Fred Sirieix Instagram - It was not a dream! It’s a wrap! Working for BBC SPORT on the Paris 2024 Olympics was the most memorable and exciting experience. I loved every minute of it. The culture, vision, values, work ethics, professionalism and kindness of the entire team was just incredible. Such quality in an organisation at all levels is very rare. Everyone was always talking so highly of all their colleagues. And for good reasons! They are the best. At times filming a piece late afternoon and editing it in just a couple of hours before it goes on air!!! Thank you to Ron, Tom, Helen, Nathanael, Alex, Philip, Pooky, Zoid, Ryan, the incredible editors which I did not have the chance to meet and all those in the galleries / production offices in Paris and back in the UK. Once in a lifetime. I am so grateful. Merci so much xxx

It is such a common and ubiquitous dish in France. Growing up in the 70s and 80s I remember eating it at home cooked in a tomato based sauce. This recipe is slightly different as the cabbage is cooked in butter and white wine. The stuffing is made of veal and pork mince with shallots, garlic, parsley, egg, crème fraîche, thyme and a touch of nutmeg. This is a real working class number and many (if not all) workers restaurants would feature it as part of their 3 course value lunch menu with wine and coffee. The chou farci is also found in high end restaurants where it is elevated to new heights with various stuffings made with noble and expensive ingredients. Interestingly the dish does not originate from France but Eastern Europe. The French just adopted and made it their own. Have you ever made stuffed cabbage? Or tried it? I’m very curious to know. So I opened a cracker and made an authentic Carbonara just like they make in Rome. No cream just egg yolks 😋 And then just as I opened the wine…Argument!!!! with @fruitcake_fundamentals 😂😂😂 (it was quickly resolved though… Obviously it was my fault to start with… (it mostly is 🤪😳)…. All I had to do was apologise and voila, job done!!! The night was back on track 😜😂 Oh and one small disclaimer if I may…. Don’t shoot me! I made it with bacon. I had no Guanciale 🤷🏻‍♂️ C’est la vie! Not to worry, I will still go to heaven x As for the wine @iamginodacampo would simply say Mama Mia!!! Orange brick colour. Incredibly powerful with distinctive notes of cherry, rose, freshly grounded coffee grain, tar, leather and anise. Delightful and elegant on the palate. Balanced to perfection. As smooth as velvet. Long finish.

The culture, vision, values, work ethics, professionalism and kindness of the entire team was just incredible. Such quality in an organisation at all levels is very rare. Everyone was always talking so highly of all their colleagues. And for good reasons! They are the best. At times filming a piece late afternoon and editing it in just a couple of hours before it goes on air!!! Thank you to Ron, Tom, Helen, Nathanael, Alex, Philip, Pooky, Zoid, Ryan, the incredible editors which I did not have the chance to meet and all those in the galleries / production offices in Paris and back in the UK. Caption : Le chou farci! Stuffed cabbage. I have not cooked this recipe for such a long time. What a great classic! I must admit it is not to everyone’s taste. It is such a common and ubiquitous dish in France. Growing up in the 70s and 80s I remember eating it at home cooked in a tomato based sauce. This recipe is slightly different as the cabbage is cooked in butter and white wine. The stuffing is made of veal and pork mince with shallots, garlic, parsley, egg, crème fraîche, thyme and a touch of nutmeg. This is a real working class number and many (if not all) workers restaurants would feature it as part of their 3 course value lunch menu with wine and coffee. So I opened a cracker and made an authentic Carbonara just like they make in Rome. No cream just egg yolks 😋 And then just as I opened the wine…Argument!!!! with @fruitcake_fundamentals 😂😂😂 (it was quickly resolved though… Obviously it was my fault to start with… (it mostly is 🤪😳)…. All I had to do was apologise and voila, job done!!! The night was back on track 😜😂 Oh and one small disclaimer if I may…. Don’t shoot me! I made it with bacon. I had no Guanciale 🤷🏻‍♂️ C’est la vie! Not to worry, I will still go to heaven x As for the wine @iamginodacampo would simply say Mama Mia!!! Orange brick colour. Incredibly powerful with distinctive notes of cherry, rose, freshly grounded coffee grain, tar, leather and anise. Delightful and elegant on the palate. Balanced to perfection. As smooth as velvet. Long finish.
