Avgolemono Soup
Serves 6-8
For the broth:
1 whole chicken
2 bay leaves
1.5 gal water
For the Soup:
3 eggs
Juice and zest of 3 lemons
2 tbl Wondra flour
ÂĽ c fresh dill
1 lb. cooked orzo pasta
Salt and pepper to taste
Place whole chicken and bay leaves in a pot with 1.5 gallons of water. Bring to a simmer and cook for 1.5 hours.
Strain broth, save both the chicken and the broth. Place broth back into the pot and bring to a simmer.
Whisk the eggs, lemon juice, zest, and the flour in a bowl until smooth.
Temper the lemon and egg mixture with 1 cup of the hot broth. Slowly whisk the egg mixture into the pot of simmering broth.
Allow to simmer for 10 minutes. Add ÂĽ cup of chopped fresh dill.
Meanwhile, pull the meat off the chicken.
Place one handful of cooked orzo and one handful of pulled chicken in a bowl. Cover with hot broth, season with salt and pepper. Enjoy. | Posted on 15/Mar/2024 19:15:52
