One of the biggest decisions I made in my life.
Leaving everything that was mine & familiar to start all over again.
Fell in love with Manhattan. It gave me the power to bring Indian Cuisine & Culture to the World’s biggest platforms.
Some of the biggest highlights remain-
1. Selling food on the streets of NY.
2. Cooking at James Beard with my sister Radha behind me.
3. Radha’s Graduation from FIT.
4. Cooking for 4 American Presidents.
5. Working with Gordon Ramsay.
6. Working with my mentor-friend Eric Ripert
7. Serving more than 80 Million Meals from NY during pandemic.
8. Launching 41 books with the most varied subjects.
9. Winning a Michelin Star
10. Standing applause for THE LAST COLOR at United Nations Headquarters.

No words can express our gratitude for all the love you showered for Bungalow Opening Day. Having cooking for 40 years, I’ve never ever seen anything like this before. ❤️ We had more than 1000 people who came in pouring rain & freezing temperatures from around the U.S. From my heart I want to apologize for those who couldn’t dine with us. I’m so so sorry. We have a limited seating at the restaurant. Our reservations will open on Mar 25th (11 am). Today and tomorrow will be again first come first serve with limited seating. CTC pickle aka Carrot-Turnip-Cauliflower was one of the aromas of winters for me.
Every Punjabi home has their own version, but I love this recipe.
Tip-
1. Roasting cumin, fennel & mustards seeds is crucial for the smoky flavor.
2. Cooking ginger-garlic paste separately & then adding it to softened onions is a better technique.
3. Deglazing the pan with vinegar (I used apple cider vinegar for a little floral note)
4. No need to cook the vegetables. Just add them into the onion mixture & mix well. Cover & let it cook without heat. It helps in more crunchy texture.
5. Transfer it in a clean jar & let it sit in the Sun for at least 3 to 4 days (if you are patient enough). New York, New York

On Christmas Eve 2000, I landed in the queue outside 90 Lafayette Street, Bowery Mission (formerly known as New York Rescue Mission). The oldest homeless shelter in the U.S.
This was a low time of my life & in my mind between freezing New York & a lonely immigrant heart I had decided to leave New York for good.
Suddenly a woman hands me a blanket & wished me Merry Christmas. I went downstairs & had a Christmas feast & a few residents sang carols.
It felt like home.
I stayed there for a few weeks, worked in the kitchen & made a new family that uplifted my soul.
I got some catering orders of Dhoklas & it helped me stand on my feet.
So, every time I begin a new venture…I want to honor my favorite place, my first home in the city.

Today we had an amazing prayer dance to honor the land on which Bungalow is built.
The dance begins with Odissi’s trikhandi (three-fold) pranam seeking the blessings of Mother earth (the ancient ritual of bhoomi pranam), the gods, gurus and seniors.
Performances by Surati for Performing Arts choreographed and led by Founder and Artistic Director Rimli Roy.
Indian dance movements based on Odissi classical dance from the State of Orissa characterized by its subtle torso movements, asymmetrical stances like tribhangi made of three body bends and fluid wristwork.
Surati company dancers included Reba Browne, Jeevika Bhat, Tanvi Chandak and Annie Renita.

Today’s dance is Kuchipudi by iconic @kanikachaddagupta (a dear friend of Radha) & her adorable daughter Suhana Gupta.
Kuchipudi is a classical Indian dance known for its graceful movements and expressive storytelling. Originating from Andhra Pradesh, it combines dance, music, and drama, often drawing inspiration from Hindu mythology.
Today’s signature dish is Shrimp Balchao Cones which were inspired by cream puffs from India. (A childhood favorite gets a savory twist)
