Michael Symon Instagram - GOD I LOVE STEAK!… this was so delicious and the key ingredient is patience… believe it or not this was a choice steak but the technique we used here made it irresistibly delicious… happy cooking everyone… full recipe below! 🥩⏲️

CAST IRON HERB BUTTER-BASTED STRIP STEAK
Serves 2

1 8-10 oz strip steak
¼ stick butter
2 cloves garlic, crushed
2 branches each rosemary and thyme
2 tbl EVOO
S & P to taste

Salt and pepper the strip the night before and leave uncovered in the refrigerator.
30 minutes before cooking, bring the meat to room temperature.
Heat a 10” cast iron pan on medium/ high heat until it begins to smoke.
Lightly oil the steak on both sides, place in the hot pan. Do not move the steak for 3-5 minutes.
Flip steak when bottom is nicely browned. If you have one, use a weight to assist with an even sear. 
Add ¼  to ½ stick of butter, crushed garlic, and fresh herbs to the pan. Allow to saute for 1 minute, then begin to baste the steak for approx. 2-3 minutes.
Add a tablespoon of compound butter to the top of the steak and allow rest for 5-10 minutes.
Slice the steak and top with compound butter, salt, pepper, and a drizzle of EVOO. 

For Compound Butter
2 sticks room temperature butter
1 clove grated garlic
2 tablespoon Kosher salt
2 dash worcestershire sauce
2 dash red wine vinegar
1 anchovy smashed
2 tablespoons flat leaf parsley 

Mash the 2 sticks of butter with the grated garlic.
Add salt, (pepper if desired), worcestershire, red wine vinegar, anchovy, and parsley.
Mix all together, (at this point you can add any other of your favorite ingredients).
Compound butter can be made in advance and will store in the refrigerator for a week, bring to room temp before using.

White Margarita 🥥🍋
Makes 2 cocktails 

Ingredients

4 Limes (1 quartered, 3 juiced)
Toasted Coconut
3 oz. of blanco tequila of your choice
2 oz cream of coconut
1 oz of orange liqueur 
One handful of ice

1 Cocktail Shaker 
2 Martini glasses

Put toasted coconut into a shallow dish. Take a lime wedge and pass along the rim of each martini glass, then press the rim of the glass into the dish with the toasted coconut to garnish. Add lime wedge to the edge of the glass for an additional garnish.

Combine lime juice, cream of coconut, orange liqueur, tequila and ice into the cocktail shaker. Shake hard, for about one minute. Pour cocktail into the garnished martini glasses and enjoy!
Michael Symon Instagram - Perfect, simple, cheater OMLETTE…works every time for those that hate the runny center .. if you like the softer center (which I do ) you can lessen lid time or omit completely 

EASY OMELETTE

4 large eggs
1 tbl OO
1 tbl butter

Optional 
2oz goat cheese or your cheese of choice
1 tbl fresh thyme or your herb of choice

Whisk eggs with pinch of salt until yolks and whites are fully combined
Place coated saute pan on high heat
Add eggs to hot pan, moving eggs around quickly and scraping down the sides while spreading the eggs around the pan
Turn off the heat, add the cheese and herbs to the top of the eggs
Cover the pan for 3 minutes
Hold pan at a downward angle and gently fold the eggs over on themselves to make a roll
Slide out of the pan onto a plate, sprinkle with salt and pepper
Enjoy

Michael Symon Instagram - These are the eggs that I grew up on… just in time for the weekend. I love eggs in all forms, but this might be my favorite. 

Crispy Eggs

Serves 1 

3 fresh eggs
¼ cup olive oil
2 tbl grated parmesan cheese
Salt & pepper to taste
Chili crunch (optional)

Heat fry pan until hot. Add olive oil to pan, continue to heat until it is shimmering. Crack the eggs into the hot oil. Baste the top of the eggs with the hot oil as the bottom begins to get crispy. Continue to cook until the top of the eggs are cooked and the bottoms are crispy and brown. Transfer to a plate, grate fresh parmesan cheese on top. Chili crunch can be added for spice and texture.
Enjoy.

