It has officially been a month since I got my new much-needed Koala mattress and I am loving it! Have you ever wanted to learn how to make TOFU in the Japanese countryside? 😍 I had a chance to visit Chino city in Nagano prefecture recently and learned how to make a local specialty called “Shimi” tofu, or FROZEN tofu, along with other “Shimi” specialities! 😍 Unable to produce vegetables in their icy winter climate, the people of Chino city adapted to produce naturally freeze-dried foods called “Shimi” that take advantage of the cold nights that allow foods to freeze, and the warm sunlight during the day that not only dries and preserves the foods, but also gives it a delightful new texture! 😋🙌🏼 I learned so much, ate so much and discovered a side of local Japan I hadn’t yet seen (or even tasted)! I joined my fellow @eatmeetjapan2021 Ambassadors, @bunnytokyo and @donnyjkimball the other day and embarked on a TOKYO FOOD ADVENTURE that started with learning to make Japanese “Amezaiku” candy sculptures and ended with our tummies full to the brim on Frank’s Ramen Tour where we got to try *6*(!) mini bowls of ramen in the Shibuya area! 😍🍜 Amezaiku was such a challenge because you have to finish sculpting your candy in under 3 minutes before the candy hardens! 😱 We were supposed to make bunnies but mine ended up looking more like a lamb in the end (far right). 😂 I also wholeheartedly recommend Frank’s @5amramen tour!! He is such a fun guide and he’ll teach you everything you never knew about ramen!
