Lester, Lefty, Bionic woman…I was thinking of you strongly yesterday. I almost sent a text because I know how you have been through many fires here in LA and were ALWAYS taking care of the animals during them. Always making sure they were safe. You LOVED animals, you loved an adventure, you loved life. Your quick wit and sense of humor always had me laughing loudly or biting my lip to stop. When we worked together you would have me laughing in between takes and crying during them. It was always a privilege to get to share the screen with you. You hated being up last one day and first the next. “I got the fuzzy end of the stick” you’d say. You were a strong woman with a beautiful heart. A couple of months ago I sent you a photo of a beautiful hibiscus flower that made me think of you. It reminded me of a lovely day we had at your house when we fed your sweet 🐢 them. We talked about getting together when you were feeling better. Oh how I wish that day had come. Gluten free baked oatmeal Easy peasy pudding pie! Well, not pudding pie but oatmeal bake!! Baked oatmeal? Whateves, it’s good and EASY! Preheat oven to 375 Ingredients: 1 Banana 1 1/2 C Frozen blueberries 2 C gluten free oats 2 Tablespoons ground flax seeds 1 1/2 teaspoons cinnamon 1 teaspoon baking powder 1/4 teaspoon salt 1 teaspoon vanilla extract 1/4 cup maple syrup 400 ml unsweetened rice milk Line 9×12 or 8×8 baking dish with parchment paper. Place sliced bananas and 1 cup frozen blueberries in dish. Put aside. In a bowl mix all the other ingredients except for the 1/2 c leftover blueberries and rice milk.(Don’t worry, they will play later.) Add mixture to baking dish on top of bananas and blueberries. Spread out. Add blueberries on top and the rice milk. Bake for 40 minutes. Let cool a bit before eating. If you eat it hot it may fall apart a little but still yummy. If cooled a little it holds together better. Both ways delish. Wanna be completely decedent? Add some non dairy vanilla nice cream to it! Oooohhhh! It’s Soup Season! I had fun creating this one last year. I hope you enjoy it as much as my family and loved ones have. Yum yum yummy Roasted Butternut Squash Soup!! Do not skimp on the herbs!! Ingredients: 6-7 cups butternut squash cubed 1 1/2-2 tablespoons Olive Oil 1 carrot 2 stalks celery 1/2 medium yellow onion 1 medium Yukon gold potato 1 Granny Smith apple 1 teaspoon dried parsley 1 teaspoon thyme 1 teaspoon sage 3-4 springs fresh Rosemary 1/2 teaspoon sea salt Sprinkle of black pepper Head of garlic 2 vegan not chic’n bouillon cubes 6 cups water Preheat oven to 425 Cut squash, onion, apple, celery, carrot and potato all about the same size and put in large mixing bowl. Add olive oil, herbs, salt and pepper. Shake up. Add to parchment lined baking tray. Cut the top off a head of garlic, drizzle with a little olive oil. Add to tray. Bake at 425 for 30-40 minutes or until tender. While veggies are roasting… Add 6 cups of water to a large pot. Add bouillon cubes and let dissolve. If you forgot to add rosemary to tray like I did, add it to pot.😉 When veggies are done roasting remove garlic. Add other veggies to the soup. Squeeze out garlic into soup. I used about 5 cloves. Save some butternut squash and extra garlic aside for garnish if you’d like. Use inversion blender to blend! Ladle it up. Add some roasted squash and rosemary to the top bc it’s fun and pretty. If you like a little kick sprinkle some red chili flakes on top. Don’t overpower it though. Serve. Share. Enjoy. Goes great with the focaccia bread from my earlier reel. Well, if you guessed cranberries from the previous video then you were right!!! Sure was delicious though. Yum yum yummy!! Fresh cranberry sauce is so much better than canned and SO SIMPLE to make. I know TG is over now but cranberry sauce is good anytime. And we have a whole host of December holidays coming too so don’t count it out