Judy Joo Instagram - Indulging in the rain forest’s embrace at @capellaubud’s Api Jiwa, where a culinary journey takes flight in a 10-course feast. Inspired by the essence of Japanese Omakase and the Sanskrit essence of ‘fire to the soul’, 🔥 every dish is a bold symphony of flavors marrying japanese and indonesian ingredients intricately.  @apijiwaubud is an ode to local heritage, crafting a unique experience from seasonal, sustainably-farmed ingredients woven together with the vibrant spices of indonesia. Highlights were the perfected steamed chawanmushi egg custard topped with uni (sea urchin) and a juicy spiced lamb satay with an aromatic balinese dipping sauce. I also loved the handmade steamed bao-esque bun stuffed with the famed roasted pork, babi guling glazed generously in tumeric, anise, cloves, galangal and garlic.  The open kitchen is always entertaining, and you’ll see the skill and care that goes into each dish— especially the robata bbq grill!  All this while overlooking the lush tropical forest of the breath taking Capella hotel.  One of the most luxurious “glamping” hotels ever.  Thank you Chef Nicola Russo for a truly epic and memorable experience. ❤️

This town is about 1.5 hours outside of Seoul and known to be the ceramics capital of Korea. It is an area known for their superior terroir and spring water and the best rice is also grown in this region. Because of this unique topography, the earth here also yields exemplary clay for making pottery.  Kwangjuyo is one of the best artisan makers keeping alive a centuries old tradition. I love their organic, nature inspired designs incorporated into sleek and modern shapes. Under the direction of Luci Cho @sayluci , Kwangjuyo’s plates grace the tables of some of the finest Michelin starred restaurants around the world. Judy Joo Instagram - Fall is such a wondrous time anywhere, but particularly at the @subarashiikudamono Asian pear farm. I love the golden sunlight, the soft rustling of the leaves, and the bounty of ripe fruit adorning the trees. During my last visit, I was also able to  grill up a tasty Korean BBQ short ribs dish, Galbi, with an Asian pear marinade. Korea has a long history of using pears in cooking to add flavorful sweetness and fragrance. It was so fun to cook in the orchard, surrounded by early Autumnal splendor. 

This classic Korean barbecue uses fresh Asian pears, not only to add sweetness, but also to tenderize the meat. 

The natural enzymes in the pears break down the meat’s tendons, to make for a texturally buttery and juicy piece of beef, while also creating unforgettable flavor and aroma. Do try to find the Korean LA Galbi cut—  A Good Tip: when you order these cross-cut ribs from your butcher, ask for the thickest part of the meat along the bones’ hearty strips.

One of the favourites is kalbi (marinated beef short-rib), which is not just a meal, but a convivial experience, bringing everyone together. It’s served with lettuce or perilla leaves (ssam), allowing everyone to wrap their meat with rice, kimchi, ssamjang hot sauce, or their preferred sides.

Judy Joo Instagram - Chef Dana Choi @chefchoidana first came to the UK in 2014 with a visa supplied by my first restaurant Jinjuu in Soho.  It was her first time living outside of South Korea— she hardly spoke English and it was quite a culture shock. 

She was part of our opening team there and it has been a true honor watching her grow. We have shared blood, sweat, and tears together!  She worked hard, learned a ton, and climbed the ranks.  She forged her way from commis chef to sous chef…. and, then joined us at Seoul Bird as Head Chef. After two years with us, she spread her wings to open her own place @jang.london in London’s iconic Royal Exchange. We are so proud, watching her leave the “nest”, take on a new challenge, and launch her own restaurant with her own menu. 

Andy @chefandrewhales and I had an unforgettable meal at Jang, where Chef Dana has curated an exquisite menu showcasing Korea’s traditional flavors blended with her own unique twists. Dana hails from Korea’s Jeolla province, which is known for its rich gastronomic traditions and bold flavors– which shine through impressively in her dishes. I was awe struck with the truly tasty Yuk Hwe steak tartare and the perfectly cooked kalbi beef bbq with traditional Korean and modern condiments. Her mouthwatering bossam (pork belly) is also a must try… and the umami filled oysters with kimchi. 

