Reflecting on 2024 and feeling incredibly grateful for all of the twist, turns, and blessings that have brought our family to a place of genuine excitement and appreciation. 2025 is bubbling with an energy that I haven’t felt in ages. January has felt like the longest month for so many reasons. Our hearts are broken and minds reeling for the utter devastation our friends in California is experiencing. Today felt like a day where I needed to tap into a peaceful place. Mornings in my kitchen are my happy place. And this recipe for cottage cheese pancakes were the perfect start to the day.
