On a recce of the backstreets of Delhi with @garymehigan and new friends for a fresh adventure. That daulat ki chaat was as light as air, the nankhatai biscuits so crumbly, and those mix veg filled paranthas perfect with a banana chutney. Fascinating afternoon with @chefrajeevgoyal and some of Delhi’s Sikh community at Gurudwara Bangla Sahib learning about their traditions and spending time in their huge volunteer-staffed and food donation-supported langar kitchen that’s feeds (depending on the day) between 35,000 and 100,000! people. A special honour for me and @garymehigan to be dressed correctly with a turban while we were there. #newadventuresinfood #luxuryescapes #watchthisspace Little known fact: 20 years ago I won the Australian award for Best Food Article for a story on the langar at the Sri Guru Nanak Satsang Sabha Gurudwara in Blackburn.

Dinner at @farmlore.in . What a gem of a place with locavorism at its core at this farm and mango plantation. Clean, fresh flavours of nasturtium, local pomelo and scallop. Or a pea custard with saffron corn broth. Or the richest cream from the farm in that cornet with Indian basil flowers. Dried fire ants from the plantation that have the tang of green mango, a sorbet made from a prized local fruit similar to a plum, and that duck skewer with that intensely satin-rich sauce marbled with kokum. Add it to your bucket list! Nice knock-off celebration with @garymehigan @gcalombaris @danszwarc and the @conoshofficial after our programme of dinners completed and shooting a little TV show for India. Just a masterclass in Bangalore to go tomorrow!
Discovering why they call Chandigarh the city beautiful – from a morning walk in the city’s rose garden to the afternoon in the administrative hub planned by legendary Swiss French architect Le Corbusier (after the vision of India’s first prime minister Jawaharlal Nehru for an idyllic planned city). So green, so spacious, so calm. The absence of horns here and the sound of birdsong that replaces it is very special.

How to take simple pumpkin soup to the next level…. Pepita Crunch time! Chewy, nutty, salty, sweet, hot! Fry bacon. Toast thrice as many pepitas in the rendered fat. Add maple syrup and cook do it gets stickier. Stir in half as much sriracha. Add salt. Use the fat and the set crunch on your simple pumpkin soup. Done