It’s going to be an agvolemono weekend at the SYMON’S!
Michael Symon Instagram - Agvolemono Soup 🍋 aka Greek penicillin… this was the soup my mom always made for me when I didn’t feel well and it’s still a hit in the Symon household… enjoy 

Avgolemono Soup 
Serves 6-8

For the broth:
1 whole chicken
2 bay leaves
1.5 gal water

For the Soup:
3 eggs
Juice and zest of 3 lemons
2 tbl Wondra flour
¼ c fresh dill
1 lb. cooked orzo pasta
Salt and pepper to taste

Place whole chicken and bay leaves in a pot with 1.5 gallons of water. Bring to a simmer and cook for 1.5 hours.
Strain broth, save both the chicken and the broth. Place broth back into the pot and bring to a simmer.
Whisk  the eggs, lemon juice, zest, and the flour in a bowl until smooth.
Temper the lemon and egg mixture with 1 cup of the hot broth. Slowly whisk the egg mixture into the pot of simmering broth.
Allow to simmer for 10 minutes. Add ¼ cup of chopped fresh dill.
Meanwhile, pull the meat off the chicken.
Place one handful of cooked orzo and one handful of pulled chicken in a bowl. Cover with hot broth, season with salt and pepper. Enjoy.

Michael Symon Instagram - This is how I poach my eggs… you don’t have to be intimidated to try this method!!!.. it can be super simple… served on sourdough with crispy prosciutto, breakfast in 90 seconds never tasted better! 🥓🥚 

Poached Egg
with crispy prosciutto 

Serves 1

2 large eggs
2 slice of grilled sourdough bread
2 pieces of Prosciutto 
1 tbl Champagne vinegar
Salt & pepper
Parmesan cheese to taste
Flat leaf parsley 

Bring 3 qts of water to a slight boil. Add a few splashes of vinegar and salt to boiling water.
Crack each egg into a separate small dish. Swirl the water in the pot to create a whirlpool effect and add eggs one at a time to the pot. Continue to stir in a circular motion. Cook 90 seconds for a runny yolk, eggs can be simmered longer for a firmer yolk.
Crisp the prosciutto in a hot frying pan, approximately 1 minute per side.
Serve over grilled bread and top with crispy prosciutto, parmesan cheese, salt/pepper, flat leaf parsley and drizzle of extra virgin olive oil. Enjoy.

Michael Symon Instagram - Zucchini Keftede… a springtime tradition in my household… I grew up eating these and still love them just as much… hope you all enjoy!

🥕🥩🔪‼️Remember #24in24 : Last Chef Standing is back on THIS SUNDAY at 8|7c on @foodnetwork @streamonmax ‼️🔪🥩🥕

Makes 12-15 1.5oz balls

7c shredded zucchini
1 tbl kosher salt
½ c thinly sliced green onions
1.5 tbl finely chopped dill
1.5 tbl  finely chopped mint
1tbl  finely grated garlic
1.5 tbl grated lemon zest
1c  panko breadcrumbs
1 beaten egg
2.5c crumbled Greek feta
Olive oil for frying
 
Directions
Shred the zucchini on the large holes of a box grater. Season with 1 tbl of salt and toss to combine. 
Let stand 30-90 minutes, allowing excess moisture to drain then place in a tea towel and wring out all moisture. This is the most important step, as any moisture left in the zucchini will prevent frying.
In a mixing bowl combine the green onions thru feta and mix to combine. Thoroughly mix in the zucchini.
Form the zucchini mixture into 1.5oz/ ⅓c balls then coat in panko breadcrumbs and refrigerate, until ready to fry. Fry at 350-360 degree in Canola oil ½ “ over the top of the Keftedes until golden brown and crisp.

Michael Symon Instagram - Greek Easter is this Sunday… so you know we couldn’t forget the lamb. I like my lamb a little more on the medium side…. But you do you! Hope everyone enjoys…. 🍖 🇬🇷 ⬇️RECIPE BELOW! ⬇️ 

After I enjoy dinner with the family I’ll be tuning into #24in24 on @foodnetwork @streamonmax . Now that’s my kind of Sunday! 

