salted caramel hot chocolate makes 2 mugs 2 tablespoons granulated sugar 3 tablespoons heavy cream 2 cups whole milk heaping 1/4 teaspoon kosher salt 50 grams dark chocolate, chopped 50 grams milk chocolate, chopped 1/4 teaspoon vanilla paste 1. Sprinkle sugar into a dry saucepan, place over medium heat, and cook until burnt, stirring occasionally. 2. Pour in the cream carefully (it will bubble up and steam!) 3. Add the milk and salt, and bring to a vigorous simmer 4. Add the chocolate, reduce heat to low, add the vanilla, and stir well until totally melted. ***don’t forget to use the good chocolate!
