Jock Zonfrillo Instagram - We had Isla’s first birthday party without her Papa.

Jock would have been up all night the day before, the first one out of bed in the morning. Menu planning for weeks. Then I would have fallen asleep on Jock’s chest after the party, talking through how it went, if Isla had a good time, did people eat and drink enough, would she remember any of it.

This year I did a BBQ and the rest of the food was outsourced to my sister and Mark. @avazonfrillo blew up the balloons. Uber delivered the cake. I cried as I dressed the kids. I fell asleep without Jock.

This exact day last year we were flying back from Rome, having started the plan for our new life together in Italy. A dream that never came to be.

For Jock to miss these days seems unfair and unbearable, and another of the firsts we are pushing through as a family. But our little ones are finding joy again, they are being the happy and cheeky children they always were, and I’m grateful that life keeps dragging us forward day by day. lz

Jock Zonfrillo Instagram - When I met Jock he had two daughters, we then made two gorgeous babies together. There were 20 years between his first child and his last, and he was a different person and parent for each of them.

What was the same was that he loved them beyond any words or actions.

Jock never really grew up: he taught the kids ways to do things that would drive me crazy - from dunking their roast chicken directly INTO the gravy boat as it was the safest way to cover the entire surface area, how to wedge a whole donut into their mouth at one time, to scaring the absolute sh*# out of me for a laugh.

There’s roles that I can pick up, but this one - the cheekiness that was his parenting superpower - that is uniquely his.

Beyond just being a Dad, he dreamed one day to be a Nonno. I wish he had that chance.

Ava, Alfie and Isla - I’m so grateful that he left a little piece of himself behind in each of you. You are brave and strong and the sole reason why life will be wonderful again for us all. lz

Jock Zonfrillo Instagram - This would make Jock immensely happy - @andyallencooks unexpectedly came into our life 4 years ago. He quickly became a best mate to Jock, shared a passion for food and fun, and was someone who cared deeply for our family.

Andy walked back into the MasterChef Kitchen to film his segment for Jock’s tribute show 7 months ago, literally only hours after I called him to tell him the news. He did that for Ava and I, for Jock, and as a gift for our little ones to watch in the future. I see now that it was an enormous, and possibly unfair, request I made of him. He did it without hesitation.

To see @andyallencooks heading back into the Masterchef Kitchen now, stronger, with some shit life lessons learnt way too early, and with three new talented and kind Judges would make him super proud. I think he’d say something like ‘Mate, that kitchen is greater with you in it.’

To @pohlingyeow @sofiaklevin @jeanchristophe_novelli - you already know how amazing @masterchefau is, but you are yet to realise the legend that is your new mate in @andyallencooks, and the crew who are the best in the business.

This is a group of people who respect the privilege of being part of such an extraordinary show, they know they’re stronger together than as individuals, and they want to nurture contestants in turning their dream of food as a career into reality.

You all have my absolute support - all I ask is that you continue to take the piss out of Andy, make him coffees that are so strong he walks onto set shaking, take him for a round of golf to let off some steam, and that you beat him in any cook-offs.

Jock Zonfrillo Instagram - WOOHOO - @masterchefau won the @aacta for Best Reality Program!!

As the Judges on the show, we actually have the easiest job. The crew are the ones there hours before we arrive, and remain there hours after we leave. They’re planning episodes over the weekend, shopping for our wardrobe on their days off, and always keeping the spirit of the show front and centre. And of course the cast of fans vs favourites without whom the show just wouldn’t have been the same.

Big shout out to @charmainedepasquale_stylist & @maurzmoriarty9 for the daily wardrobe and H&M that somehow manage to make this scallywag look respectable. I love you ladies thank you :•) & Tash who I can’t tag for looking after us like a mum on the daily, you haven’t had a toastie till you’ve had a Tashi Toastie™

Jock Zonfrillo Instagram - It’s different this year. No less love or excitement, just my stubbornness to see the kid’s faces light up in spite of it all.

As much as I willed yesterday to be over, I can’t skip this chapter. The long list of firsts, I hear they get easier, I believe that to be true.

Watching our gorgeous children navigating their first Xmas, I can see now that tragedy will make them. It will make them fierce and fearless, they’ll have a strength no-one can quite put their finger on.

And they will undoubtedly have a life bigger than the one Jock and I dreamt for them because of this. They’ll be stronger in the broken bits.

As a family, we have been privileged to receive kindness beyond measure this past week, and across the whole year actually, during what has been a tough year for so many. Thank you. Loz

Jock Zonfrillo Instagram - Four years ago. Restaurant Orana’s last service.

Such a bittersweet night. With past and current staff all working, more past staff and close friends joining for knock off drinks, all there the following days to help pack up Jock’s greatest work.

I ate at the last service with @andyallencooks. Who jumped on the plane that afternoon, after a day of filming, to support Jock. Not only through his last service, but also because he was leaving two of his children and a pregnant wife in another state during covid while he went back to filming.

When Orana closed, Jock lost a sense of direction and purpose, and started a journey of trying to find who he actually was when he was no longer a chef. Orana was so much more than a restaurant, and if you ever walked through those doors you know what I mean. Loz

Jock Zonfrillo Instagram - The trick to the perfect roast potatoes?

Bi-carb, hot fat, and a little shoogle.

INGREDIENTS

Maris piper/kestrel potatoes, peeled and halved
½ tsp bi-carb soda
½ tsp salt
4 sprig rosemary
½ bunch thyme
150g unsalted butter, chopped up
Grape seed oil
Salt and pepper to taste

METHOD

Pre-heat oven to 220°C. Line a baking tray with foil, then with a layer of baking paper, add in enough oil to cover the whole bottom of the tray. Put the tray into the oven for the oil to heat up.

