Padma Lakshmi Instagram - Give me a hot day and I’m going to make yogurt rice 🥵
I’m using basmati here but it’s not necessary since you’ll be breaking down the grains when mixed into the yogurt anyway. In South India where yogurt rice is popular we don’t use basmati rice but poni or other shorter grain white rice varieties. Any leftover white rice will do. Even jasmine is great. Use what you have!
This recipe is also adaptable to how much rice you have left over, because you’re simply using equal parts yogurt and equal parts rice, and then adjusting the spices and tadka accordingly.

The beauty of basmati is in its elegant long grain, and removing some of the starch with rinsing results in a beautiful fluffy rice that is perfect for pilafs or to be eaten plain with gravied curries and roasted meat and vegetables. It takes some time but it’s totally worth it!

Padma Lakshmi Instagram - Usually #LittleHands and I do a big Thanksgiving dinner. Turkey, stuffing the whole nine yards with all our loved ones. Some years when she has been with her dad, I just go to Paris and have a ball. No turkey, no relatives.

This year we will blissfully be just the two of us (though we will miss our family) doing nothing. I’m making a roast chicken and roasted vegetables, so that we can still make our beloved potpie with leftovers. We are both exhausted and when I asked Krishna what she wanted to do this year, she said, “Can it be just us? Can we not do a big dinner and just chill and rest, mom?”

Medical professionals dedicate their lives to the health and well being of others, we must protect them at all costs as well as protect all women so they are free to pursue their calling and feel safe. Though I do not live in India, so many people I love are there and it’s still the country of my birth. So like most in India and the diaspora I am shocked, angry and saddened. We hold our heads in shame that this could happen yet again to a promising young woman who had her life cut short in such a brutal unspeakable way. I hope the Supreme Court takes action. And I hope justice is served. You can tell a lot about a society by how it treats and respects women. Respect women now. We deserve every right our male counterparts enjoy.
