Ming Tsai Instagram – Get ready to fire up the grill and treat yourself to Chef @Mingtsai’s mouthwatering Salmon with Orange Soy En Papillote recipe! 🔥🍊
INGREDIENTS
1 package Banana Leaves
12-16 oz Salmon, cut into 2 even pieces
1 cup cooked Couscous
1 cup Raw Spinach
1 bunch Thai Basil
2 Tbsp Sweet Soy Sauce
1 Orange, zest and juice into one bowl
EVOO
2 Tbsp scallion greens, sliced
Kosher salt and freshly ground pepper
INSTRUCTIONS
1) Cut banana leaves so you have 2 pieces about 18 inches in length and 12 inches in width, place on a dry surface with the long side facing you.
2) Season salmon with S&P on both sides.
3) Make Orange Glaze: mix zest, juice and sweet soy in a bowl
3) In the center of your banana leaves add ½ cup of couscous in a mound, hand rip ½ cup spinach on top of the couscous, and then add about 3 thai basil leaves. Top with your salmon, placing it so the long side is facing you. Spoon ½ the of Orange Glaze over salmon.
4) Fold in the right and left edge of the banana leaf over the salmon, then fold the top and bottom underneath. Creating a pouch (repeat for second piece of salmon).
5) Place on grill, close lid and grill for 15-17 minutes (thermometer should read 135-140 when finished).
6) Remove from grill and place on a plate.
7) To serve: carefully cut open your pouches with kitchen scissors. Top with the rest of the Orange Glaze, a drizzle of EVOO and scallion greens. ENJOY!
