Fancy whipping up a blooming delicious summery no bake pudding that is minimal effort, maximum taste?!? Look no further!!! Try this No Bake Eton Mess Cheesecake 🍓It is a beauty!!!!
No Bake Eton Mess Cheesecake
Ingredients
200g chocolate chip digestive biscuits
75g unsalted butter, melted
400g cream cheese
150g icing sugar
250ml double cream
1 teaspoon vanilla extract
3 tbsp smooth strawberry jam
To top
150g strawberries
Meringue kisses
150ml double cream
3 tbsp smooth strawberry jam
Method
Bash the biscuits up using a rolling pin. Pour into a bowl then add the melted butter and mix. Pour into an 8 inch loose bottom cake tin. Place in the freezer for 10 minutes.
Place the jam in the microwave for 10 seconds to loosen. In a bowl, whisk together the icing sugar and cream cheese. Pour the double cream and vanilla into another bowl and whisk to soft peaks then gently fold in 2 tablespoons of the strawberry jam. Fold together the cream cheese mixture with the whipped cream mixture until combined. Pour over the biscuit base then swirl through the remaining tablespoon of jam. Place in the fridge for a few hours or overnight to chill.
To finish, remove the cheesecake from the tin. Whip the double cream until stiff peaks then divide into 2 bowls and fold a tablespoon of the jam through one of them. Hull and chop the strawberries. Top the cheesecake with the whipped creams, chopped strawberries, meringue kisses then drizzle over the remaining jam.