Grilled Lamb Chops

Serves 4

2 garlic cloves grated
2 tbl oregano
Zest and juice of 1 lemon
2 tsp Dijon mustard
½ c extra virgin olive oil
12 bone in Lamb Chops
Salt and pepper
 
 
In a  large bowl mix garlic, greek oregano, lemon juice and zest, oil and salt and pepper.
Add the lamb chops and let marinate for 1-2 hours.
Remove from the fridge 30 minutes ahead of cooking. Fire up the grill, piling coals on one half of grill, leaving one side cool.
Sprinkle lamb with greek oregano and sea salt before placing on the hot side of the grill.
Reserve the marinade for basting the chops.
Grill approx. 3 minutes per side.
I recommend cooking to MR/Med.
Let rest 5 minutes and sprinkle with sea salt before serving.

Michael Symon Instagram - This Sunday is Greek Easter so I’m bringing back my mom’s spanakopita recipe. A classic that is always a welcome sight on any table. 🥬🇬🇷 Enjoy!!

#24in24 Last Chef Standing 
Sundays 8|7c > @foodnetwork @streamonmax 

Spanakopita 

Yield: 15 pieces
 
Ingredients
¼ c olive oil
1# fresh spinach leaves
½ tbl kosher salt
 
½ c thinly sliced green onion
2 cloves minced garlic
¼ c  finely chopped parsley
¼ c finely chopped dill
3 c crumbled Greek feta
4 whole eggs, beaten
½ c of pine nuts (optional)
2 tbl olive oil
1 tsp kosher salt
Pinch of freshly grated nutmeg
 
1 pound #2 phyllo sheets
1 c unsalted butter, melted
 
Directions
Sweat the spinach in 2 tbl of olive oil until softened and wilted. Season with pinch of salt.
Pour into a strainer and allow to strain for 30-90 minutes. 
Place into a tea towel and wring as much excess moisture as possible. (Yield: ¾ # of pressed spinach.) Roughly chop and add to a mixing bowl.
Add all remaining ingredients to the spinach except the phyllo and butter and mix to combine.
Lay out 1 sheet of phyllo and brush with melted butter. Place another layer of phyllo on top and brush with butter. Fold in half lengthwise and brush with butter.
Place ½ c  of spinach filling on the phyllo, closest to you.
Begin folding like a football, brushing butter in between each fold.
Place seam side down on a parchment lined sheet tray and bake at 350* for 15 minutes, until golden brown and crisp. Enjoy.

Michael Symon Instagram - This week on the season finale of #24in24 we talk about how to take dishes to the next level.. that’s exactly what I did here with this simple spring dish.

SUNDAY 8|7c > @foodnetwork @streamonmax 

Ramps and Ricotta

Serves 2

1 small bunch of ramps
½ c of peeled fava beans
1/2c day old brioche, cubed
2 tbl butter
2 tbl EVOO
½ c ricotta
1 lemon
1 tbl each chopped mint, dill, parsley
Salt and Urfa pepper to taste
 
Saute the brioche, over medium heat, in 11 /2 tbl butter until beginning to brown. Add chopped ramps to the pan.
Remove the bread when toasted on all sides. Add the fava beans to the saute with 2 tbl EVOO, and all the herbs. Saute lightly for 1-2 minutes.
Place ½ c of ricotta in a bowl, top with brioche croutons, and saute of ramps, favas, herbs.
Finish with a squeeze of lemon, EVOO, salt, and pepper. Enjoy.

CAST IRON HERB BUTTER-BASTED STRIP STEAK
Serves 2

1 8-10 oz strip steak
¼ stick butter
2 cloves garlic, crushed
2 branches each rosemary and thyme
2 tbl EVOO
S & P to taste

Salt and pepper the strip the night before and leave uncovered in the refrigerator.
30 minutes before cooking, bring the meat to room temperature.
Heat a 10” cast iron pan on medium/ high heat until it begins to smoke.
Lightly oil the steak on both sides, place in the hot pan. Do not move the steak for 3-5 minutes.
Flip steak when bottom is nicely browned. If you have one, use a weight to assist with an even sear. 
Add ¼  to ½ stick of butter, crushed garlic, and fresh herbs to the pan. Allow to saute for 1 minute, then begin to baste the steak for approx. 2-3 minutes.
Add a tablespoon of compound butter to the top of the steak and allow rest for 5-10 minutes.
Slice the steak and top with compound butter, salt, pepper, and a drizzle of EVOO. 

