A bourbon summer cocktail?!🍹 Sign me up!! It’s Father’s Day this weekend and I’ll celebrate with my favorite @riverrootsbarrelco!!! This is so simple and so delicious… equal parts bourbon, Aperol, Amaro optional (if you want to make a paper plane) and lemon juice, shaken and served in a coup. Greek Easter is this Sunday… so you know we couldn’t forget the lamb. I like my lamb a little more on the medium side…. But you do you! Hope everyone enjoys…. 🍖 🇬🇷 ⬇️RECIPE BELOW! ⬇️ After I enjoy dinner with the family I’ll be tuning into #24in24 on @foodnetwork @streamonmax . Now that’s my kind of Sunday! Grilled Lamb Chops Serves 4 2 garlic cloves grated 2 tbl oregano Zest and juice of 1 lemon 2 tsp Dijon mustard ½ c extra virgin olive oil 12 bone in Lamb Chops Salt and pepper In a large bowl mix garlic, greek oregano, lemon juice and zest, oil and salt and pepper. Add the lamb chops and let marinate for 1-2 hours. Remove from the fridge 30 minutes ahead of cooking. Fire up the grill, piling coals on one half of grill, leaving one side cool. Sprinkle lamb with greek oregano and sea salt before placing on the hot side of the grill. Reserve the marinade for basting the chops. Grill approx. 3 minutes per side. I recommend cooking to MR/Med. Let rest 5 minutes and sprinkle with sea salt before serving.

This Sunday is Greek Easter so I’m bringing back my mom’s spanakopita recipe. A classic that is always a welcome sight on any table. 🥬🇬🇷 Enjoy!! You know what is also on Sunday? The risk taking and simplicity challenge on 24 in 24. If you haven’t caught up on all the episodes they’re available now! #24in24 Last Chef Standing Sundays 8|7c > @foodnetwork @streamonmax Spanakopita Yield: 15 pieces Ingredients ¼ c olive oil 1# fresh spinach leaves ½ tbl kosher salt ½ c thinly sliced green onion 2 cloves minced garlic ¼ c finely chopped parsley ¼ c finely chopped dill 3 c crumbled Greek feta 4 whole eggs, beaten ½ c of pine nuts (optional) 2 tbl olive oil 1 tsp kosher salt Pinch of freshly grated nutmeg 1 pound #2 phyllo sheets 1 c unsalted butter, melted Directions Sweat the spinach in 2 tbl of olive oil until softened and wilted. Season with pinch of salt. Pour into a strainer and allow to strain for 30-90 minutes. Place into a tea towel and wring as much excess moisture as possible. (Yield: ¾ # of pressed spinach.) Roughly chop and add to a mixing bowl. Add all remaining ingredients to the spinach except the phyllo and butter and mix to combine. Lay out 1 sheet of phyllo and brush with melted butter. Place another layer of phyllo on top and brush with butter. Fold in half lengthwise and brush with butter. Place ½ c of spinach filling on the phyllo, closest to you. Begin folding like a football, brushing butter in between each fold. Place seam side down on a parchment lined sheet tray and bake at 350* for 15 minutes, until golden brown and crisp. Enjoy.

Gearing up for another episode this week of #24in24 last chef standing. This week we’re testing our chefs’ skills in risk taking and simplicity … who is tuning in? 🔥

See pound cake recipe below! 👇 RICOTTA CORNMEAL POUNDCAKE Makes 1 loaf Ingredients 1 c flour 1 c finely ground yellow cornmeal 1 3/4 tsp. baking powder 1/2 tsp. salt 10 Tbl. unsalted butter, softened 1 c sugar 2 large eggs 1 large egg yolk 1/4 c Greek yogurt Zest of 1 orange 1 c whole milk ricotta 2 tsp. vanilla Whipped cream to serve Directions Pre heat oven to 325 . Line the bottom of a loaf pan with parchment then spray the pan with cooking spray. Whisk together the first 4 ingredients and set aside. In the bowl of a mixer fitted with a paddle attachment add the butter and sugar and cream until pale and fluffy, 5 minutes. Add the eggs and egg yolk and mix to fully incorporate. Add the Greek yogurt, orange zest and dry ingredients and mix to combine, scraping the sides and bottom of the bowl. Lastly add the ricotta and vanilla and mix to combine. Pour the batter into the prepared pan and bake at 325* for 50- 60 minutes, or until set and a toothpick inserted into the center comes out clean. Slice and serve with whipped cream and your choice of fruit.