All of the kimchis (a few kinds are on offer)are made in house and are full of funk, tang, and completely addictive.

Congratulations Dana. I love and am so proud of you… and will continue to watch your career with great interest.  The world is your oyster (with some kimchi on top!).

When trying a new place, I aim to try something I’ve never had before, often asking for the house specialty or signature dish. Being a big fan of seafood, I usually lean towards pescatarian dishes.

To discover great dining spots in a new city, my advice is to ask the locals, such as your taxi driver, where they would go to eat. When in Rome, do as Romans do! Be a local! (Do not eat at McDonalds in Paris!)

Judy Joo Instagram - Happy 84th birthday daddy!! 

My father was born in 1939 in Chongju, a city in what is now in North Korea. He and his family (8 brothers and sisters) fled south during the war and he grew up as a refugee on Jeju island.  He still remembers asking American soldiers for “bonbons” as a child. Somehow he made it to Seoul National University medical school through hard work and determination. He immigrated to the USA to do his internship and residency and practiced as a psychiatrist, until retiring at 75. 
He raised two daughter (me and my sis!) with my mom and is a source of constant inspiration for us both to this day. At 84 years old he is still super healthy, doesn’t take any medicine (unheard of at his age!) and still going strong in every way. 

I love you daddy so much!  Happy happy birthday!  Xx❤️❤️ I’ll always be your little girl! ❤️❤️

Guinep, also known as ‘Spanish lime’ or ‘mamoncillo’, is rich in Vitamin C. Traditionally, it’s eaten by cracking the thin outer skin and sucking on the juicy pulp inside. But be cautious; while the pulp is delectably sweet, the inner seed shouldn’t be consumed.

Judy Joo Instagram - I had often strolled past Scully restaurant in St James’s Market @scullyrestaurant. Yet, for reasons now beyond comprehension, I never ventured inside. That is, until recently, when I experienced what can only be described as one of the most intriguing culinary adventures of my recent memory.

Chef Scully, @scully_chef a maestro of global flavors (born in Malaysia to Indian, Chinese, Irish, and Balinese mixed parents, and then raised in Australia), orchestrated a tasting menu that truly delighted and surprised our taste buds. I cannot count how many times my friend and I exclaimed, “Wow, this is SO good!” in foodgasmic euphoria.

The menu reads like an atlas of worldly flavors.  Eclectic for sure— truffle, bergamot, pomelo, finger lime, sambal, wild garlic, labneh, and more, married together into a seamless menu.  The meal commenced with a seemingly humble bite that will linger in my gastronomic recollections for years: a crispy truffle and water chestnut stuffed chicken wing (yes, just a simple chicken wing!), served sans cutlery, accompanied by a sublime sauce accented with finger lime that I greedily sopped up in its entirety. I could have easily eaten a bucket of these.

This was followed by an arepa with Momma Scully’s eggplant sambal and a labneh kissed with the delicate essence of bergamot. Cod with fragrant wild garlic followed, then a crispy duck leg… all showcasing unusual flavors that happily played on our tongues. 
.
As the meal drew to a close, we were charmed by the appearance of a diminutive pre-dessert pineapple popsicle, sooo cute and delicious. 
We left with our bellies totally full and our minds still buzzing from the wonderous tastes we had just encountered… Chef Scully’s menu is a love letter to his heritage, traditions, and upbringing… and I am smitten.

Judy Joo Instagram - Spent a brilliant day in the orchards of gourmet grower Subarashii Kudamono Asian Pears! @SubarashiiKudamono I walked among hundreds of trees brimming with honeyed round fruit just waiting to be picked, and fell in love with this jewel of a farm located in Pennsylvania not far from NYC. 

Subarashii Kudamono means “wonderful fruit,” and these golden orbs live up to their name! Asian pears are one of my favorite fruits, but they have to be ripe, sweet, and juicy! These pears are lovingly hand-planted, picked, and packed, which ensures a delicious product. 