For Compound Butter
2 sticks room temperature butter
1 clove grated garlic
2 tablespoon Kosher salt
2 dash worcestershire sauce
2 dash red wine vinegar
1 anchovy smashed
2 tablespoons flat leaf parsley 

Mash the 2 sticks of butter with the grated garlic.
Add salt, (pepper if desired), worcestershire, red wine vinegar, anchovy, and parsley.
Mix all together, (at this point you can add any other of your favorite ingredients).
Compound butter can be made in advance and will store in the refrigerator for a week, bring to room temp before using.

Makes 2 cocktails 

Ingredients

4 Limes (1 quartered, 3 juiced)
Toasted Coconut
3 oz. of blanco tequila of your choice
2 oz cream of coconut
1 oz of orange liqueur 
One handful of ice

1 Cocktail Shaker 
2 Martini glasses

Put toasted coconut into a shallow dish. Take a lime wedge and pass along the rim of each martini glass, then press the rim of the glass into the dish with the toasted coconut to garnish. Add lime wedge to the edge of the glass for an additional garnish.

Combine lime juice, cream of coconut, orange liqueur, tequila and ice into the cocktail shaker. Shake hard, for about one minute. Pour cocktail into the garnished martini glasses and enjoy!

Michael Symon - 13.4K Likes - Agvolemono Soup 🍋 aka Greek penicillin… this was the soup my mom always made for me when I didn’t feel well and it’s still a hit in the Symon household… enjoy 

Avgolemono Soup 
Serves 6-8

For the broth:
1 whole chicken
2 bay leaves
1.5 gal water

For the Soup:
3 eggs
Juice and zest of 3 lemons
2 tbl Wondra flour
¼ c fresh dill
1 lb. cooked orzo pasta
Salt and pepper to taste

Place whole chicken and bay leaves in a pot with 1.5 gallons of water. Bring to a simmer and cook for 1.5 hours.
Strain broth, save both the chicken and the broth. Place broth back into the pot and bring to a simmer.
Whisk  the eggs, lemon juice, zest, and the flour in a bowl until smooth.
Temper the lemon and egg mixture with 1 cup of the hot broth. Slowly whisk the egg mixture into the pot of simmering broth.
Allow to simmer for 10 minutes. Add ¼ cup of chopped fresh dill.
Meanwhile, pull the meat off the chicken.
Place one handful of cooked orzo and one handful of pulled chicken in a bowl. Cover with hot broth, season with salt and pepper. Enjoy.

Poached Egg
with crispy prosciutto 

Serves 1

2 large eggs
2 slice of grilled sourdough bread
2 pieces of Prosciutto 
1 tbl Champagne vinegar
Salt & pepper
Parmesan cheese to taste
Flat leaf parsley 

Bring 3 qts of water to a slight boil. Add a few splashes of vinegar and salt to boiling water.
Crack each egg into a separate small dish. Swirl the water in the pot to create a whirlpool effect and add eggs one at a time to the pot. Continue to stir in a circular motion. Cook 90 seconds for a runny yolk, eggs can be simmered longer for a firmer yolk.
Crisp the prosciutto in a hot frying pan, approximately 1 minute per side.
Serve over grilled bread and top with crispy prosciutto, parmesan cheese, salt/pepper, flat leaf parsley and drizzle of extra virgin olive oil. Enjoy.

Makes 12-15 1.5oz balls

7c shredded zucchini
1 tbl kosher salt
½ c thinly sliced green onions
1.5 tbl finely chopped dill
1.5 tbl  finely chopped mint
1tbl  finely grated garlic
1.5 tbl grated lemon zest
1c  panko breadcrumbs
1 beaten egg
2.5c crumbled Greek feta
Olive oil for frying
 
Directions
Shred the zucchini on the large holes of a box grater. Season with 1 tbl of salt and toss to combine. 
Let stand 30-90 minutes, allowing excess moisture to drain then place in a tea towel and wring out all moisture. This is the most important step, as any moisture left in the zucchini will prevent frying.
In a mixing bowl combine the green onions thru feta and mix to combine. Thoroughly mix in the zucchini.
Form the zucchini mixture into 1.5oz/ ⅓c balls then coat in panko breadcrumbs and refrigerate, until ready to fry. Fry at 350-360 degree in Canola oil ½ “ over the top of the Keftedes until golden brown and crisp.

