Saransh Goila Instagram – My take on Mathura ke special Dubki Wale Aloo and Bedmi. There are different ways of making this classic but this is my favourite style for sure and I like to add mint and dhaniya to that little palak paste we make to get that chatpata green colour! Waise toh Mathura ka peda, lassi and chaat all is Delishaaas but these potatoes just hit different and are very nostalgic for me 🙂
Bedmi puri aur Dubki wale aloo
1/2 bunch Spinach leaves
A handful of Fresh coriander
A handful of Fresh mint (optional)
2 Green chilies
1 inch Ginger
1/2 tbsp Kasuri methi
1/2 inch Cinnamon stick
2 Cloves
2 Green cardamom
1 Black cardamom
A few black peppercorns
Blend everything well
1 tbsp Mustard seeds
A pinch of Hing
1 tsp Jeera
1 tsp Saunf
2 tsp Red chili powder
1/2 tsp Haldi powder
2 tsp Coriander powder
Mix everything well
Add the paste
Mix well
Shake the blender jar with some water
Add everything in
Mix well & cook for 10 minutes
200g Potatoes, boiled
Mix well
Add 2 cups water
Mix well
& bring to a boil
Cover & cook for 15 minutes on low flame
Add of tadka ghee, dried chilies, jeera & hing
Mix well
Add aamchur to taste
Anardana powder to taste
Mix well
For the bedmi puri
2 cups Whole wheat flour
Salt to taste
1 tsp Ajwain
2 tbsp Ghee
Mix everything well
Add water little by little
& form a semi stiff dough
For the filling
Roast 1 cup Urad dal
till golden brown
Blend into a coarse powder
1 tbsp Mustard oil
A pinch of hing
1 tsp Red chili powder
1/2 tsp Haldi powder
1 tsp Dhaniya powder
1 tsp Jeera
1 tsp Saunf
Roasted dal powder
Mix well
Add 1/4 cup water
Salt to taste
Mix well & cook till all the water is absorbed
Once cooled the mixture will become
crumbly
Portion out the dal filling
Stuff it in the atta
Roll it as desired
Fry till golden brown and puffy
Serve with the aloo