I was so impressed with how much love and care goes into growing these nectar-filled fruits. All of the pears are naturally sun-ripened, and the farmers even “spin” the fruit while growing to ensure even exposure to heaven’s rays! I was so touched by what I learned about these exquisite pears.

This Fall, I’ll be sharing tasty bites about my visit – what I learned about their unique patented pear varieties, the distinct flavors, the terroir from which each tree thrives, how each tree is hand-sculpted, and the intense care in the picking and packing of the fruit by the orchard team.

Elevate your Galbi with these tips:

Choose bone-in LA Galbi cut short ribs or trimmed boneless rib-eye steak for a succulent dish.

Use Asian or ripe pears in your marinade for an authentic Korean sweetness.

As I prepare for the holidays, I remember my recent visit to Pennsylvania’s oldest Asian pear orchard, Subarashii Kudamono where I helped build some of their luxurious holiday gift boxes of Asian Pears. 

I was stunned by how much labor goes into growing, picking, sorting, and packing each piece of fruit. So much detail, love, and care goes around these amazingly delicious golden pears. 

Each pear is meticulously inspected, chosen and wrapped by hand. Only fruit that is ripe, unblemished, and of the proper shape and texture makes the final cut.  And, then each “perfect” sweet orb is placed snugly into a seriously cushioned box, like fine bone china. 

When you see and feel a perfect pear, you just know! It just glows in your hand. Learning how to evaluate the pears at the Subarashii farm, felt like being a diamond merchant inspecting a bounty of gems! 

And each fruit, really just feels and tastes like a precious jewel.  I have been sending boxes to my friends and colleagues this season and I cannot tell you how many people have written to me saying how incredibly delicious and special they are. That first bite is so surprising!

Judy Joo Instagram - Veganuary is over now, but I am a big fan of veggie forward dishes in general! 

Actually, I struggle to eat enough protein in my life in general, I love vegetables so much! Tofu though is a great source of protein and this warming soup has it all.  So this delicious Sundubu Jjigae is one of my fave dishes to whip up, and can be made in no time. This versatile soup can also be adapted to include seafood, beef, or pork. I like to use a nice anchovy stock and toss some shrimp/prawns in sometimes too. 

To make a vegan version, the recipe is simple. Start with a flavourful stock, combining classic Asian aromatics: onion, spring onion, kombu/seaweed, dried shiitake mushrooms, and garlic.

The base of our stew gets its kick from gochugaru, Korean chilli powder, along with a generous helping of garlic and ginger. We then add in a bunch of hearty veggies – Napa cabbage, zucchini/courgette, and a mix of mushrooms, followed by delicate silken tofu, added last to prevent it from breaking up too much.

This comforting stew is a quick, easy delight, perfect for any meal. And if you’re short on time, a simple vegetable bouillon cube does the trick for the stock. Judy Joo Instagram - I don’t know any Korean or actually Asian person who does not love rice. It is a staple in our diet, and when we ask someone if they have eaten, we literally ask them “have you had rice?”. Served with every meal (even breakfast), rice is the “bread” of Asia and one of my comfort foods. When I was feeling ill, my mom used to make me a soothing rice porridge, and my afterschool snack was a roasted barley tea poured over a bowl of rice, studded with cubes of pan fried spam, kimchi and seaweed flakes. Rice is life in Asia (there have even been rice riots), and an essential part of our lives. 

I have been already buying Arirang Rice, which is grown in California, so I was happy to collaborate with them. It is the perfect rice for a variety of dishes, especially Korean favorites. Here, I’m using their medium-grain Calrose rice to whip up a sensational Steak Bibimbap.

Just cook Arirang Rice as you would any other rice. Rinse the grains under cold water, and then pop into your rice cooker with water, and let technology take over. I always use a rice cooker, it just knows when it’s done, such a smart appliance! 🙂  The outcome? Fluffy, perfectly cooked rice that’s a delight on its own or as part of any meal. I love the smell of freshly cooked rice…fills my kitchen and my soul with comfort.