After I enjoy dinner with the family I’ll be tuning into #24in24 on @foodnetwork @streamonmax . Now that’s my kind of Sunday! 

Grilled Lamb Chops

Serves 4

2 garlic cloves grated
2 tbl oregano
Zest and juice of 1 lemon
2 tsp Dijon mustard
½ c extra virgin olive oil
12 bone in Lamb Chops
Salt and pepper
 
 
In a  large bowl mix garlic, greek oregano, lemon juice and zest, oil and salt and pepper.
Add the lamb chops and let marinate for 1-2 hours.
Remove from the fridge 30 minutes ahead of cooking. Fire up the grill, piling coals on one half of grill, leaving one side cool.
Sprinkle lamb with greek oregano and sea salt before placing on the hot side of the grill.
Reserve the marinade for basting the chops.
Grill approx. 3 minutes per side.
I recommend cooking to MR/Med.
Let rest 5 minutes and sprinkle with sea salt before serving.

Michael Symon - 5K Likes - This Sunday is Greek Easter so I’m bringing back my mom’s spanakopita recipe. A classic that is always a welcome sight on any table. 🥬🇬🇷 Enjoy!! 

You know what is also on Sunday? The risk taking and simplicity challenge on 24 in 24. If you haven’t caught up on all the episodes they’re available now! 
#24in24 Last Chef Standing 
Sundays 8|7c > @foodnetwork @streamonmax 

Spanakopita 

Yield: 15 pieces
 
Ingredients
¼ c olive oil
1# fresh spinach leaves
½ tbl kosher salt
 
½ c thinly sliced green onion
2 cloves minced garlic
¼ c  finely chopped parsley
¼ c finely chopped dill
3 c crumbled Greek feta
4 whole eggs, beaten
½ c of pine nuts (optional)
2 tbl olive oil
1 tsp kosher salt
Pinch of freshly grated nutmeg
 
1 pound #2 phyllo sheets
1 c unsalted butter, melted
 
Directions
Sweat the spinach in 2 tbl of olive oil until softened and wilted. Season with pinch of salt.
Pour into a strainer and allow to strain for 30-90 minutes. 
Place into a tea towel and wring as much excess moisture as possible. (Yield: ¾ # of pressed spinach.) Roughly chop and add to a mixing bowl.
Add all remaining ingredients to the spinach except the phyllo and butter and mix to combine.
Lay out 1 sheet of phyllo and brush with melted butter. Place another layer of phyllo on top and brush with butter. Fold in half lengthwise and brush with butter.
Place ½ c  of spinach filling on the phyllo, closest to you.
Begin folding like a football, brushing butter in between each fold.
Place seam side down on a parchment lined sheet tray and bake at 350* for 15 minutes, until golden brown and crisp. Enjoy.

Michael Symon - 3.1K Likes - This week on the season finale of #24in24 we talk about how to take dishes to the next level.. that’s exactly what I did here with this simple spring dish. 

Tune in tomorrow to see how our chefs do in the final shifts of the competition.

SUNDAY 8|7c > @foodnetwork @streamonmax 

Ramps and Ricotta

Serves 2

1 small bunch of ramps
½ c of peeled fava beans
1/2c day old brioche, cubed
2 tbl butter
2 tbl EVOO
½ c ricotta
1 lemon
1 tbl each chopped mint, dill, parsley
Salt and Urfa pepper to taste
 
Saute the brioche, over medium heat, in 11 /2 tbl butter until beginning to brown. Add chopped ramps to the pan.
Remove the bread when toasted on all sides. Add the fava beans to the saute with 2 tbl EVOO, and all the herbs. Saute lightly for 1-2 minutes.
Place ½ c of ricotta in a bowl, top with brioche croutons, and saute of ramps, favas, herbs.
Finish with a squeeze of lemon, EVOO, salt, and pepper. Enjoy.