yet!! I like my cranberry sauce a little tart but if you like yours sweeter, add a little more maple syrup. And…enjoy!! Bag organic cranberries (12 oz) 1/2 C Water Lemon peel (just cut a few slices) Juice of half a lemon or full if small 1/4 cup maple syrup Pinch of salt Rinse cranberries. Put in pot with all the ingredients. Once water starts to boil reduce to a simmer and watch, stirring occasionally. The cranberries will start to pop and you can help along by popping the ones that don’t. It will thicken. Should take 10 – 15 minutes. Remove from stove. This beautiful little sprite is pure joy and love! When @ct_home_la and I picked her up from the shelter over a month ago she was due to be euthanized. She was so lethargic and terribly ill she hardly moved. Bananas going bad? Don’t throw them out! Make banana muffins! Healthy ones!! WET: 2 bananas(abt 1cup) 2 flax “eggs” (2T ground flax & 6T warm water. Let sit 10 minutes) 1/8 C EV olive oil or neutral oil 1/8 C applesauce 1/4 – 1/3 C maple syrup (depends on your desired sweetness level) 1/4 C plant milk 1 teaspoon pure vanilla extract DRY: 2 1/2 C Oat flour (blend it yourself) 1 teaspoon baking SODA 1 teaspoon cinnamon 1/2 teaspoon salt Preheat oven to 350 Make flax egg, set aside to thicken Mix wet ingredients in bowl Blend oats into a flour and then add the rest of dry ingredients and mix Add dry ingredients to wet mixture. Gently mix together. Do not over mix Add to muffin cups or greased muffin tin Bake for 22-24 minutes. Insert toothpick to make sure it comes out clean. Wait 10 minutes to cool then ENJOY! Okay, Suse, this is for you!! 🩷🩷 Made this TG night for my friend Susie along with the other TG goodies. Wanted something light and healthy. Threw it together with what I had and Suse wanted me to write it down. So…I remade it. Here’s the approximations. Salad: 1 C cooked Quinoa 1/2-1 C shredded Kale 1 C finely chopped Persian Cucumber 1/2 C Honey crisp apple 1/4-1/2 C shredded Brussels sprouts(w oo salt & cracked pepper) Pomegranate on top ACV just a drizzle if you feel it’s missing something. See below Dressing: 1/8 C fresh lemon juice(meyer) 1/2-1 T Olive oil (I used 1/2) 1/2 t Maple syrup 1 med clove Garlic 1/8 t Salt Pepper 1 t Dijon mustard Make quinoa. Let cool. You could make the day before if you want. Wash and cut up kale into very small pieces. Place in bowl with lemon juice and a sprinkle of salt. Massage kale with hands for 30 seconds. It will shrink down and make kale more digestible. Let it sit and marinade while you chop up your Brussels sprouts and put a little OO, salt and pepper on them. Let Brussels sit while you chop up your apples, cucumbers into small pieces and get those pomegranate seeds out of their casing. Make your dressing. When your quinoa is cool and all your ingredients are chopped up, assemble salad. Pour in dressing. Add pomegranates to the top. Taste. I added a tiny tiny splash of ACV after I tasted bc I wanted it a little bit brighter. Not necessary and @kimberlyyat NO vinegar for you!! Sometimes holiday foods are heavy in these winter months. If you want a nice, light, protein rich, fiber filled salad then try this one. Would be as a side, paired with a hearty soup OR as an entree salad! Do what makes you happy. No Waste Carrot Top Pesto! Ingredients: 1-2 bunches of carrot tops 3-4 tablespoons of olive oil(more if needed) 1/4-1/2 teaspoon sea salt (I didn’t pay enough attention. Start with less. Can add more) 1 tablespoon of hemp hearts 1 tablespoon Nutritional yeast Big squeeze of lemon(maybe a tablespoon? Taste. Add more if you like) 2-3 garlic cloves Pulse up your ingredients in a food processor. Add the nutritional yeast at the end after other ingredients have been chopped/pulsed together. Use on sandwiches, avocado toast, pasta, Buddha bowls, a garnish on soups, or whatever tickles your fancy!! Get creative. It sure was yummy.
