Hummus… made from edamames?🤯 We are loving this Edamame Hummus recipe from one of our amazing recipe creators and certified nutritionist @ileanao🫛
Be sure to watch the whole video for some fun nutrition facts about edamames and chickpeas🤓
Ingredients:
• 2 cups shelled edamame
• 3/4 cup chickpeas, drained and rinsed
• 1 clove garlic or garlic powder
• 1/2 cup fresh basil, plus more for garnish
• 1/4 cup lemon juice
• 1/2 teaspoon sea salt
• freshly cracked pepper
• 1/3 cup extra virgin olive oil
Instructions:
1. In a food processor, combine the cooked chickpeas, edamame, garlic, lemon juice, basil,salt, and pepper.
2. Blend the ingredients and Slowly blend in the olive oil until smooth and add cold water gradually until you achieve your desired consistency.
3. Taste and adjust the seasonings as needed. Add more lemon juice, salt, or pepper according to your preference.
4. Once smooth and well-blended, transfer the edamame hummus to a serving dish.
5. Optionally, drizzle with a bit of olive oil and sprinkle some additional chickpeas and basil for garnish.
6. Serve with fresh veggies, pita bread, or your favorite dipping choices.
7. Enjoy your homemade edamame hummus!

Ingredients:
1 cup oats
1 cup walnuts
10oz plant-based chocolate chips (Ilean used dark chocolate)
1 orange zest
2 cups pitted dates
2 cans coconut cream
Instructions:
1.Add a cup of oats, walnuts and the two cups of pitted dates to the food processor.
2. Blend until processed but slightly chunky.
3. Spread the mix into a tart dish covered in wax paper and press it firmly into the base and sides.
4. In a pot, add the coconut cream and orange zest, simmer it for about 10 minutes.
5. Turn off the stove.
6. Add chocolate chips to the hot coconut cream and whisk it until the chocolate is melted.
7. Chill the “ganache” for a little bit and pour it on the tart crust.
8. Chill the tart in the fridge for 5-6 hours.
9. Decorate with some oranges, and mint (or with whatever fruits you have!)

Ingredients:
1 1/2 cup gluten-free all-purpose flour or regular
50g caster sugar or coconut sugar
60g cold vegan butter cut into small cubes
Pinch of salt
1 tsp baking soda
85ml fresh beetroot juice
2 tbsp pistachios, chopped
2 tbsp dried coconut
Milk/almond milk for brushing
Instructions:
1. Preheat oven at 350°
2. Mix together the flour, sugar, baking soda, and salt in a large bowl.
3. Cut the butter into small pieces and blend it together with the flour in a food processor, the mixture should look like crumbs.
4. Add the beet juice into the flour and butter mixture until just combined.
5. Pour in the chopped pistachios, and coconut.
6. Mix it until it comes together. Do not knead the dough.
7. Form a disk with the dough and cut the disk into 6-8 pieces
8. Place the scones on a parchment-lined sheet pan and brush each with some milk or cream.
9. Bake the scones at 180ºC for 15 minutes.
10. Enjoy!

Here is a plant-based recipe to add to your Veganuary meal roster, from one of our incredible recipe creators @ileanao 💚
It’s packed with antioxidants, promoting heart health, reducing inflammation, source of fiber, vitamin a & c for immune support.
Here is how to make Ilean’s Purple Sweet Potato Gnocchi with Brown Butter and Sage ⬇️
Ingredients for the gnocchis
• 2-3 medium cooked purple sweet potato**
• 1/4 – 1/2 cup flour**
• 1 tsp salt
For the sauce
• 1 stick vegan butter
• 10 leaves fresh sage or to taste
• freshly cracked black pepper to taste
Instructions:
1. Baked sweet potatoes until soft.
2. In a large mixing bowl, use a fork to mash the purple sweet potato until smooth and creamy.
3. Mix with flour and a pinch of salt to form a dough.
4. Divide the dough, roll into ropes, and cut into bite-sized piece, 1 inch.
6. Boil the gnocchi until they float to the surface.
7. Heat a non stick skillet over medium low heat and add the butter.
8. As soon as the butter starts to foam up add the sage leaves and cook together for 3 to 5 minutes.
9. Add the gnocchis to the butter sage sauce and gently toss to coat, fry until crispy on one side. Flip the gnocchi and repeat for the other side.
10. And enjoy!!! 💚