This rice also absorbs flavors very well, and complements the boldness of the gochujang sauce in dishes like bibimbap. The rice also adds a delicious contrast of texture alongside the beef and veggies. And, it crisps up nicely on the bottom of the stone bowl, adding some much welcomed and totally addictive crunch. I used to wait next to the rice cooker as a child pleading with my mom to scrape up the “nurungi” crispy rice on the bottom of the bowl… and then smack on the pieces joyfully.

Judy Joo Instagram - I love getting facials. It is probably the one thing I do the most to treat myself on a regular basis. I feel like I have congested skin and need to get my pores cleaned. I have been all around London and New York trying treatments, and my functional medical doctor told me to check out Nataliya Robinson’s beauty clinic @nataliya_robinson_

Nataliya is called “the skin whisperer” and her treatment was the closest to a medical facial I have ever had outside of Seoul. Very impressed. First, she examined my skin and then designed a bespoke treatment for me. She did extractions (which I need and love), surgically popped a zit (can’t even tell now where it was), and even put an infrared light on an area where I have psoriasis.  The best was her famous and totally intense facial massage. Loved it!  I also really enjoyed the lymphatic drainage leg suit that she strapped me in for the duration of my treatment. Your whole body feels “worked” over and relaxed by the end. I think I fell asleep for a bit too.

Highlights were the perfected steamed chawanmushi egg custard topped with uni (sea urchin) and a juicy spiced lamb satay with an aromatic balinese dipping sauce. I also loved the handmade steamed bao-esque bun stuffed with the famed roasted pork, babi guling glazed generously in tumeric, anise, cloves, galangal and garlic.  The open kitchen is always entertaining, and you’ll see the skill and care that goes into each dish— especially the robata bbq grill!  All this while overlooking the lush tropical forest of the breath taking Capella hotel.  One of the most luxurious “glamping” hotels ever. I love the golden sunlight, the soft rustling of the leaves, and the bounty of ripe fruit adorning the trees. During my last visit, I was also able to  grill up a tasty Korean BBQ short ribs dish, Galbi, with an Asian pear marinade. Korea has a long history of using pears in cooking to add flavorful sweetness and fragrance. It was so fun to cook in the orchard, surrounded by early Autumnal splendor. 

This classic Korean barbecue uses fresh Asian pears, not only to add sweetness, but also to tenderize the meat. 

The natural enzymes in the pears break down the meat’s tendons, to make for a texturally buttery and juicy piece of beef, while also creating unforgettable flavor and aroma. Do try to find the Korean LA Galbi cut—  A Good Tip: when you order these cross-cut ribs from your butcher, ask for the thickest part of the meat along the bones’ hearty strips.

Judy Joo - 2K Likes - Chef Dana Choi @chefchoidana first came to the UK in 2014 with a visa supplied by my first restaurant Jinjuu in Soho.  It was her first time living outside of South Korea— she hardly spoke English and it was quite a culture shock. 

She was part of our opening team there and it has been a true honor watching her grow. We have shared blood, sweat, and tears together!  She worked hard, learned a ton, and climbed the ranks.  She forged her way from commis chef to sous chef…. and, then joined us at Seoul Bird as Head Chef. After two years with us, she spread her wings to open her own place @jang.london in London’s iconic Royal Exchange. We are so proud, watching her leave the “nest”, take on a new challenge, and launch her own restaurant with her own menu. 

Andy @chefandrewhales and I had an unforgettable meal at Jang, where Chef Dana has curated an exquisite menu showcasing Korea’s traditional flavors blended with her own unique twists. Dana hails from Korea’s Jeolla province, which is known for its rich gastronomic traditions and bold flavors– which shine through impressively in her dishes. I was awe struck with the truly tasty Yuk Hwe steak tartare and the perfectly cooked kalbi beef bbq with traditional Korean and modern condiments. Her mouthwatering bossam (pork belly) is also a must try… and the umami filled oysters with kimchi. 

