurant and establish herself as an award-winning host on @pbs, best-selling cookbook author and one of the most recognizable celebrity chefs in the country.

This year’s recipient of @televisionacad’s Lifetime Achievement Award, Lidia has spent her last 25 years on public television (12 with GBH) putting her signature nonna touch on programs like ā€œLidia’s Kitchenā€ and ā€œLidia Celebrates America.ā€
