Ilean Almaguer Instagram – ‘Calabacitas’ by one of our incredible recipe contributors @ileanao 🤤

Calabacitas is a delicious plant-based Mexican dish packed with so many nutrients! The real star of this dish is zucchini as it contains many antioxidants, vitamins, water & lots of fiber to promote a healthy digestion ⭐️🥒

Ingredients:
3 medium Zucchinis/calabacitas
1 red pepper
3 medium tomatoes
Cilantro
1/4 onion 
1/2 cup corn
1/2 cup chick peas 
1/2 tbs avocado oil 
1/2 tsp smoked paprika 
1/4 tsp cumin
1/2 tsp coriander (optional) 
1/2 cup water 
Salt

Instructions:
1. Heat oil on a pan over medium heat.
2. Add onions. Sauté for 5 minutes or until onions become transparent.
3. Add tomato and red pepper stirring constantly for 3-4 minutes.
4. Season with smocked paprika, cumin and coriander.
5. Add water, zucchini, corn, cilantro, the chick peas and salt.
6. Mix well and allow everything to cook for about 5 minutes and bring to a simmer till the vegetables are tender.

Ilean Almaguer Instagram – Plant-based Pâté by @ileanao 🌱

Not only is this Pâté super easy to make, but it is the perfect plant-based dish to snack on on New Years Eve! 🎉

Ingredients:
– 250g mushrooms of choice
– 1 eggplant
– 1 small garlic 
– 1/4 cup walnuts
– 1 tbsp olive oil
– 1 can (250g) white beans 
– 5-6 sun-dried tomatoes
– Parsley
– 1-2 tbsp olive oil
– Salt and pepper

Instructions:
1. Chop mushrooms and the eggplant and place them on a baking tray
2. Add salt, drizzle with olive oil and roast for 35 minutes at 350 degrees Fahrenheit until browned. 
3. Blend all ingredients in a blender or food processor until smooth, transfer the mix to a nice container and enjoy!
**you can spread your paté on to bread or crackers.

Paté vegano

Ingredientes:
 – 250 g de champiñones a elección
 – 1 berenjena
 – 1 ajo pequeño
 – 1/4 taza de nueces
 – 1 cucharada de aceite de oliva
 – 1 lata (250g) de alubias blancas
 – 5-6 tomates secos
 – Perejil
 – 1-2 cucharadas de aceite de oliva
 – Sal y pimienta

Instrucciones:
1. Pica los champiñones y la berenjena y colócalos en una bandeja para horno
2. Agrega sal, rocía con aceite de oliva y hornea durante 35 minutos a 350 grados farenheit hasta que se dore.
3. Mezcla todos los ingredientes en una licuadora o procesadora de alimentos hasta que quede suave, transfiere la mezcla a un recipiente bonito y disfruta!
 *puedes untar tu paté sobre pan o galletas saladas.