Meanwhile, peel your potatoes, cut in half, and put them into a large pot of cold water with the bi-carb and salt, cover and put onto the stove to gently boil until half cooked.

Drain into a colander and bash the potatoes inside the colander to rough up the outside of the potato. Take your tray out of the oven and spread the potatoes out on the tray evenly, then spoon the oil over the top so they will go crispy all over. Place them back in the oven for 25 minutes or until golden brown.

To make the beurre noisette to finish these perfect puppies, place all of the chopped butter in a small pot and place on a medium heat, after the solids cook out it will start to foam and have a nutty colour and aroma. Roughly chop the rosemary and thyme and add into the butter - it should make a very satisfying noise and aroma when it hits the butter - leave in there for 2 mins then spoon over the potatoes. Season the potatoes to your liking - I added salt and a heap of white pepper - mix through and eat straight away so they’re super crunchy.

We put up the tree.
We have a full British Christmas dinner with all the trimmings.
We issue the matching family PJs for the year.

This year we continued our tradition.

I can’t even start to list off everything @jimmybarnesofficial , @jane13barnes , their kids, their family, and their friends have all done for the kids and I this year. This is a group of humans where you see a drop, they see an ocean. It’s the real sense of a clan.

Jock Zonfrillo Instagram - Time to step up your roast potato game!

I pride myself on my roasters being the star. But it’s not a set-and-forget type of thing - mine have shallots, rosemary, thyme, bay leaf, salt and pepper, and of course the @alwaysfreshau Duck Fat which make them deliciously crunchy. These are the perfect side to you Christmas meats... but don’t be surprised if they steal the show!

ULTIMATE DUCK FAT ROAST POTATOES

INGREDIENTS

1kg Baby desiree/maris piper/kestrel potatoes (100g each potato)
400g-600g Always Fresh Duck Fat
½ tsp Bi-carb soda
1 tsp Salt
200g Shallots, peeled
6 Sprig rosemary
1 Bunch thyme
3 Fresh bay leaves
Salt and white pepper to taste

METHOD

Pre-heat your oven to 200°C, then line a baking tray with a layer of baking paper. Add in enough duck fat to cover the whole bottom of the tray, around half a centimetre. Put the tray into the oven and get your duck fat heating up!

Then fork/stab your potatoes and put them into a large pot of cold water with the shallots, bi-carb, salt, half the rosemary, half the thyme and all the bay leaves. Cover and put onto the stove to gently boil until cooked - around 30 minutes.

Drain into a colander and leave to cool for 10 minutes. Take each potato and squash using a potato masher or any flat implement, this gives lots of raggedy edges to crisp up. Take your tray out of the oven and spread the potatoes out on the tray evenly, scatter the shallots around, and lightly season with salt and white pepper. Turn the potatoes in the duck fat so they will go crispy all over. Place them in the oven for 25 minutes, turning halfway or until golden brown.

Just before you remove the potatoes from the oven, add the remaining rosemary and thyme. Toss them through and return to the oven for 5 minutes.

Remove the tray from the oven and using a spatula lift the potatoes from the tray into a serving dish. Scatter the shallots and herbs on top to garnish, then pop them on the table with a sense of pride!

Jock Zonfrillo Instagram - If you’ve got an obsession with peri peri chicken, this is a super easy recipe to make it at home. It’s aromatic, punchy and got the perfect level of heat that’ll give any fast food chain a run for its money.

INGREDIENTS

1.8kg chicken, spatchcocked
30g olive oil
60g / half brown onion, finely diced
50g ginger, finely diced
35g garlic, finely diced
5 cayenne chillies, deseeded and finely diced
1 birdseye chilli, finely diced
10g lemon peel, finely diced
15g raw sugar
5g salt
125ml water
25g / ½ lemon, juiced
20g apple cider vinegar
75g olive oil

METHOD

For the peri peri marinade, heat grapeseed oil in a medium saucepan over medium heat. Add the chillies, lemon peel, ginger, garlic and brown onion and sweat, stirring often, until sweet and translucent, about five minutes. Add sugar and salt and sweat for another minute. Add the water to release any caramelised bits stuck to the pan.

Add the lemon juice, vinegar and olive oil and turn the heat to low. Let the sauce tick away until the onion, garlic and ginger are completely soft and beginning to meld into the sauce.
Use a stick blender to blend about a quarter of the sauce.

To roast the chicken, preheat an oven to 240C.

Season every nook and cranny of the spatcocked chicken with salt. Cover all parts of the chicken with half of the marinade. Place skin side up on a rack set over a tray lined with foil.

Roast the chicken, basting with the remaining marinade periodically until the chicken is charred and reads 55C on a thermometer. Remove from oven and rest chicken in a warm place for 15 minutes before serving.

Jock Zonfrillo Instagram - TATTIE SCONES - a Scottish fry-up essential!

My serving suggestion - Glasgow roll, square sausage, fried eggs, bacon, tartan sauce (HP Sauce Heinz Ketchup). You’ll find yer Scottish accent may just get a wee bit thicker.

INGREDIENTS

500g peeled potato (dutch cream)
120g plain flour
60g unsalted butter
salt

METHOD

1. Cook yer tatties in salty boilin’ water until cooked.
2. Strain intae a colander and let them steam oot.
3. Pummel yer butter intae yer tatties and fold in the flour.
4. Roll oot between 1/2cm & 3/4cm thick and indent twa lines to give a 1/4 appearance.
5. Cook on a lightly greased pan an serve hot.

For those preferring English….

1. Cook your potatoes in salted boiling water until cooked through’
2. Strain and let them steam out in the colander
3. Mash your butter into the potatoes and fold in the flour
4. Roll out to between ½ and ¾ cm thick and indent two lines to give a 1/4 appearance
5. Cook on a lightly greased pan and serve hot!
