Madeira cake (supermarket perfection) bulks it up without adding jammy sweetness. Don’t make it bougie. This is Trifle. My Gran was the eldest of 7 and grew up on a sugar cane farm. The fanciest she got with it was some discs of sliced banana. ‘Port Wine’ flavoured jelly has no other role in the universe than to be cubed into Christmas Trifle. Don’t deny it its one time to shine. Sherry is optional but you’ll hear from Uncle Ron if you omit it. Whip some extra cream for your Mum.