All of the kimchis (a few kinds are on offer)are made in house and are full of funk, tang, and completely addictive.

Congratulations Dana. I love and am so proud of you… and will continue to watch your career with great interest.  The world is your oyster (with some kimchi on top!).

My father was born in 1939 in Chongju, a city in what is now in North Korea. He and his family (8 brothers and sisters) fled south during the war and he grew up as a refugee on Jeju island.  He still remembers asking American soldiers for “bonbons” as a child. Somehow he made it to Seoul National University medical school through hard work and determination. He immigrated to the USA to do his internship and residency and practiced as a psychiatrist, until retiring at 75. 
He raised two daughter (me and my sis!) with my mom and is a source of constant inspiration for us both to this day. At 84 years old he is still super healthy, doesn’t take any medicine (unheard of at his age!) and still going strong in every way. 

I love you daddy so much!  Happy happy birthday!  Xx❤️❤️ I’ll always be your little girl! ❤️❤️

Judy Joo - 2K Likes - I had often strolled past Scully restaurant in St James’s Market @scullyrestaurant. Yet, for reasons now beyond comprehension, I never ventured inside. That is, until recently, when I experienced what can only be described as one of the most intriguing culinary adventures of my recent memory.

Chef Scully, @scully_chef a maestro of global flavors (born in Malaysia to Indian, Chinese, Irish, and Balinese mixed parents, and then raised in Australia), orchestrated a tasting menu that truly delighted and surprised our taste buds. I cannot count how many times my friend and I exclaimed, “Wow, this is SO good!” in foodgasmic euphoria.

The menu reads like an atlas of worldly flavors.  Eclectic for sure— truffle, bergamot, pomelo, finger lime, sambal, wild garlic, labneh, and more, married together into a seamless menu.  The meal commenced with a seemingly humble bite that will linger in my gastronomic recollections for years: a crispy truffle and water chestnut stuffed chicken wing (yes, just a simple chicken wing!), served sans cutlery, accompanied by a sublime sauce accented with finger lime that I greedily sopped up in its entirety. I could have easily eaten a bucket of these.

Caption : I had often strolled past Scully restaurant in St James’s Market @scullyrestaurant. Yet, for reasons now beyond comprehension, I never ventured inside. That is, until recently, when I experienced what can only be described as one of the most intriguing culinary adventures of my recent memory. . Chef Scully, @scully_chef a maestro of global flavors (born in Malaysia to Indian, Chinese, Irish, and Balinese mixed parents, and then raised in Australia), orchestrated a tasting menu that truly delighted and surprised our taste buds. I cannot count how many times my friend and I exclaimed, “Wow, this is SO good!” in foodgasmic euphoria. . The menu reads like an atlas of worldly flavors. Eclectic for sure— truffle, bergamot, pomelo, finger lime, sambal, wild garlic, labneh, and more, married together into a seamless menu. The meal commenced with a seemingly humble bite that will linger in my gastronomic recollections for years: a crispy truffle and water chestnut stuffed chicken wing (yes, just a simple chicken wing!), served sans cutlery, accompanied by a sublime sauce accented with finger lime that I greedily sopped up in its entirety. As I prepare for the holidays, I remember my recent visit to Pennsylvania’s oldest Asian pear orchard, Subarashii Kudamono where I helped build some of their luxurious holiday gift boxes of Asian Pears. 

I was stunned by how much labor goes into growing, picking, sorting, and packing each piece of fruit. So much detail, love, and care goes around these amazingly delicious golden pears. 

Each pear is meticulously inspected, chosen and wrapped by hand. Only fruit that is ripe, unblemished, and of the proper shape and texture makes the final cut.  And, then each “perfect” sweet orb is placed snugly into a seriously cushioned box, like fine bone china. 

When you see and feel a perfect pear, you just know! It just glows in your hand. Learning how to evaluate the pears at the Subarashii farm, felt like being a diamond merchant inspecting a bounty of gems! 

