As simple a dish as this is, I have had requests for it in all my restaurants as far back as I can remember. I like the sauce a little feisty, so I’m generous with the crushed red pepper. You can add as much—or as little—as you like. Often, restaurant chefs finish this dish by swirling butter into the sauce at the end. You can do the same or use olive oil to finish the sauce. This dish is a always a family favorite, perfect for a Memorial Day celebration. The recipe is easy to multiply, it keeps well, and, most importantly these days, it’s economical. This pasta can be dressed several hours ahead, but hold about half of the dressing to toss in at the last minute, since the pasta will have absorbed much of the first batch. Here’s one of my favorite summer pasta recipes – Orecchiette with Asparagus, Peas and Shrimp. If you can get fresh peas you can substitute them for the frozen, but cook them 3 or 4 minutes more. Gluttonous Tomatoes. This is a perfect dish for brunch, especially when you have a house full of people. I love this dish I discovered on a visit to Puglia. In the quaint seaside city of Trani, along the Adriatic shoreline, is a delightful restaurant called Le Lampare. There I was introduced to Farro con Legumi e Cozze, a beautiful stew of ceci and cannellini beans cooked with farro, one of my favorite grains, tossed before serving with savory mussels and their juices.