And each fruit, really just feels and tastes like a precious jewel.  I have been sending boxes to my friends and colleagues this season and I cannot tell you how many people have written to me saying how incredibly delicious and special they are. That first bite is so surprising!

Judy Joo - 1.9K Likes - Veganuary is over now, but I am a big fan of veggie forward dishes in general! 

Actually, I struggle to eat enough protein in my life in general, I love vegetables so much! Tofu though is a great source of protein and this warming soup has it all.  So this delicious Sundubu Jjigae is one of my fave dishes to whip up, and can be made in no time. This versatile soup can also be adapted to include seafood, beef, or pork. I like to use a nice anchovy stock and toss some shrimp/prawns in sometimes too. 

To make a vegan version, the recipe is simple. Start with a flavourful stock, combining classic Asian aromatics: onion, spring onion, kombu/seaweed, dried shiitake mushrooms, and garlic.

The base of our stew gets its kick from gochugaru, Korean chilli powder, along with a generous helping of garlic and ginger. We then add in a bunch of hearty veggies – Napa cabbage, zucchini/courgette, and a mix of mushrooms, followed by delicate silken tofu, added last to prevent it from breaking up too much.

This comforting stew is a quick, easy delight, perfect for any meal. And if you’re short on time, a simple vegetable bouillon cube does the trick for the stock. Judy Joo - 1.9K Likes - I don’t know any Korean or actually Asian person who does not love rice. It is a staple in our diet, and when we ask someone if they have eaten, we literally ask them “have you had rice?”. Served with every meal (even breakfast), rice is the “bread” of Asia and one of my comfort foods. When I was feeling ill, my mom used to make me a soothing rice porridge, and my afterschool snack was a roasted barley tea poured over a bowl of rice, studded with cubes of pan fried spam, kimchi and seaweed flakes. Rice is life in Asia (there have even been rice riots), and an essential part of our lives. 

I have been already buying Arirang Rice, which is grown in California, so I was happy to collaborate with them. It is the perfect rice for a variety of dishes, especially Korean favorites. Here, I’m using their medium-grain Calrose rice to whip up a sensational Steak Bibimbap.

Just cook Arirang Rice as you would any other rice. Rinse the grains under cold water, and then pop into your rice cooker with water, and let technology take over. I always use a rice cooker, it just knows when it’s done, such a smart appliance! 🙂  The outcome? Fluffy, perfectly cooked rice that’s a delight on its own or as part of any meal. I love the smell of freshly cooked rice…fills my kitchen and my soul with comfort.

This rice also absorbs flavors very well, and complements the boldness of the gochujang sauce in dishes like bibimbap. The rice also adds a delicious contrast of texture alongside the beef and veggies. And, it crisps up nicely on the bottom of the stone bowl, adding some much welcomed and totally addictive crunch. I used to wait next to the rice cooker as a child pleading with my mom to scrape up the “nurungi” crispy rice on the bottom of the bowl… and then smack on the pieces joyfully.

Judy Joo - 1.8K Likes - I love getting facials. It is probably the one thing I do the most to treat myself on a regular basis. I feel like I have congested skin and need to get my pores cleaned. I have been all around London and New York trying treatments, and my functional medical doctor told me to check out Nataliya Robinson’s beauty clinic @nataliya_robinson_

Nataliya is called “the skin whisperer” and her treatment was the closest to a medical facial I have ever had outside of Seoul. Very impressed. First, she examined my skin and then designed a bespoke treatment for me. She did extractions (which I need and love), surgically popped a zit (can’t even tell now where it was), and even put an infrared light on an area where I have psoriasis.  The best was her famous and totally intense facial massage. Loved it!  I also really enjoyed the lymphatic drainage leg suit that she strapped me in for the duration of my treatment. Your whole body feels “worked” over and relaxed by the end. I think I fell asleep for a bit too. 
In the end, I came out with glowing and hydrated skin!  And my legs felt awesome too after being massage for 90mins!

Nataliya is so knowledgeable and you can tell she really cares as well. You just feel safe with her and trust her to work her magic. She is London’s skin whisperer!
